Steps:
- 1. preheat oven 350 F. melt butter add brownsugar,sugar,eggs,applesauce,vanilla,and spices,beat till creamy.
- 2. next slowly mix in oats, flour, baking soda. pour into well greased 9x6 brownie pan. bake at 350 F. for 28 to 32 min.
- 3. remove from oven let stand 5 min add a little Pillsbury frosting.
APPLESAUCE OATMEAL CAKE
I got this from another site, where it was credited to Meal Master. It's not a fancy dessert-for-dinner cake, but more like a snack cake or coffee cake. It's very moist and buttery-sugary.

Steps:
- Bring applesauce to a boil in a small saucepan; remove from heat.
- Stir in oats and raisins; cover and let stand 20 min.
- (Mixture will be thick and will thicken up more while standing, so you should have the rest of the batter ready by the time the 20 min. are up.) Beat butter at medium speed with an electic mixer until fluffy.
- Gradually add sugar, beating well.
- Add egg and beat well.
- Combine dry ingredients and add gradually to creamed mixture, mixing just until blended after each addition.
- Stir in applesauce mixture.
- Pour batter into a 9-in. square pan that has been sprayed with nonstick spray.
- Bake at 350 for 30-40 min. or until a toothpick inserted in center comes out clean.
- Cool in pan on a wire rack.
- (I found I liked this best served slightly warm.).
APPLESAUCE CAKE
Steps:
- PREP: Set out the cream cheese to warm to room temperature. Preheat the oven to 350 degrees F. Line an 8x8-inch baking pan with parchment paper -- otherwise, your cake will likely not come out easily. Greasing and flouring the pan isn't enough -- this batter is sticky and needs parchment paper. Foil will affect baking, so I don't recommend foil.
- WET INGREDIENTS: In a large bowl, stir together the applesauce, coconut oil (measured when completely melted and then cooled back to room temperature-- See Note 1), large egg, vanilla extract, and brown sugar. Stir until completely combined and smooth.
- DRY INGREDIENTS: Add the baking soda, baking powder, salt, cinnamon, allspice, and nutmeg (you can use a little less or more, depending on your preference). Add in the oat flour. (See Note 2.) Add in the chopped pecans and raisins if desired. Mix ingredients until completely combined and smooth.
- BAKE: Transfer batter to the prepared 8x8-inch pan. Bake for 28-33 mins at 350 degrees F oven or until a fork when inserted comes out clean. Be careful not to over-bake, as it will make this cake less tender and less flavorful. Allow cake to cool completely before frosting.
- FROST: Place softened cream cheese in a large bowl (give it ample time to set out so your frosting isn't chunky). Using a hand mixer, beat the cream cheese with the vanilla until smooth. Add in the salt and slowly add in the powdered sugar (beating in between additions) until smooth and creamy and to your desired consistency. If it is too thick, add in a little bit of milk. If you'd like a tangier or soft frosting, only add 1 and 1/4 cups powdered sugar. For a sweeter, thicker frosting, add closer to 1 and 3/4 cups.
- DECORATE: Frost the completely cooled cake evenly with the frosting. If desired, top the frosting with the chopped pecans.
- STORAGE: Store cake at room temperature, covered with plastic wrap. Applesauce Cake is best when used within 1-2 days. Freeze (un-frosted) pieces for up to 3 months; thaw at room temperature and then frost. Frosted cake doesn't freeze and thaw well.

This is an easy to fix snack cake, perfect when friends stop by. It is flourless, using oats instead. The applesauce and walnuts add texture and great flavor!

- 1. Preheat oven to 350 degrees F. Line an 8- x 8-inch baking pan with parchment or wax paper.
- 2. Place the oats in a blender or food processor and blend until resembles flour. Place in medium bowl. Add brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt; mix well. Measure out 1/4 cup of this mixture to a small bowl and set aside.
- 3. In a small bowl, stir together applesauce, oil, egg, and vanilla; add to dry ingredients and mix until thoroughly combined. Stir in walnuts and pour into baking dish. Mix together the butter with the reserved dry ingredients to make a streusel-like topping and sprinkle over top of the cake.
- 4. Bake for 25 to 30 minutes, or until toothpick inserted in center comes out dry. Let cool, then cut into squares.

- In a bowl, combine boiling water and oats; set aside. In a large bowl, combine the flour, baking soda, cinnamon and salt. In a bowl, combine the sugars and applesauce; beat well. Add the egg, vanilla and oat mixture; mix well. Stir into dry ingredients just until combined. Fold in apple., Pour into an 8-in. square baking dish coated with cooking spray. For the topping, combine the oats, flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle over batter. Spray a 9x9" square baking pan with vegetable spray and line it with a rectangular piece of parchment paper cut to fit the dimensions of the bottom of the pan with several inches on either side to hang over the edges.
