These flour tortillas are not only delicious and inexpensive to make, they're low fat and vegan!

1 cup whole wheat flour ($0.16)
1 cup all-purpose flour ($0.15)
1 tsp salt ($0.05)
1 1/2 tsp baking powder ($0.05)
2 tsp vegetable oil ($0.03)
3/4 cup warm water ($0.00)

Steps:

  • In a large bowl, combine the flour, salt and baking powder. Stir until evenly combined.
  • Combine the warm water and vegetable oil then begin adding to the flour mixture a little at a time. Stir and add water/oil until the dough comes together into one piece. You may need more or less water depending on the moisture content of your flour (I ended up added an extra 2 Tbsp).
  • Knead the dough for about a minute. Shape into a ball and let rest, covered with a damp towel for about 10 minutes. Divide the dough into 12 pieces and shape each piece into a ball. Let rest for another 10 minutes.
  • Roll each piece of dough out into a 6 inch circle about the thickness of a piece of poster board. Stack the tortillas, dusted with flour, until they are all rolled out.
  • Heat a heavy bottomed skillet over medium heat. One at a time, cook the tortillas in the hot skillet until blistered and slightly golden on each side. Stack the tortillas on a plate covered with a dry towel to keep them soft and warm until all of the tortillas have cooked.

From our local newspaper. You can use black beans or pinto beans instead. You can use stewed tomatoes instead of the diced. You can also use flour tortillas if you prefer. Likewise, you can substitute any kind of hard cheese.

1 (16 ounce) can kidney beans
1 (14 ounce) can diced tomatoes
1 (4 ounce) can chopped green chilies
2 cups corn kernels
2 scallions, minced
1/2 teaspoon ground cumin
1/2 teaspoon oregano
8 corn tortillas
1 1/2 cups grated reduced-fat cheddar cheese
1 teaspoon taco seasoning (optional)

Steps:

  • Combine the first seven indgredients in a mixing bowl and mix thoroughly.
  • Lightly oil a wide 2 quart casserole and layer as follows: 4 tortillas (overlapping each other to cover the bottom), half the bean mixture, half the cheese. Repeat the layers.
  • Bake for 15 to 20 minutes at 400 degrees or until the cheese is bubbly.
  • Top with lite sour cream and salsa if desired.

I wanted tortillas to go with tonight's dinner but was out of them. So I went searching for a recipe that did not contain any fat. I found this one, and tweaked it a bit, in one of my favorite cookbooks "500 Fat Free Recipes." My husband could not get enough of them. We dipped them into soup and made bean burritos out of them.

3 cups whole wheat pastry flour
1 -1 1/2 cup water

Steps:

  • In a large bowl combine the flour and 1 cup of water.
  • Mix well.
  • If it needs more water to get to a dough stage, then add.
  • On a floured surface knead the dough until it is soft.
  • Make it into balls (12-16 depending on size).
  • Then flour a board well.
  • Take each ball and roll it as flat as you can.
  • Meanwhile heat a pan until it is quite hot.
  • Place the rolled out tortilla in the pan and cook for about 45 seconds to 1 minute or until it is bubbling and starting to brown.
  • Then turn it over and cook for another 45 seconds.
  • Place a clean cotton dishtowel on a plate.
  • As each tortilla comes out of the pan put it inside the towel and wrap them up.
  • I got 16 tortillas but my pan is small.
  • If you want bigger tortillas, make bigger balls of dough.

  • Whisk the two flours, salt and baking powder together in a large shallow bowl. Add canola oil and 1 cup of the water and mix to form a dough. Add enough additional water until the dough comes together. Knead 10-15 times then let the dough rest, covered with a towel for five minutes.
  • Divide the dough into 18 equal pieces. Run your hand under a running faucet and shake off the excess water. Wetting your hand will keep the dough moist as you roll. Roll each piece into a ball and place on cookie sheet, not touching each other, and cover with a towel. Allow dough to rest five minutes.
  • Keep the dough balls covered with the towel as you work. Sprinkle counter with flour and keep rolling pin floured as well. Remove one dough ball from under the towel and place on the floured counter. Press gently with your hand then use floured rolling pin to roll into a circle.
