If you're looking for simple, delicious, no-fuss dish that can be served in many different ways then you've got to try this green beans and potato salad!

1 lb green beans (, approx 450 g)
4 small size red or gold potatoes (, approx 12-15 oz)
3 tbsp Extra virgin olive oil
1 tbsp White wine vinegar
Fresh parsley (, finely chopped)
1 garlic clove (, chopped (optional))
Salt to taste
Pepper to taste

Steps:

  • Wash and peel potatoes. If using medium size potatoes cut them in half. If using large size potato cut it in quarters. Although I still recommend using small size potatoes.
  • In a large pot with cold salted water add potatoes and bring them to boil. Cook for 5-10 minutes.In the meantime,
  • Wash and trim green beans.
  • To make the process easier and faster work green beans in batches.Line up each batch on one side and trim off the ends with a sharp knife.Flip the beans around, line up the tips again, and trim off the other side.At this point you can cut trimmed beans in smaller size or leave as is.Repeat the process with remaining green beans.
  • Once potatoes have been boiling for a few minutes, add green beans.
  • Cook everything together for another 5-15 minutes. Check occasionally on both veggies (see Note 1).
  • Once both are cooked, remove potatoes and quickly pass green beans under cold water to prevent discoloration (optional).
  • Cut up potatoes into chunks.
  • In a small bowl mix together extra virgin olive oil and white wine vinegar.
  • In a large bowl add potatoes and green beans, add dressing, fresh parsley and give a gentle stir.
  • Top with freshly ground pepper to taste.
  • Since potatoes and green beans were boiled in salted water you might not need extra salt.

8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

2 cups frozen green beans
½ teaspoon dried thyme
¼ teaspoon ground black pepper
1 teaspoon vegetarian Worcestershire sauce
1 cup vegetable broth, divided
1 teaspoon cornstarch
¼ cup chopped fresh parsley

Steps:

  • In a large skillet over medium-high heat combine potatoes, green beans, thyme, pepper, Worcestershire sauce and 3/4 cup of broth. Bring to a boil; reduce heat to medium-low, cover and simmer 15 to 20 minutes or until vegetables are tender.
  • In a small bowl blend remaining broth and cornstarch. Stir in parsley; add to potato mixture. Cook, stirring, until bubbly and thickened.

2 pounds peeled small potatoes
1/4 cup extra-virgin olive oil
4 teaspoons lemon juice
4 teaspoons whole-grain mustard
2 teaspoons chopped thyme leaves
1/2 cup thinly sliced red onion
Coarse salt

Steps:

  • Simmer green beans in salted water until barely tender and bright green, 2 to 3 minutes. Remove with a slotted spoon or wire-mesh skimmer, and transfer to a bowl of ice water. Drain, and pat dry. Add potatoes to the same pot of salted water, and simmer until tender, about 12 minutes. Drain potatoes, and halve them. Whisk together olive oil, lemon juice, mustard, and thyme in a large bowl. Add potatoes, beans, and red onion. Gently toss. Season with salt.

2 cups fingerling potatoes, cleaned
3 cups green beans or 3 cups romano beans, cleaned and trimmed
1 teaspoon salt
2 tablespoons Dijon mustard
2 tablespoons wine vinegar
6 tablespoons olive oil
2 tablespoons capers
4 cornichons, finely chopped
2 hard-boiled eggs, finely chopped
kosher salt, to taste
fresh ground black pepper, to taste
2 tablespoons chopped parsley (added when ready to serve)
4 flounder fillets, approximately 1 1/2 pounds
kosher salt, to taste
fresh ground black pepper, to taste
2 tablespoons canola oil
1 tablespoon unsalted butter
2 shallots, finely minced

Steps:

  • ADVANCE VEGETABLE PREP:.
  • Boil potatoes until just tender, approximately 15 minutes. Cut in half lengthwise.
  • Blanch green beans and/or Romano beans until just crisp in salted water, approximately 3 minutes. Then shock in ice water and pat dry.
  • SAUCE GRIBICHE:.
  • In a bowl, mix all ingredients except parsley. Taste and adjust seasonings. When ready to serve, mix in parsley.
  • FISH PAN:.
  • Pat fish fillets dry with paper towels, and season with salt and pepper.
  • In a pan large enough to hold all 4 fillets, or in 2 pans if not, heat the oil over moderately high heat until it is almost smoking, then add the fish, skin side up.
  • Adjust heat to moderate and cook until golden and crusted, approximately 4 minutes. Flip and continue cooking until fish is almost done, approximately 3 minutes.
  • Remove fish, and place on rack to keep warm.
  • VEGETABLE PAN:.
  • In another large pan, warm the butter over medium-high heat.
  • When the butter foams, add potatoes, beans and shallots.
  • Turn the heat to medium, and cook, tossing often, until the vegetables are slightly crispy, 3-4 minutes.
  • Season vegetables to taste with salt and pepper.
  • Plate fish, vegetables and sauce gribiche.

2 lbs fresh, frozen or canned green beans ((If fresh, remove ends and break into pieces and wash the beans))
6 or 7 red potatoes (cut in pieces (I have made this using any kind of potatoes))
1 to 2 cups chicken broth or 1 (14.5 ounce can (You don't have to use the chicken broth. I just think it makes them better))
1 ham hock (Can use cooked ham, bacon, pork jowl or salt pork about a half cup, chopped)
2 to 3 cups water
1/2 teaspoon black pepper
1 teaspoon salt
1/2 cup finely diced onion (Optional)
1 teaspoon minced garlic (Optional)

Steps:

  • Combine all ingredients in a large pot, bring to a boil, then turn to medium low and cook about 1 1/2 hours until potatoes are done and water has cooked down. You can also do this in the crockpot and let cook on low 6 to 7 hours or high 4 hours.
