Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and coat with olive oil.
- Arrange flounder fillets on prepared baking sheet and season with salt and pepper.
- Bake in preheated oven for 10 minutes and sprinkle evenly with dill. Continue baking until fish flakes easily with a fork, about 2 minutes more.
- Stir sour cream, capers, and lemon zest in a bowl; season with salt. Serve fish with lemon wedges and sour cream caper sauce.

This recipe is simple but comes out wonderfully. I add sliced canned new potatoes and fresh asparagus to the baking dish to make a full meal in a single pan.

Steps:
- Sprinkle both sides of flounder fillets garlic salt and pepper.
- Place fillets in a single layer in a greased baking dish 12x8 inches.
- Arrange sliced tomatoes over top of fillets.
- Sprinkle tomatoes with garlic salt and pepper.
- Blend flour into margarine.
- Add milk gradually and cook until thick and smooth, stirring constantly. Remove from heat and stir in wine and basil.
- Pour sauce over top of tomatoes.

PAN-FRIED FLOUNDER FILLETS
Steps:
- Arrange flounder fillets in a shallow baking dish. Pour on vinegar and let fish marinate for 10 minutes.
- Meanwhile, combine the flour, cornmeal, salt and pepper; use mixture to coat fillets evenly on both sides.
- In hot butter in a large skillet, sauté the fillets until golden brown, approximately 4 minutes on each side. In the meantime make the cucumber sauce by combining all sauce ingredients; sour cream, salt, paprika, lemon juice cucumber liquid hot sauce, Worcestershire sauce and a dash of pepper.
- Serve flounder with sauce.

- Put a little canola oil in bottom of broiling pan so fish won't stick. Lay flounder fillets (skin side down) to cover pan. Peel cucmbers and cut away seeds. Then grate cucumbers and cover fillets with a layer of grated cucumber. Salt to taste. Cover whole thing with a layer of sour cream. Broil. When the peaks of the sour cream are brown, the dish is done. Outrageously good.

- Fish ... Remove the fish from the refrigerator to take the chill off. Then, add the flour, paprika, cayenne, lemon zest, salt and pepper to a pie plate or shallow bowl.
- Saute ... Dredge the fish in the flour mixture, making sure to shake off any extra. Then, in a large saute pan (non-stick preferred), add the butter and bring to medium high heat. Add the fish and saute on each side until golden brown. I happen to use tilapia, so the cooking time was approximately 3-4 minutes per side. As the fish cooks, add the shallots and the white wine to a medium non-stick pan, and simmer on medium heat 2 minutes; next add in the capers, cucumber and simmer another 2 minutes until the cucumbers are warm, but not too soft. Finish by adding the sour cream and cook, yet again, another 2 minutes until the sour cream is heated through. Add the dill and season with salt and pepper.
- Serve ... Spoon the sauce over the fillets and garnish with extra dill or the 1/2 lemon, that you sliced. ENJOY!
