I discovered this recipe several years ago when I was looking looking through some flounder recipes. Even though we're not big fans of fish, we enjoy this dish. It's tasty, healthy and inexpensive. -Debbie Verbeck, Florence, New Jersey

2 packages (10 ounces each) frozen chopped spinach, thawed and drained
1 pound flounder fillets
3 tablespoons chopped onion
2 tablespoons butter
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
1-1/2 cups fat-free milk
1 tablespoon grated Parmesan cheese
1/4 teaspoon paprika

Steps:

  • Sprinkle spinach in a 13-in. x 9-in. baking dish coated with cooking spray. Top with fillets., In a large saucepan, saute onion in butter until tender. Stir in flour, salt, pepper and nutmeg until blended. Gradually add milk. bring to a boil; cook and stir for 2 minutes or until thickened. , Pour over fillets; sprinkle with Parmesan cheese and paprika. Bake, uncovered, at 350° for 20 minutes or until fish flakes easily with a fork.

1 pound sole, orange roughy or flounder fillets
1 1/2 cups firmly packed spinach leaves
1/4 teaspoon garlic salt
1/3 cup fat-free mayonnaise or salad dressing
1/2 teaspoon Dijon mustard
1/4 cup garlic-flavored croutons, crushed
Lemon wedge, if desired

Steps:

  • Heat oven to 400°F. Spray square baking dish, 8x8x2 inches, with cooking spray. If fish fillets are large, cut into 4 serving pieces.
  • Place spinach on fish; sprinkle with garlic salt. Roll up each fillet, beginning at narrow end. Place rolls, with points underneath, in baking dish. Mix mayonnaise and mustard; spoon onto each roll. Sprinkle with crushed croutons.
  • Bake uncovered 15 to 20 minutes or until fish flakes easily with fork. Serve with lemon wedges.

1 lb flounder fillets, skinless
4 garlic cloves, minced
4 tablespoons olive oil
3 cups fresh mushrooms, sliced
1 1/2 teaspoons dried Italian seasoning, crushed
8 cups fresh spinach
1/4 cup feta, crumbled, 1 oz
1/2 cup fresh tomatoes, chopped (optional)
salt
pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Lightly coat 2 quart baking dish with nonstick cooking spray. Sprinkle fillets with salt and pepper to taste.
  • If fillets are thick, place in a single layer in the baking dish, tucking under any thin edges. If using thin fillets, arrange evenly in baking dish, overlapping as necessary.
  • In a large skillet, cook garlic in hot oil for 15 seconds. Add mushrooms and Italian seasoning. Cook and stir until mushrooms are tender.
  • Stir in spinach and cook and stir until just wilted.
  • Spoon this spinach mixture down the center of the of the fish in the baking pan. Cover with foil.
  • Bake until fish flakes with a fork (about 6-8 minutes per 1/2 inch of thickness).
  • Transfer fish and vegetables to a serving platter and sprinkle with feta cheese.
  • Top with tomato if desired.

This is a simple way to cook any mild fish such as flounder, sole or tilapia. Easy but tasty and healthy too.

1 lb flounder or 1 lb sole fillet
2 (10 ounce) packages frozen spinach
1 (1 lb) package fresh mushroom, washed and minced (white, crimini, or baby portabello)
1 small onion, minced
1/4 cup olive oil
1 tablespoon butter
salt
pepper
paprika
1 lemon

Steps:

  • Preheat oven to 350 degrees.
  • Cook the spinach according to package instructions. Drain well and squeeze out any excess water.
  • Heat oil and butter in a large saute pan (ovenproof is good).
  • Add the minced onion and mushrooms. Saute till softened.
  • Add the spinach and stir well till heated through. Add salt and pepper to taste. If using the same pan, separate spinach into the same amounts as you have fish. Usually 4 or 5 sections if the fish is small. Or you can use a pyrex 9 X 18 oven proof dish. Place fish over spinach and sprinkle with paprika. Bake till fish flakes easily. About 30 minutes. Squeeze lemon juice over and serve.

This is a healthy dish using a potato to hold the arugula and sundried tomatoes together in the flouder roll topped with pine nuts. Cooking time depends on how thick th flounder is. You can also lay the flounder down next to each other, fill and roll up together in one roll, baking time may be a bit longer for this.

1 large baking potato, peeled and thinly sliced (8 oz)
2 garlic cloves, peeled
salt
2 tablespoons grated parmesan cheese
1/8 teaspoon pepper
1/8 teaspoon nutmeg
10 ounces arugula, cooked and chopped (or spinach)
4 sun-dried tomatoes packed in oil, diced
4 flounder fillets, seasoned with
salt and pepper
1 tablespoon butter
1 tablespoon fresh lemon juice
1 teaspoon fresh lemon juice
1 tablespoon olive oil
1 teaspoon paprika
1 tablespoon pine nuts

Steps:

  • Preheat oven to 400°F.
  • In small saucepan, bring 2 cups of water to a boil over medium heat. Add potato, garlic and salt and cook until potato is tender, about 10 minutes. With slotted spoon, transfer potato and garlic to medium bowl. Add 2 tablespoons of cooking liquid and mash with a fork or potato masher. Stir in parmesan, pepper, nutmeg and a pinch of salt. Stir in arugula (liquid squeezed out)and sundried tomatoes.
  • Lay flounder fillets on a work surface with skinned-side up. Sprinkle 2 tsp of lemon juice evenly over fish. Spoon arugula or spinach mixture onto fillets and roll up.
  • Butter a baking pan.
  • Place flounder rolls in buttered pan seam-side down. Sprinkle flounder with remaining 2 tsp lemon juice, olive oil, paprika and pine nuts. Bake 20 minutes, or until fish is cooked through.

Remove roll-ups and keep warm., In a small saucepan, melt butter; stir in flour until smooth. Add cream sauce from the baking dish. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheese until melted. Pour over roll-ups.
