CREME CARAMEL

Creme Caramel image

The beauty of this chilled flan dessert reveals itself in the final step: When turned out onto a serving plate, it is automatically glazed and sauced with the caramel in the mold.

Categories     Food & Cooking     Dessert & Treats Recipes

Yield Makes two 4-cup desserts.

Number Of Ingredients 7

1 cup sugar
2 1/2 cups heavy cream
2 1/2 cups milk
1 vanilla bean, split and scraped or 1 teaspoon pure vanilla extract
1 cup sugar
6 large eggs
6 large egg yolks

Steps:

  • Make the caramel: Prepare an ice-water bath; set aside. Divide sugar evenly between two 4-cup charlotte molds; add 2 tablespoons water to each and swirl to combine (do not stir). Place molds over low heat; cover, and cook until sugar has dissolved.
  • Uncover molds and increase heat to high; cook, swirling, until sugar mixture begins to caramelize. Remove from heat and immediately plunge molds into ice-water baths to stop cooking, about 30 seconds. Swirl caramel to evenly cover bottom of molds; set aside.
  • Preheat oven to 325 degrees.
  • Make the custard: Place cream, milk, and vanilla bean and seeds or extract in a medium saucepan and heat over medium heat for 5 minutes.
  • Meanwhile, in a large bowl, whisk sugar with eggs and egg yolks until light and fluffy. Remove vanilla bean from milk mixture; whisking constantly, gradually add milk mixture to egg mixture. Strain and divide custard evenly between both charlotte molds.
  • Place charlotte molds in a roasting pan. Add enough boiling water to come halfway up the sides of the molds. Transfer pan to oven and bake until custard is firm, about 45 minutes. Remove custards from pan and let cool; transfer to refrigerator until chilled.
  • To unmold, run a sharp knife or offset spatula around the edge of the custard; dip mold into hot water to help remove if necessary. Quickly invert onto serving dish. Pour any remaining caramel around the custard; serve.

Yield serves 6. serving size: 1/2 cup.

Number Of Ingredients 7

1 quart milk
1 teaspoon pure vanilla extract
1/8 teaspoon lemon juice or vinegar
1 1/2 cups sugar
8 large eggs
4 large egg yolks
Pinch of salt

Steps:

  • Scald the milk with the vanilla in a large saucepan over low heat. Remove from the heat and let sit, covered, for 30 minutes.
  • In a separate saucepan, prepare caramel for an 8-cup mold: Combine 3 tablespoons water, the lemon juice, and 1/2 cup sugar and cook over medium-high heat until golden. Watch carefully that it doesn't become too dark and burn, as it may taste bitter.
  • Carefully pour the caramel into the mold, tilting the mold to fully coat the bottom and sides. Let sit until the caramel hardens, about 2 minutes.
  • Preheat the oven to 300°F.
  • Whisk together the eggs, yolks, the remaining 1 cup sugar, and the salt in a large bowl until the mixture is pale yellow and thick enough to coat a spoon or spatula.
  • Pour the scalded milk mixture into the egg mixture and mix well with a wooden spoon to make a custard.
  • Using a fine metal kitchen strainer, carefully strain the custard mixture into the caramelized mold.
  • Place the mold in a larger pan more than 1 inch deep. Set the larger pan on an oven shelf, and fill with at least 1 inch of water, until it comes halfway up the mold.
  • Bake for 60 to 75 minutes, until the custard is set. (You'll know it's ready when a knife inserted in the center comes out clean.) Remove the pan and mold from the oven and set the mold outside the larger pan to cool for 2 hours.
  • Refrigerate for at least 8 hours, or overnight. When ready to serve, run a knife around the edges of the mold. Cover the mold with a deep serving dish and overturn the mold. Allow the caramel to coat the custard. Cut into portions before serving, then serve some of the crème caramel with cream.

LEMON CRèME CARAMEL

Yield Serves 8

Number Of Ingredients 6

1 1/3 cups sugar
2 large lemons
2 cups heavy cream
3 large eggs
2 large egg yolks
1 teaspoon vanilla

Steps:

  • Preheat oven to 325°F.
  • Have ready a 9-inch (1-quart) glass pie plate. In a dry 5-quart heavy kettle cook 1 cup sugar over moderately low heat, stirring slowly with a fork (to help sugar melt evenly), until melted and pale golden. Cook caramel, without stirring, gently swirling kettle, until deep golden. Immediately pour caramel into pie plate, tilting pie plate to coat bottom and side evenly, and put pie plate in a baking pan.
  • With a vegetable peeler remove zest from 1 lemon and in a food processor pulse with remaining 1/3 cup sugar until finely chopped. Squeeze enough juice from lemons to measure 1/4 cup. In a saucepan bring cream and lemon sugar just to a boil, stirring. In a bowl whisk together eggs, yolks, vanilla, and a pinch salt until combined well and add cream mixture and lemon juice in a stream, whisking. Pour custard through a sieve into pie plate.
  • Add enough hot water to baking pan to reach halfway up side of pie plate and bake crème caramel in middle of oven about 40 minutes, or until outer 3 inches are set but center still trembles slightly. (Custard will continue to set as it cools.) Remove pie plate from pan and cool crème caramel completely on a rack. Chill crème caramel, loosely covered with plastic wrap, at least 4 hours and up to 2 days. Run a thin knife around edge of crème caramel and gently rotate pie plate back and forth to make sure crème caramel is loosened. Invert a flat serving plate with a slight lip over pie plate and invert crème caramel onto serving plate.

CARAMELIZED CITRUS

Caramelized Citrus image

This is a modernized version of a dessert that was popular in Britain during the 1970s, a simple, stylish confection that was a standby of posh dinner parties: caramelized oranges. It was then and remains the sort of dish that is not particularly difficult to make, but still signals a home cook's understanding of elegance. My recipe nods to, but is not of, that era. It calls for saffron, which infuses the sauce with its sweet-savory, haylike aroma, and for yogurt, which is a delicious partner to the fruit. On which subject, an important final note: Be careful to remove all the white pith beneath the skin of the citrus, as it is exceedingly bitter.

Provided by Sam Sifton

Categories     quick, dessert

Time 30m

Yield Serves 4-8

Number Of Ingredients 4

4 assorted sweet citrus fruits, like blood or navel oranges or grapefruit
1 cup or 285 grams Greek-style yogurt
1 1/2 cups or 300 grams light brown sugar
1 pinch saffron threads

Steps:

  • Using a small, sharp knife, cut off the tops and bottoms of the oranges and grapefruit, then slice the peel off them vertically, taking care to remove all the white pith below the skin of the fruit.
  • Spoon the yogurt onto a platter or into a large bowl. Turn each fruit on its side, then slice it into rounds that are between 1/4-inch and 1/8-inch thick. Place the sliced fruit on top of the yogurt in an attractive pattern, then place the platter or bowl into the refrigerator.
  • Make the caramel. Put the sugar in a large sauté pan set over medium heat, then add to it 1/2 cup or 125 milliliters of water, and swirl the pan to dissolve the sugar. Let the mixture come slowly to a boil, without stirring, then lower heat slightly, and cook until the syrup has gone a very deep amber color, approximately 5 to 6 minutes. Remove from heat, add the saffron to the caramel and swirl to mix it in.
  • Pour the caramel over the sliced fruit. Return to the refrigerator for an hour or so, or serve right away.

Time 5h40m

Yield Serves 10 to 12

Number Of Ingredients 14

1/2 cup walnut halves or pieces
6 tablespoons unsalted butter, softened
1 large egg yolk
1/3 cup sugar
1/2 teaspoon kosher salt (we use Diamond Crystal)
3/4 cup unbleached all-purpose flour
1 cup sugar
1/3 cup cornstarch
1/2 teaspoon kosher salt (we use Diamond Crystal)
1 teaspoon finely grated orange zest, plus 1 cup fresh juice (from 2 to 3 large)
4 large egg yolks
2 teaspoons finely grated lemon zest, plus 3/4 cup fresh juice (from 3 to 4 large)
3 tablespoons unsalted butter
Sour Whipped Cream, for serving

Steps:

  • For the Crust: Preheat oven to 350°F. Spread walnuts on a rimmed baking sheet in a single layer. Toast until fragrant, 12 to 14 minutes. Let cool slightly, then finely chop. In a large bowl (or a mixer fitted with the paddle attachment), whisk together butter, egg yolk, sugar, and salt until light and fluffy. Stir in flour and walnuts to combine, then knead mixture with your hands a few times to form a soft, pliable dough.
  • Press dough evenly into bottom and up sides of a standard 9-inch pie dish. Prick at 1-inch intervals with the tines of a fork; refrigerate until firm, about 20 minutes or, covered, up to 1 day.
  • Bake crust 15 minutes; if it's puffing in places, flatten it with the bottom of a dry measuring cup. Continue baking until crust is golden brown and set, 10 to 12 minutes more. Let cool on a wire rack.
  • For the Filling: Meanwhile, in a medium saucepan, whisk together sugar, cornstarch, and salt to combine. Whisk in juice, 1/3 cup water, and egg yolks until smooth. Cook over medium-high heat, whisking, until mixture comes to a boil and thickens. Boil 30 seconds; remove from heat. Stir in orange zest, lemon zest and juice, and butter until smooth. Immediately pour into baked crust; smooth top. Let cool slightly, then refrigerate until cold and set firmly, at least 4 hours or, loosely covered (once cold), up to 1 day. Cut into wedges and serve cold, with whipped cream.

1 cup sugar
1/4 cup water
Squeeze of fresh lemon juice
VANILLA CREAM:
5 egg yolks
1 whole egg
1/2 cup sugar, divided (1/4 cup / 1/4 cup)
1 tsp vanilla extract
2 cups heavy cream
1 cup whole milk
Pinch salt
CITRUS COMPOTE:
2 cups honey
1 cup water
1 TBS vanilla extract
1 tsp salt
Juice of 2 lemons
1 grapefruit, seeded and cut into segments

1 blood orange, seeded and cut into segments
1 lemon, seeded and cut into segments

Steps:

  • CARAMEL: 1. Mix together sugar, water, and lemon juice in a heavy-bottomed saucepan over low heat, stirring to dissolve sugar. Brush sides of pot with a little water to prevent the sugar from crystallizing on sides. 2. Cover and cook on low heat until syrup turns golden brown. Remove from heat, and divide hot caramel among 8 ramekins. Set aside and let cool for at least 2 minutes. VANILLA CREAM: 1. Preheat oven to 325F. 2. Stir together egg yolks and egg with half of sugar in a large mixing bowl; set aside. 3. Stir together vanilla, cream, milk, salt, and remaining sugar in a medium saucepan over medium heat; bring to just below a boil and remove from heat. 4. Gently whisk 2 TBS of hot milk mixture into egg mixture. Slowly whisk in remaining hot milk mixture 1/3 at a time. 5. Place the 8 ramekins (with caramel) in a baking dish, and pour 4 ounces of vanilla cream into each ramekin. Carefully pour boiling water into the baking dish until water is 2/3 of the way up the sides of the ramekins. Cover with aluminum foil pierced in several places to vent. 6. Bake 35 minutes, or until custard is set. Remove from oven, and use tongs to remove ramekins from hot water. Let stand at room temperature for 20 minutes, then refrigerate until ready to serve. 7. To serve, dip ramekin in very hot water for 15-20 seconds, and run a sharp knife around sides. Invert custard onto serving plate. Pour 1/2 cup Citrus Compote over each custard. CITRUS COMPOTE: 1. Bring honey, water, vanilla, salt, and lemon juice to a boil in a medium saucepan over medium heat. Remove from heat and cool slightly. 2. Place fruit in bowl, and pour syrup over fruit. Stir to combine. Refrigerate until ready to serve. Makes 8 servings. Each serving = 22 Weight Watchers points.
