FLORENTINE ALMOND ARTICHOKE MOUNDS
I always enjoyed traditional artichoke-cheese dip, and for a party, I wanted to create a new appetizer that was a spin on that. This original creation is a bit reminiscent of the dip recipe, and works well on a buffet. -Sherry Johnston, Green Cove Springs, Florida

FLORENTINE DIP
A good dip transcends time - especially one with fresh herbs, which makes this 1959 recipe from Craig Claiborne stand out amid other recipes from the convenience food era of the 1940s and '50s. Studded with capers, garlic and anchovies, the dip comes together quickly, then sits in the refrigerator, ready to buy you time should your guests arrive early while the rest of the meal runs late.

- Preheat the oven to 200 °C/ 380°F. Take a baking tray and grease with a little olive oil or use a cooking spray. Now, to begin the preparation of the dip, cut up the artichokes into small pieces and preserve in a bowl.
- Chop the spinach very well and preserve in a second bowl. Cut up the garlic into very thin slices and preserve. In a medium bowl proceed to add the cream cheese (make sure it is at room temperature, in order to make the preparation easier) and the sour cream and stir until they are mixed very well Now add the Parmesan cheese and stir again in order to have everything well mixed.
- Once the cream cheese is well integrated with the Parmesan cheese and the sour cream, add the cut spinach. Then add the cut artichokes and mix well. Proceed to add the mozzarella cheese, milk and chopped garlic. Season with salt and pepper to taste. Mix until all the ingredients are well integrated. Add the mixture to the baking tray. Sprinkle with mozzarella or parmesan cheese. Proceed to introduce the baking tray in the oven and bake until it is gratined. It will take about 20 to 25 minutes. Retire from the oven and let it cool. Finally proceed to serve accompanied by tortillas, toasted baguettes or any other food you prefer.
