12 ounces artichoke hearts, marinated
3 cloves garlic, minces
1/2 cup mayonnaise
12 ounces cream cheese, softened
2 tablespoons lemon juice
1 cup parmesan cheese, Grated
1 1/2 cups fine breadcrumbs, dry

Steps:

  • Thaw and drain spinach; press between layers of paper towels.
  • Drain and chop artichoke hearts.
  • Combine spinach, artichoke hearts, garlic, and next 4 ingredients, stirring well.
  • Spoon into a lightly greased 11 x 7" baking dish; sprinkle with breadcrumbs.
  • Bake at 375 for 25 minutes, and serve with crackers or breadsticks.

2 cans (14 ounces each) artichoke bottoms, drained
1 package (16 ounces) frozen leaf spinach, thawed and squeezed dry
3/4 cup heavy whipping cream
3/4 cup shredded Swiss cheese
3/4 cup chopped or sliced almonds, divided
2 large garlic cloves, minced
2 teaspoons prepared horseradish
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper

Steps:

  • Preheat oven to 400°. Rinse artichoke bottoms; pat dry with paper towels. Combine spinach with cream, Swiss cheese and 1/2 cup almonds; mix in garlic, horseradish, salt and pepper. Place artichoke bottoms on a parchment-lined baking sheet. Mound spinach mixture on artichokes; sprinkle with remaining almonds., Bake until almonds turn golden brown, 20-25 minutes. Serve hot or at room temperature.

8 ounces dry pasta, bowtie recommended
1 small onion, chopped
1 tablespoon butter
2 eggs
1 1/4 cups milk
1 teaspoon dried Italian seasoning
1/4 teaspoon crushed red pepper flakes
2 cups cooked chicken, chopped
2 cups monterey jack cheese
1 (14 ounce) can artichoke hearts, drained and quartered
1 (10 ounce) package frozen spinach
1/2 cup sun-dried tomato packed in oil, drained and chopped
1/4 cup grated parmesan cheese
1/2 cup soft breadcrumbs
1/2 teaspoon paprika
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350.
  • Cook pasta according to package diretions, drain.
  • In a medium skillet cook onion in 1 tbsp butter over medium heat about 5 minutes or until tender. Remove from heat and set aside.
  • In a bowl whisk together eggs, milk, 1/2 tsp salt, 1/4 t black pepper, and crushed red pepper.
  • Stir in chicken, monterey jack cheese, artichokes, spinach, tomatoes, half the parmesan, cooked pasta and onion. Transfer to a 3 qt baking dish.
  • Bake covered for 20 minutes.
  • In a small bowl combine the remaining parmesan, bread crumbs, paprika, and melted butter. Sprinkle mixture over pasta, bake uncovered for 10 minutes more or until golden.

3 ounces cream cheese, at room temperature
2 tablespoons mashed or finely chopped anchovies
1 cup sour cream
1/4 cup chopped flat-leaf parsley
3 tablespoons chopped chives
2 teaspoons chopped capers
1 tablespoon lemon juice
1/2 garlic clove, minced
Salt and black pepper to taste
Sliced vegetables or sturdy potato chips, or both, for serving

Steps:

  • Using a wooden spoon, blend the cream cheese and anchovy paste together in a medium bowl. Add the sour cream, parsley, chives, capers, lemon juice and garlic, season with salt and pepper, then stir until well blended. Place in the refrigerator for several hours to season.
  • Spoon the dip into a bowl and serve with sliced vegetables or potato chips, or both.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 7x11 inch baking dish.
  • In a medium bowl, mix together the cream cheese and mayonnaise until smooth. Mix in the artichoke hearts, spinach and Parmesan cheese. Season with garlic and lemon juice. Spread evenly into the prepared baking dish.
  • Bake covered for 20 minutes. Remove the cover, and let the dish bake uncovered for 5 more minutes, or until the surface is lightly browned.

  • Once the cream cheese is well integrated with the Parmesan cheese and the sour cream, add the cut spinach. Then add the cut artichokes and mix well. Proceed to add the mozzarella cheese, milk and chopped garlic. Season with salt and pepper to taste. Mix until all the ingredients are well integrated. Add the mixture to the baking tray. Sprinkle with mozzarella or parmesan cheese. Proceed to introduce the baking tray in the oven and bake until it is gratined. It will take about 20 to 25 minutes. Retire from the oven and let it cool. Finally proceed to serve accompanied by tortillas, toasted baguettes or any other food you prefer.
