This recipe makes a large, great-tasting, high-fibre bread for the bread machine. I adapted it from a basic white bread recipe.

- Choose 2 pound loaf size, grain setting, and desired crust darkness and start bread machine.
- To serve, cool, cut loaf in half, then slice each half in 10 slices- yielding 20 slices.
FLAX SEED WHEAT BREAD

Steps:
- Combine bread flour, 1 cup whole wheat flour, flax seeds, salt, and yeast in a large bowl. Add cool water; mix, without kneading, until dough is wet and sticky. Cover bowl with plastic wrap; let sit at room temperature until dough is bubbly and swelled, about 12 hours.
- Grease a loaf pan with oil; dust with 1 1/2 teaspoons whole wheat flour. Place dough in pan; dust the top with remaining whole wheat flour. Poke holes in the dough using a chopstick or make cuts with a knife.
- Cover loaf pan with plastic wrap. Let dough rise until doubled in volume, about 1 hour.
- Preheat oven to 450 degrees F (230 degrees C). Place an oven-safe cup of water in the oven.
- Bake in the preheated oven until chestnut-brown on top, about 45 minutes. Lift bread out of the pan using pot holders; let cool thoroughly on a rack.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking pan with parchment paper and lightly grease.
- Combine flax seed meal, sugar substitute, dill weed, salt, baking powder, garlic powder, and onion powder in a bowl. Mix well. Stir in eggs, cottage cheese, water, and oil; combine well, making sure there are no obvious strings of egg white. Let batter rest until slightly thickened, 2 to 3 minutes.
- Pour batter into the prepared pan. Spread into a rectangle 1 to 2 inches from the sides of pan.
- Bake in the preheated oven until browning and the top springs back when pressed, about 20 minutes. Let cool before slicing.

LOW CARB FLAX FLAT BREAD

- Combine dry ingredients and mix with fork or whisk.
- Make a well in the center and add wet ingredients.
- Mix, making sure eggs integrate well.
- Let sit for five minutes.
- Spread on greased cookie sheet or silicone mat to desired thickness, I like it to be about 9 x 10 inches.
- Bake 10-15 minute.
FLAXSEED BREAD

- Preheat the oven to 360°F/180°C.
- Grind the flaxseeds into very fine flour. Ideally, sift the flaxseed flour to make sure there are no actual "seeds".
- In a large mixing bowl, mix together the flaxseed meal, baking powder, baking soda, and salt. Add the apple cider vinegar and water, and stir until the flaxseed meal becomes sticky and holds together in a lump, for about 30 seconds. Then use your hands to roughly form the dough into a loaf shape. (Don't over-knead the dough. Handle it as little as possible). The loaf should have a nice smooth surface.
- Place the loaf into a greased (or parchment paper-lined) loaf pan. The bread fits perfectly into a 1-pound loaf pan (8.5" x 4.5"). However, if you only have 1.5-pound loaf pan (10" x 5") - like I do - it will work just fine. (If you're working with the larger size loaf pan, form the loaf, place it into the loaf pan, but don't press it into the corners). You can also use a baking sheet lined with a piece of parchment paper. The bread holds its shape during baking really well, so the loaf pan is not necessary.
- Mist with water and sprinkle some seeds on top (I use a mix of flaxseeds, sesame seeds, and sunflower seeds). Gently press down on the seeds with your palm to make them stick better.
- Note: if you watched the video that goes with this recipe, I said that I let the bread rest, covered, for a few minutes. Well, if you're using the baking soda, you want to do the opposite. When you mix baking soda (base) with apple cider vinegar (acid), you get a chemical reaction. A product of this reaction is carbon dioxide, producing a lift in your baked goods. The reaction starts as soon as the base and the acid are mixed. So, get the bread in the oven immediately after you mix the two, before the reaction tapers off.
- Bake the bread for 60 minutes. The crust should be golden brown (if using golden flaxseeds).
- Remove the bread from the oven and let it cool inside the loaf pan for 10 minutes. Transfer the bread on a cooling rack, and let it cool completely before slicing.
- Store the flaxseed bread in an airtight container in the refrigerator for 7 days. For longer term storage, freeze in an airtight container for up to 3 months. I like to slice the bread prior to freezing, but you can freeze the whole loaf as well.

WHEAT AND FLAX BREAD

- In 1-quart saucepan, heat milk, water and 1 tablespoon softened butter over medium heat to 120°F to 130°F (butter will not melt). In large bowl, mix 1 1/2 cups of the all-purpose flour, the salt and yeast. Add milk mixture and honey. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in whole wheat flour, oats, flaxseed and enough remaining all-purpose flour to make dough easy to handle.
- On lightly floured surface, knead dough about 5 minutes or until smooth and springy. Grease medium bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap and let rise in warm place 1 to 1 1/2 hours or until double in size. Dough is ready if indentation remains when touched.
- Grease bottom and sides of 8x4-inch loaf pan with shortening or cooking spray. On lightly floured surface, roll dough into 12x8-inch rectangle. Roll up rectangle tightly, beginning at 8-inch side. Pinch edge of dough into roll to seal. Pinch each end of roll to seal; fold ends under loaf. Place seam side down in pan. Cover and let rise in warm place 45 to 60 minutes or until double in size.
- Heat oven to 375°F. Uncover loaf. Bake 30 to 35 minutes or until loaf is golden brown and sounds hollow when tapped. Remove from pan to cooling rack. Brush top of loaf with melted butter. Cool completely, about 2 hours.

- If you have't read the post, go back and read it. I include some important tips on how to make the bread as well as a caution.
- Preheat the oven to 350 degrees F. Spray a 8x4 inch metal loaf pan with baking spray. Heat a kettle of water to a boil. Grind the golden flax meal in a coffee grinder to make sure it is very fine.
- Gently remove the dough with your hands, (it will be cool) and ever-so-slightly and gently, shape it into a loaf shape while bringing it to the bread pan. Put the Psyllium-flax bread dough into the pan - it will not be perfect and there may be gaps in the corners or one side may be a little higher than the other - it's okay, put it into the oven.
- Store in an airtight bag in the refrigerator for about 10-12 days. The bread freezes beautifully. Thaw in the fridge. It's best to pan fry/toast the bread instead of using a toaster.
