- Soak flax seeds in water for 15 minutes.
- Grind up some quinoa into flour consistency (I use my mini-blender, but a clean coffee grinder would work too).
- Mix ground quinoa with soaked flax seeds (do not strain)
- Add olive oil, sea salt, and baking powder.
- Grease a 9x11 cookie sheet then spread the mixture out. Spread it so it fills the entire sheet.
- Bake at 375 degrees until it starts to brown on the edges (probably about 15 minutes), flip and bake a few more minutes.
- For a raw version you can omit baking powder, dehydrate, score, and flip.

- Mix together the ground flax, psyllium husks, salt and water in a large bowl. Thoroughly blend the oil and cooked quinoa with the flax mixture.
- Divide the dough between two large, parchment lined baking sheets and with wet hands, flatten the dough. Slip the parchment off of the baking sheet, cover the length of the paper with plastic wrap and roll out the dough with a rolling pin to a ¼ inch thickness. Repeat with second pan.
- Slide the rolled out dough back onto the baking sheets, remove the plastic wrap and sprinkle with toppings. Firmly press the toppings down into the crackers with a hand wrapped in plastic wrap.
- Bake at 350’F for 40 minutes or until the parchment paper easily pulls away and the dough is cooked but not crisp yet. Flip the cracker over, gently pull off the parchment paper and cut into pieces.

- Add all ingredients to a food processor. Mix until you get a smooth paste, scraping the sides a few times if necessary.
- Scoop the paste onto a piece of parchment paper large enough to cover a baking sheet. Spread with a spoon as much a possible and then proceed with a rolling pin until it's thin enough for your liking (a little less than 1/4 inch). - If you’re making your own quinoa flour and/or almond flour, keep reading. If not, skip to step four! Rinse the quinoa in a fine mesh strainer under cold water. Shake the strainer to remove as much water as possible. Transfer the quinoa to a large skillet and turn to low heat. Toast the quinoa until dry and lightly golden, about 5 to 7 minutes. Remove from heat and allow the quinoa to cool slightly.
- Transfer the toasted quinoa to an electric spice grinder or blender (I used my Vitamix), turn to high, and grind into flour. Place a mesh strainer over a bowl and sift the flour through, catching and discarding any large pieces. You should get 1/2 cup quinoa flour.
- To make almond flour, simply put raw almonds in your Vitamix and turn to high. It should only take a few seconds to turn into flour. Sift the flour through a fine mesh strainer and discard any big pieces. You should get 1/4 cup almond flour.
- To make your flax egg, combine the flax meal and 2 tablespoons of water in a small bowl. Let it sit while you prepare the cracker dough. The flax egg should be thick and gelatinous when it’s set.
