FLAX AND MIXED GRAINS GRANOLA
I use toasted flaxseeds for this nutty, not-too-sweet granola. Because the seeds are already toasted, it's important to bake the mixture at a low temperature so they don't burn.

Steps:
- Preheat the oven to 300 degrees. Line two baking sheets with parchment. Toss together all of the dry ingredients except the raisins in a very large bowl. Combine the oil, honey and vanilla in a saucepan or measuring cup. Warm over low heat, or heat at 50 percent power in a microwave. Do not let the mixture come to a simmer. Stir into the dry ingredients. Stir to coat evenly.
- Spread the granola mixture on the sheet pans, and bake for 45 minutes to 1 hour until golden, stirring every 10 to 15 minutes and switching the pans from lower to middle racks. Remove from the heat, stir in the raisins if using, and allow to cool on the pans. Store in well sealed jars, bags or containers.

FLAX GRANOLA
From Lyn-Genet Recitas' book, The Plan. She says, "Making your own flax granola is very easy. You can double the amounts of ingredients if you wish, to have more granola on hand." You may use any amounts or combination of dried fruits and nuts as the ones listed below are suggestions. Prep time doesn't include the overnight refrigeration. Where no amount is indicated it is "to taste".

- 1. Combine the flaxseeds with water seasoned with cinnamon and the other spices as desired. Refrigerate overnight. Spread in a thin layer on a baking sheet and bake at 275° F for 50 minutes to an hour, turning several times to dry out.
- 2. Optional: during the last 10 minutes you may add raisins, nuts, and other dried fruits of your choosing.

- Preheat oven to 350 degrees. Toss together oats, coconut, and almonds in a medium bowl; set aside. Whisk together vegetable oil and honey in a small bowl; stir into oats mixture. Spread out oats mixture on a rimmed baking sheet.
- Bake, stirring occasionally, until golden brown, 17 to 20 minutes. Let cool 10 minutes; toss with flaxseed oil. Let cool completely. Transfer to a large bowl; stir in dried cranberries, raisins, sunflower seeds, and ground flaxseed.

FLAX GRANOLA
Really yummy, and way less expensive than buying it in the store. I was looking for a recipe with less oil, and the fruit juices add awesome flavour. Try adding whatever nuts & dried fruit you like, I almost never make this recipe the same way twice. I got the basic recipe from myrecipes.com but made a few tweaks to my liking.

- Preheat oven to 325°.
- Combine first 8 ingredients in a large bowl.
- Combine the juice in a small saucepan. Bring to a boil; cook until reduced to 2/3 cup.
- Remove from heat; stir in honey. Slowly pour juice mixture and oil over oat mixture, tossing to coat.
- Spread oat mixture evenly onto two baking pans coated with cooking spray. Bake at 325° for 40 minutes or until golden, stirring frequently (keep an eye on it while cooking, the sugars in the juice cause it to brown really quickly).
- Cool slightly; add apricots and craisins. Cool completely, and store in an airtight container.

- Preheat oven to 325˚F. In a large mixing bowl, combined 3 cups rolled oats, 1/2 cup coconut flakes, 1 cup pumpkin seeds and 1/4 cup flax seeds.

- Preheat the oven to 300ºF. In a large bowl, stir together the the oats, walnuts, puffed rice, pumpkin seeds, flax seeds, brown sugar, cinnamon, and salt.
