POMEGRANATE FIG WHITE BALSAMIC VINEGAR

Pomegranate Fig White Balsamic Vinegar image

Making your own homemade flavored vinegars to give as gifts is a great idea! It's inexpensive, easy to do and can look very impressive with the right bottle. Plus, you can customize the flavors to make a vinegar that is not easy to find, making your gift truly unique.

Provided by Meredith Laurence

Categories     Sauces

Time 15m

Number Of Ingredients 3

4 cups white balsamic vinegar
1 pomegranate
4 fresh figs (quartered)

Steps:

  • Bring the white balsamic vinegar to 190ºF (just under the boiling point) in a medium saucepan.
  • Cut open the pomegranate and remove the seeds. (Click here to learn how to remove pomegranate seeds.) Crush the seeds gently with the back of a wooden spoon.
  • Place the pomegranate seeds (and any juice) and figs in a sanitized non-reactive 1-quart jar or container. Pour the warm vinegar over the top and let the mixture come to room temperature before covering with a lid. Store in a cool dark place for 2 weeks.
  • After 2 weeks, strain the vinegar through a fine strainer or a piece of cheesecloth. Transfer the strained vinegar to sanitized decorative bottles. If desired, add a few fresh pomegranate seeds and figs.
  • Tie a label on the bottle and give away to friends and family, or keep for yourself.
  • Enjoy this vinegar on salads or in a marinade or sauce for chicken or duck.

HERBED VINEGARS

Herbed Vinegars image

This is a simple way to make herbed vinegars. Herbed vinegars make great gifts and will last for over 6 months. (Use approximately 3 sprigs of herbs for each 16 ounce bottle.) Try using thyme, oregano, rosemary, chives, tarragon or fennel with different vinegars to make all kinds of variations. Hint: If you use purple basil, the vinegar will taste great, and be a lovely shade of purple!

Provided by Erica Sweet

Time 30m

Yield 6

Number Of Ingredients 2

2 cups distilled white vinegar
3 sprigs fresh rosemary

Steps:

  • Choose a 16-ounce bottle with a well-fitting lid or cork. Boil it to sterilize, then remove from 'water bath', empty of any water inside, and allow to cool to room temperature.
  • In a small saucepan, combine the vinegar with 1/3 cup of water and heat until the mixture begins to boil. Remove from heat.
  • Slip about 3 sprigs of fresh rosemary into the cooled bottle.
  • Using a funnel and care (!), pour the hot (NOT boiling) vinegar into the bottle over the rosemary. Cover tightly with lid and store at room temperature.

Steps:

  • Horseradish vinegar
  • Peel and grate 2 ounces of freshly dug horseradish root and pack into a large sterilized jar with 2 finely chopped shallots, 1 teaspoon of sugar, and 1/2 teaspoon of salt. Heat 2 1/2 cups of cider vinegar to just below boiling and pour over the mix. Seal and store for a month or so before straining and bottling. I like to use this vinegar for pickling cucumbers or beets.
  • Nasturtium vinegar
  • Fill a wide-necked 20-ounce jar with freshly gathered, brilliantly colored nasturtium flowers, a few spicy nasturtium seed pods (see p. 103), 2 chopped shallots, 8 to 10 peppercorns, and 1/2 teaspoon of salt. Pour in 2 cups of cold white wine vinegar. Store for a month or so in a sunny spot, giving the jar a shake every now and then. Strain the vinegar and discard the flowers. Pack into a sterilized jar with a couple of fresh nasturtium flowers to identify the vinegar.
  • To make a splendid summer salad dressing, add 1 tablespoon of soy sauce to 1/2 cup of nasturtium vinegar and whisk in 1 cup of olive or canola oil.
  • Mixed herb vinegar
  • Mix a heaping 1/4 cup of herbs-chives, parsley, tarragon, fennel, thyme, or whatever you have-with 2 cups of cold white wine vinegar or cider vinegar. Store for 3 to 4 weeks in a cool, dark place. Strain, discard the herbs, and bottle.
  • Spiced samphire vinegar
  • Pack 2 ounces of samphire, 6 allspice berries, and 2 finely chopped shallots into a large jar. Pour in 2 cups of cold rice vinegar or cider vinegar. Store for 2 to 3 months before straining and bottling. This is great with fish and in sweet-and-sour sauces.

  • Warm the vinegar in a pan on the stove, until it just begins to steam. Don’t let it simmer or boil. Place the berries in a clean and sanitized wide-mouth mason jar. Use a muddler to tamp down the fruit to release a little juice. Chop the herbs finely, to release their aromatic essence. Add them to the jar. Pour the warmed vinegar over the herbs and fruit in the jar. Cap tightly.
  • After two weeks, strain the gourmet vinegar. Reserve the liquid. Set the fruit aside to use in another recipe. (The leftover fruit can be used as a marinade or fruit basting sauce for meat, poultry, or fish.)
  • Place the strained vinegar in a saucepan. Bring to a simmer and hold it there for 10 minutes. Don’t let it boil. Turn off the heat. Allow it to cool slightly.

  • Balsamic Salad Dressing―Basic and Simple. A simple vinaigrette accentuates the complexity of balsamic vinegar. You don't need the most expensive bottle to make a good balsamic salad dressing, but look for a commercial-grade brand labeled "aceto balsamico di Modena" for the best flavor.
  • Easy Balsamic Reduction. Heat mellows balsamic vinegar, turning it sweet and syrupy. Simmer it on the stovetop for an easy balsamic reduction you can use to glaze a piece of fish, drizzle on roasted vegetables, or surprise your family and friends with an unexpected dessert topping.
  • Balsamic Honey Salad Dressing. To the base of a basic balsamic vinaigrette, you can add sweetness and spice with honey and Dijon mustard, which also give this balsamic honey salad dressing a little heft and helps it adhere to the lettuce better.
  • Vegan Orange Balsamic Vinaigrette Dressing. Fruit and balsamic pair nicely, and the addition of orange juice to a basic vinaigrette turns it into a crisp splash of flavor.
  • White Balsamic Vinaigrette. The sweet-tart flavor and golden color of white balsamic vinaigrette makes it a good choice for dressing salads and vegetables when you want a lighter, brighter floral flavor.
  • Balsamic Onion Jam. Balsamic vinegar deepens the caramelized effect, giving slow-cooked onions a rich, mellow flavor in a balsamic onion jam perfect for topping burgers, a pork roast, or even just toast.
  • Fig Jam With Wine and Balsamic Vinegar. Honey and figs enhance the inherent sweetness of balsamic vinegar, yielding a jam that pairs well with soft cheeses, summer fruits, yogurt, and freshly baked bread.
  • Balsamic Tomato Salad. Balsamic vinegar takes the flavor of vine-ripened summer tomatoes over the top in this simple balsamic tomato salad recipe you can plate individually or serve in a big bowl.
  • Greek Watermelon and Feta Salad. This Greek watermelon and feta salad stars two of balsamic vinegar's favorite playmates, fruit and soft cheese. The sweet-tart flavor of the balsamic heightens the sweetness of juicy watermelon and the salty bite of feta cheese.
  • Green Salad With Dried Cranberries and Fig Balsamic Dressing. The salty bite of feta cheese balances this sweet and crunchy green salad with dried cranberries and fig balsamic dressing.

HOW DO I USE FLAVORED VINEGARS? - KITCHN
2019-05-01 Q: For Christmas, I was given two bottles of really high-quality vinegar (Pomegranate Balsamic and Honey Ginger White Balsamic). I’ve heard that high-quality vinegars like these should not be cooked and/or made into a dressing, as it can decrease the flavor/intensity of the vinegar itself. What is the best way to use these?
