2 large flour tortillas (10")
4 ounces turkey (leftover or deli turkey)
1 ½ cups lettuce ( or fresh spinach, shredded)
4 large slices tomato
2 ounces cheddar cheese (or havarti, sliced)
¼ cup honey mustard sauce (store bought or below)

Steps:

  • Place tortillas on a place and cover with plastic wrap. Warm tortillas slightly in the microwave, about 20 seconds.
  • Add 2 tablespoons honey mustard to each tortilla. Divide remaining ingredients over tortillas. Roll tightly.
  • Refrigerate up to 24 hours or serve immediately.

1 pound ground turkey
1/4 cup shredded carrots
6 ounce mushrooms ((coarsely chopped))
1 can sliced water chestnuts ((8 ounce, drained and coarsely chopped))
2 green onions ((chopped))
1 clove garlic ((minced))
3 Tablespoons hoisin sauce
2 Tablespoons low sodium soy sauce
1 Tablespoon rice wine vinegar
2 teaspoons red chili paste
12 butter lettuce leaves ((Boston and Iceberg lettuce will also work!))

Steps:

  • In a medium-sized skillet over medium-high heat, add the ground turkey. Cook and crumble until it is almost cooked throughout. Add carrots, mushrooms, water chestnuts, green onions, and garlic. Continue to cook for 1-2 minutes until turkey is cooked and veggies are tender.
  • Add the hoisin sauce, soy sauce, rice wine vinegar, and chili paste. Stir and let simmer for 1-2 minutes. Serve on butter lettuce leaves.

These turkey bacon ranch wraps are so good, and made with simple ingredients. You just need some tortillas, ranch dressing, deli sliced turkey, cheddar cheese, bacon (use turkey bacon to make it lighter), and lettuce.

deli sliced turkey meat
sliced cheddar cheese
bacon
shredded lettuce

Steps:

  • Lay one tortilla out.
  • Spread 1 TBS of ranch dressing down the middle of your tortilla.
  • Lay about 4-6 slices of turkey meat on top of your tortilla.
  • Spread 1 or 2 slices of cheddar cheese down the middle of your tortilla.
  • Break 1 1/2 to 2 pieces of bacon up and put on your tortilla.
  • Put about 1/3 -1/2 cup shredded lettuce over everything.
  • Roll your tortilla up.
  • Repeat with additional ingredients, 1 wrap per person.
  • Enjoy (or slice in half and enjoy)

½ cup cold butter
1 (12 pound) whole turkey, neck and giblets removed
1 tablespoon vegetable oil
2 Granny Smith apples - cored, peeled, and cut into 8 wedges each
1 large onion, cut into 8 wedges
½ whole head garlic, separated into cloves and peeled
1 pound celery, cut into 2-inch lengths
1 tablespoon poultry seasoning

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut butter into 1-tablespoon pieces, quarter the pieces, and refrigerate butter until needed.
  • Use your fingers to loosen the skin over the turkey breast and thighs. Cut a hole in the turkey skin between tail and body (to affix legs); cut a hole on each side of the turkey beneath each wing (to affix wings). Rub the entire skin with vegetable oil.
  • Toss apple and onion wedges, garlic cloves, and celery in a large bowl until combined; sprinkle poultry seasoning over the apple mixture and toss again to coat. Stuff the body and neck cavities with the apple mixture. Insert each wing tip into the hole under the wing to secure wings; insert both legs into hole near tail to secure legs.
  • Place turkey onto a rack and set in a roasting pan. Insert cold butter pieces under the loosened skin, distributing the butter as evenly as possible.
  • Roast the turkey in the preheated oven until an instant-read meat thermometer inserted into the thickest part of a thigh, not touching bone, reads 160 degrees F (70 degrees C), about 3 1/2 hours. Check for doneness after 3 hours.
  • Remove roasting pan containing turkey from oven and cover with aluminum foil, lightly pressing the foil directly onto the bird. Let the turkey rest for 40 minutes before carving.

1/4 cup hoisin sauce
2 tablespoons orange juice
2 tablespoons reduced-sodium soy sauce
1 tablespoon honey
2 teaspoons grated fresh gingerroot
1 garlic clove, minced
4 turkey breast tenderloins (4 ounces each)
3 cups shredded lettuce
3/4 cup shredded carrots
3/4 cup chopped green onions
1 tablespoon rice vinegar
1 tablespoon sesame oil
2 tablespoons sesame seeds, toasted
6 flour tortillas (8 inches), warmed

Steps:

  • In a large resealable plastic bag, combine the first six ingredients; add turkey. Seal bag and turn to coat; refrigerate for 6 hours or overnight. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill turkey, uncovered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until a thermometer reads 170°. , In a large bowl, combine the lettuce, carrots and onions. In a small bowl, whisk vinegar and sesame oil; stir in sesame seeds. Drizzle over lettuce mixture and toss to coat. , Cut turkey into 1/2-in. strips; place down the center of each tortilla. 8 to 10 pound turkey (thawed)
1 cup unsalted butter (softened)
2 tablespoons salt
1 tbsp smoked paprika
1 tbsp dried basil
1 tbsp dried oregano
1 tbsp dried thyme
2 tsp garlic powder
2 tsp onion powder
ground black pepper
2 lemons (quartered)
2 oranges (quartered)
3 to 4 shallots (roughly chopped)
15 to 20 cloves of garlic
large bundle fresh thyme and rosemary
1/2 cup butter (for basting)
1 cup chicken broth (for pan)
1/2 cup butter
1/2 cup flour
2 to 3 cups chicken broth
turkey drippings (from pan)
salt and pepper (to taste)

Steps:

  • Note: this recipe can be used for larger turkeys, too. Simply increase the amount of stuffing and butter spread, making 1 1/2 portions for a larger turkey.
  • Preheat the oven to 350F. Prepare a large roasting pan. Remove the turkey from its packaging and remove the giblets and neck. Place the turkey onto a wire rack placed over a baking sheet to catch any drippings. Pat the turkey dry with paper towels. Using a small rubber spatula, or the back of a spoon, separate the skin away from the turkey breast, taking care not to puncture the skin.
  • Prepare the herbed butter spread. In a mixing bowl, combine the softened butter, salt and all the spices. Mix until well combined. For easier spreading, heat the butter in the microwave for 20 to 30 seconds, until it's a bit runny.
  • Using your hands or a small spatula, spread a generous amount of the herbed butter underneath the breast skin, spreading it evenly over the breast. Massage the remaining butter over the top of the breasts, drumsticks and wings. Season the inside cavity with additional salt, then stuff generously full of lemon and orange wedges, shallots and garlic. Add the bundle of fresh herbs, too.
  • Cut a 3-foot piece of butcher's twine and truss the turkey by wrapping the twine around the back, then bring it forward, wrap around the drumsticks, then tie the drumsticks together. Transfer the trussed turkey into the prepared roasting pan. Tuck the back wings underneath the turkey so that they don't burn. Wrap the drumstick tips with foil also.
  • Bake the turkey in the preheated oven, using my above chart for timing. At the 2 hours baking mark, bast the turkey with the 1/2 cup melted butter using a pastry brush. Pour in a cup or two of chicken broth into the roasting pan, to add moisture to the oven. Continue baking, basting one more time 30 minutes before the turkey is done and once you remove it from the oven.
  • I baked my turkey for 3 hours and 15 minutes. Use a meat thermometer to check for doneness, the internal temperature needs to reach 165F. Start checking the temperature with 30 minutes remaining. Remove the turkey from the oven once the thermometer reaches 160-162F, tent the turkey with foil and let it rest for 20 minutes. Use a sharp knife and carving fork to carve the turkey.
  • For the gravy, strain the turkey drippings from the roasting pan into a large measuring cup; I recommend lining your strainer with cheesecloth to catch all impurities. Allow the drippings to stand for a few minutes, until the oil collects at the top. Use a spoon to skim the oil off the top.
  • In a medium-sized saucepan, melt the butter over medium heat, then add the flour. Whisk the flour into the butter vigorously, until smooth. Cook the roux for 2 to 3 minutes, allowing the flour to cook. Begin adding the chicken broth, adding it slowly and whisking well after each addition. Add more chicken broth for a thinner gravy. Add the turkey drippings last, whisk and cook for 1 more minute. Keep gravy warm and covered until ready to serve.
