A simple, savory marinade creates a roasted pork loin that is moist and flavorful every time!

Number Of Ingredients 15

½ cup olive oil
⅓ cup lower sodium soy sauce
¼ cup red wine vinegar
Juice of 1 lemon
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley
2 teaspoons dry mustard (recommended: Colman's)
½ teaspoon ground black pepper
3 cloves garlic (minced)
2 pounds pork loin
1 cup chicken broth
Any drippings from cooking the loin
½ cup chicken broth or water
Strained marinade
2 teaspoons butter

Steps:

  • In a large resealable bag, combine the first 9 ingredients to create the marinade.
  • Add the pork loin and marinate for about 4 hours turning several times.
  • Preheat the oven to 350 degrees.
  • Place a large skillet coated with cooking spray over medium high heat.
  • Remove the loin from the marinade and pat it semi-dry. Reserve the marinade mixture.
  • Sear the loin on all sides, including the ends, in the hot skillet. Set the skillet aside without cleaning it (leave all the juices and cooked bits in it) and keep it for later as well.
  • Place the seared loin on a rack in a shallow pan. Add the 1 cup of chicken broth to the pan.
  • Cook for 40-50 minutes or until the internal temperature is 145 degrees (about 20-25 minutes per pound). Remove from the oven and let rest for 5 minutes before slicing.
  • During the last 15 minutes of cooking time, transfer the reserved marinade to a small pan and bring it to a rolling boil. Lower the heat but keep the marinade at a slow boil for ten minutes.
  • Put the skillet that you seared the loin in back over medium-high heat.
  • Pass the boiled marinade through a strainer into the skillet. Add the remaining 1/2 cup of chicken broth. Cook, stirring to loosen any cooked bits from the bottom of the pan. Bring to a low boil.
  • Add the butter and stir until melted.
  • Slice the loin in about 1/2" thick slices. Drizzle with the pan sauce.

salt and ground black pepper to taste
2 pounds pork tenderloin

Steps:

  • Whisk together the olive oil, soy sauce, garlic, mustard, salt, and pepper in a bowl. Place the pork loin in a large resealable plastic bag and pour in the marinade. Marinate in the refrigerator at least 1 hour before cooking.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Transfer the pork loin to a baking dish; pour marinade over the pork.
  • Cook in the preheated oven until the pork is no longer pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

1 cup orange juice
3/4 cup apricot preserves
2 tablespoons plus 1/4 cup sherry or vegetable broth, divided
3 tablespoons lemon juice
2 tablespoons olive oil
1 tablespoon curry powder
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1/2 teaspoon pepper
1 boneless whole pork loin roast (3 pounds)
1 tablespoon cornstarch

Steps:

  • In a small bowl, combine the orange juice, preserves, 2 tablespoons sherry, lemon juice, oil, curry, Worcestershire sauce, thyme and pepper. Pour 3/4 cup marinade into a large resealable plastic bag; add the pork. Seal bag and turn to coat; refrigerate overnight, turning occasionally. Set aside 1 cup remaining marinade for sauce; cover and refrigerate. Cover and refrigerate the rest of the marinade for basting., Drain and discard marinade; place pork on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 1 to 1-1/4 hours or until a thermometer reads 145°, basting occasionally with the reserved marinade. Transfer to a serving platter. 1 tablespoon minced or smashed garlic (or 1 teaspoon garlic powder)
1 teaspoon grated fresh ginger (or ¼ teaspoon ground ginger powder)
1 large pork loin filet or 2 small pork tenderloins (about 2 lbs. total)
½ cup cold water

Steps:

  • In a large measuring cup or bowl, whisk together soy sauce, rice vinegar, ketchup, green onions, garlic and ginger.

2 cups strong brewed coffee
2 cups brown sugar
1/4 cup Worcestershire Sauce
2 tablespoons granulated garlic
2 tablespoons dried basil
2 tablespoons dried thyme
2 tablespoons smoked paprika
2 teaspoons kosher salt
1/4 teaspoon chili flakes
3 lb pork loin

Steps:

  • In a saucepan combine coffee, brown sugar, Worcestershire sauce, garlic, basil, thyme, smoked paprika, salt and chili flakes.
  • Cook over medium heat and bring to a boil. Remove from heat and cool to room temperature. Marinade can be made 2 days in advance and stored in refrigerator until ready to use.
  • Reserve one cup of marinade for serving.
  • Pour remaining cooled marinade over pork loin in a deep dish. Use a meat tenderizer or sharp knife to pierce pork loin all over.
  • Place pork loin and marinade in a ziploc bag and refrigerate for at least 4 hours and up to 8 hours.
  • Prepare a grill fire with hickory or oak wood for smoke flavor to about 300°.
  • Cook pork loin over indirect heat with the grill closed for 1 1/2 hours or until internal temperature reaches around 190°- 200°.
  • Remove from grill and allow to rest 15 minutes before shredding.
  • Pour reserved marinade over shredded pork and serve.

Steps:

  • Place pork tenderloin into a resealable plastic bag.
