Denis and I have had the most wonderful evenings with friends over our fondue pot. Lots of wine and great conversations. Some evenings lasting 4 or 5 hours. Hope you will all try this recipe and enjoy it as much as we do!

Number Of Ingredients 9

2 bay leaves
2 garlic cloves, minced (I use 4-5)
2 teaspoons dried parsley
2 teaspoons fresh ground pepper
2 (10 1/2 ounce) cans nonfat beef broth (I use Campbell's sodium reduced- fat-free broth)
0.5 (750 ml) bottle dry white wine or 1 cup water
2 cups water
1 (1 ounce) package French onion soup mix
0.5 (8 ounce) bottle of heinz seafood sauce

Steps:

  • Mix all the ingredients in your fondue pot, and simmer for 1 hour.
  • When you are ready to start, bring the broth to a boil.
  • We usually have thinnly sliced beef (Chinese fondue beef), large raw tiger shrimp, scallops, portabello mushrooms, and chicken.
  • Of course, you can have what ever meat and vegetables you wish.

My recent kitchen fire has caused me to become much more creative with my cooking. After a few weeks of grill and crock-pot recipes, I discovered I had a fondue pot! I also discovered that fondue cooking is an art, an adventure. Following is my attempt to recreate what I consider to be one of my fav's that will be made again and again! I've also found that this gets better with age. Freeze leftover broth, your next batch will be even more flavorful! Hope you enjoy as much as I did!

Number Of Ingredients 12

750 ml red wine
2 cups water
2 beef bouillon cubes
4 garlic cloves, sliced thin
4 dried tomatoes, chopped (not packed in oil)
1 tablespoon onion paste, fried (available at Asian markets)
3 tablespoons fresh chives
3 tablespoons rosemary
2 -4 bay leaves
1/2 teaspoon red pepper flakes (to taste)
1 (8 ounce) package baby portabella mushrooms (or other flavorful mushrooms)
1 red potatoes, big dice

Steps:

  • Mix all ingredients. Bring to a boil, reduce heat and simmer for 1 hour. Strain into lit fondue pot and bring to high simmer.
  • I've so far tried beef, veges and shrimp, shrimp being my fav in this broth. I also don't add salt, but you may prefer to add.
  • Serve with any of the great fondue dippers found on Zaar -- I like horseradish and wasabi sauces. Sriracha sauce is personal favorite.
  • Possible additions:.
  • For beef, 1T Worcestershire sauce.
  • For chicken/shrimp, sliced fresh ginger and 1T soy sauce.

This Fondue Broth Recipe is a tasty base that combines finely chopped veggies and spices to cook your proteins and veggies perfectly, fondue style!

5 ½ cups warm water
3 Tablespoons finely chopped onion
1 Tablespoon finely chopped celery
1 Tablespoon finely chopped carrot
2 Tablespoon kosher salt
1 Tablespoon freshly ground pepper
2 teaspoon garlic powder
Any and all of your favorite dippers!

Steps:

  • In a medium to large bowl, whisk together the water, onion, celery, carrot, salt, pepper and garlic powder until it is combined.
  • Pour the broth into a fondue pot.
  • Bring the broth to a rapid simmer over medium-high heat.
  • Place a piece of meat or vegetable on a fondue fork.
  • Cook in the broth until you have reached your desired level of doneness.
  • Serve with your favorite sauces and enjoy!

This is used as a main course fondue dish and is similar to what you get at the Melting Pot. Serve with lots of things to cook in it: thin meats, shrimp, ravioli, veggies (broccoli, potatoes, asparagus, mushrooms), tofu, etc. Just make sure it is really hot to cook everything properly! We also serve with a few dipping sauces for all of the items once they are cooked.

6 cups vegetable broth or 6 cups chicken broth
1/2 cup red wine (burgandy or similar)
2 tablespoons cream sherry
2 tablespoons minced garlic
2 teaspoons soy sauce
2 bay leaves

Steps:

  • Place all of the ingredients in a saucepan and bring to boil.
  • Cover, reduce heat and simmer for 20 minutes (or longer! The longer is cooks the richer the flavor will be).
  • Transfer to a fondue pot and cook all sorts of delicious things in it!
