Steps:
- Cook bacon on the flat top grill over medium heat until browned and crispy, about 10 minutes.
- Meanwhile, mix ground chuck, onion powder, garlic powder, salt, and pepper together with your hands. Divide into 3 portions and roll into balls.
- Remove bacon from the flat top and increase heat to medium-high.
- Pour flour onto a plate and roll burgers around in the flour until well coated. Pour 1 tablespoon oil onto the hot grill.
- Place 1 of the burgers onto the oiled flat top and press down firmly until it forms a patty, about 1/2-inch thick; repeat for other 2 burgers. Cook until browned, 4 to 5 minutes. Use a firm, metal spatula to flip patties in order to scrape up all of the crust. Continue to cook until browned and no longer pink, 4 to 5 minutes more. An instant-read thermometer inserted into the center of the burgers should read at least 160 degrees F (70 degrees C).
- Reduce heat to medium and add remaining oil. Crack eggs onto the grill. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes.
- Assemble burgers in the buns with American cheese, bacon, and egg.

Steps:
- Preheat your grill or a skillet on the stove to medium-high heat. Season 1 pound ground beef chuck with ½ teaspoon each of salt and pepper. Mix well and shape the beef into 4 burger patties.
- Grill the patties or cook on the stove until you reach a nice sear, about 3-5 minutes. If the burgers stick when you try to flip them, they aren't ready! Let them sear another 30 seconds to a minute until they come up easily.
- Flip the burgers and sear the other side about 3-5 minutes, or until the burgers are done to your liking. After flipping, top each burger with 2 slices or more of smoked Gruyere cheese. Cook until it melts. We tend to add the cheese closer to the final 2 minutes of cooking time.
- Remove the burgers from the heat and let them rest 5-10 minutes. While they're resting, cook 4 eggs according to how you like them (ex. fried or poached). Prepare your caramelized onions.
- Toast 4 burger buns. After cooking the eggs, place a burger on each bun. Top with a spoonful of caramelized onions and an egg. Place the top buns back on the burgers, but be gentle so the egg doesn't break. Serve with plenty of napkins and enjoy!

- Combine all the sauce ingredients in a small bowl and mix well. Refrigerate until ready to use. Alternatively, if you want to use the sauce in a squeeze bottle, I recommend blending the ingredients so the relish doesn’t get stuck.
- Heat a large cast iron skillet over medium heat and melt in 1/2 a tablespoon of butter. Place the buns in cut side down until golden brown, this will only take a minute so keep an eye on them.
- Using your hands, form the ground beef into a ball and then gently flatten it into a patty that is about a 1/4” thick. Try to make it slightly larger than your bun as the patty will shrink slightly when it cooks. The exact thickness doesn’t matter but if you go any thicker or thinner, adjust your cooking time accordingly. Generously season one side with salt and pepper.
- Melt the rest of the butter into the skillet and place the burger in seasoned side down (to one side so there is room for the egg). Season the other side with salt and pepper. I like my burgers medium rare and it takes about 1 and a half minutes per side to get there. Feel free to leave it on longer if you like your burger more done.

- Using lightly oiled hands shape the ground beef into 2 burger patties, approximately 1 inch thick. Set on a plate an gently press to form a well in the center.
- Drizzle the burger patties with a light drizzle of olive oil and generously season all over with the sea salt, smoked paprika, garlic powder, onion powder and red pepper flakes. Set aside and allow to rest at room temperature for 20 minutes.
- Heat up a cast iron skillet over medium flame and sear the burger patties for 3 minutes on each side. Using a pair of tongues pick up the burger and hold it upright to sear the edges all around, another 30 seconds or so.
- Lay the burger flat on the cast iron skillet and place the pepper jack cheese on top. Turn off the flame and cover the burger loosely with some aluminum foil to help the cheese melt on top.

- Heat a gas grill to high heat. When it reaches 350 - 400 degrees F place burgers on grill grate. Grill the first side about 3 minutes or until golden brown and slightly charred. Flip over burgers. Cook an additional 6 minutes or until it reaches desired doneness. When you have one minute left of grilling time place a slice of cheese on top of burger and let it melt.
- While burgers are cooking you will want to fry your eggs either on a skillet on the stove or on the grill. Heat a pan with 2 Tbsp butter over medium high heat. When the butter foams, break the eggs into the pan, spacing them about 2 inches apart. Reduce the heat to low and season the eggs with salt and pepper. Cover the pan and cook until the whites are set and the yolks are just beginning to firm around the edge, about 5 minutes.
- You will also want to prepare your bacon according to directions on package while burger is cooking.
- While burgers are cooking butter the insides of the buns with 2 Tbsp butter. Place buns, butter side down, on grill grates to toast. Remove from grill when they are lightly toasted.
BOBBY FLAY'S BEST TIPS FOR HOW TO MAKE PERFECT BURGERS ...
From foodnetwork.com
Estimated Reading Time 5 mins
- Form your patties gently. "You don't want to spend a lot of time shaping your burger," Bobby says. "Basically, you want to get the burger shaped until it just holds together, so that when you eat it you can sort of see the granular pieces of the beef running through it.
- Press a divot into each patty with your thumb. "When a burger [without a well] cooks, it plumps up like a football," Bobby says. "But when I put a well in the burger, it kind of looks like a funny shape, but it plumps back up to the original shape that you want the burger to be in."
- Use a flat cooking surface. If you're cooking burgers indoors, skip the grill pan and go with a stovetop griddle, heavy cast-iron pan or large skillet that hold its heat well.
- Flip only once. "Let the griddle do its job," Bobby says. By flipping the burger only one time, you'll get a crispy seared crust that locks in the burger's juices.
- Melt the cheese perfectly and completely — with the secret ingredient! There's one surprising ingredient that Bobby uses that's key to making his perfect cheeseburgers.
- Keep toppings simple. "Chefs like to put a lot of things on burgers, but to me if you put too many things on a burger, all of the flavors start to get muddled and it doesn't taste like anything," Bobby says.
- Crunchify. Only Bobby can turn the word crunch into a verb. Any true Bobby fan knows that a Bobby Flay burger isn’t complete without a crispy component to add great texture and flavor.
