OLD FASHIONED FLAPJACKS

Been using this recipe for many years. It came from one of McCalls oldest cookbooks. ALWAYS use real maple syrup.

Number Of Ingredients 7

2 cups all-purpose flour (wheat can be used also or a combination of the two)
4 tablespoons sugar
2 teaspoons baking powder
6 tablespoons butter, melted
1 1/2 cups milk
1/2 teaspoon salt
2 eggs

Steps:

  • Preheat griddle so that a drop of water beads when dropped on it.
  • Combine dry ingredients.
  • Combine wet ingredients and beat well. (Do this quickly as the butter will tend to set up when it hits the cold milk).
  • Add wet ingredients to dry ingredients.
  • Mix but not too much. Batter will be slightly lumpy.
  • Drop a couple tablespoons for each pancake onto hot griddle and cook until bubbles appear in batter and bottom is golden brown.
  • Serve with real butter and real maple syrup.

This recipe is from Women's Weekly cookbook from the early 80's. It is a great recipe for using up leftover roast meat or ham. A simple but hearty dish. We usually serve with bbq sauce

1 3/4 cups self raising flour
2 eggs
1 cup milk
2 cups boneless lamb roast or 2 cups ham

Steps:

  • Mix flour, eggs and milk ensuring no lumps.
  • Chop meat into 1/2 inch cubes (this can be very roughly done - no need to be neat or accurate).
  • Add meat to batter.
  • Pour pancake size amounts of batter into a non stick frypan - cook as you would a pancake.

Found this recipe online and I'm posting so I don't lose it before I get a chance to try it out. There are variations for ham, banana, and apple fritters here. Serving size is an estimate as none was given with the original recipe.

1 cup flour
1 teaspoon baking powder
1 tablespoon melted margarine
1 egg
1/2 cup milk (depending on which type of fritter you choose, see below) or 1/2 cup fruit juice (depending on which type of fritter you choose, see below)
1 dash salt
1 cup minced ham
6 bananas
2 cups diced apples

Steps:

  • For basic fritter batter: Combine flour, baking powder and salt; stir to blend. Add egg and melted margarine; stir until well blended. Add milk (or fruit juice), mix well. Let stand 30 minutes.
  • Ham Fritters: Add minced ham to basic batter. Drop by spoonfuls into hot oil and deep fry.
  • Banana Fritters: Peel and quarter bananas. Dip bananas in batter and saute in margarine until golden brown on all sides.
  • Apple Fritters: Stir apples into basic batter. Drop by spoonfuls into hot oil and deep fry.
  • *Note* You can make peach or apricot fritters by using canned fruit. Use the fruit syrup for the liquid in the basic batter. Dice fruit and mix with batter. Deep fry as for the apple fritters.

How many you get depends on size. Any meat can be used. Clams are suggested here. Any shell fish works. If you take out paprika and herb, replace with equal parts cinnamon and sugar, then fruit can be substituted for the meat.

3/4 teaspoon salt
1/4 teaspoon paprika

1 cup clam, chopped or minced.

Steps:

  • Beat eggs until light yellow.
  • Stir in milk.
  • Stir in flour, powder, salt, and paprika, stirring as little as possible.
  • Fold in meat and parsley.
  • Deep fry 1/4- 1/3 cup at a time in 350-360 degree oil about 3 minutes.
  • Remove to paper towel and sprinkle with salt (or sugar if using fruit).
