Time 45m

Yield 4

Number Of Ingredients 18

3 avocados - peeled, pitted and diced
½ onion, minced
2 Roma (plum) tomatoes, diced
1 clove garlic, pressed
1 bunch fresh cilantro, chopped
1 teaspoon ground cumin
2 teaspoons crushed red pepper flakes
3 tablespoons lime juice
3 tablespoons olive oil
salt and black pepper to taste
1 tablespoon kosher salt
2 tablespoons ground cumin
1 teaspoon crushed red pepper flakes
2 teaspoons ground black pepper
1 tablespoon ground coriander
1 tablespoon chili powder
1 teaspoon ground cinnamon
1 (1 1/2-pound) flank steak

Steps:

  • Place the avocados, onion, tomato, garlic, and cilantro into a mixing bowl. Season with 1 teaspoon cumin, 2 teaspoons red pepper flakes, lime juice, and olive oil. Season to taste with salt and pepper, and stir gently until evenly combined; set aside.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Combine the kosher salt, 2 tablespoons cumin, 1 teaspoon crushed red pepper, ground black pepper, coriander, chili powder, and cinnamon in a bowl; set aside.
  • Dry the flank steak with paper towels, and rub the spice mixture onto both sides. Cook on the preheated grill until the flank steak starts to firm, and is reddish-pink and juicy in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove the steak from the grill, cover with aluminum foil, and let rest 5 minutes before slicing against the grain. Arrange onto a platter, and top with salsa to serve.

FLANK STEAK TACOS WITH MANGO-AVOCADO SALSA

Flank Steak Tacos with Mango-Avocado Salsa image

After making steak tacos a ton of different ways from a ton of different recipes, I think I found my favorite. Very flavorful meat and great salsa. No one flavor seems to kill the rest. Serve with lime wedges, your choice of tortillas, and sour cream.

Yield 8

Number Of Ingredients 21

⅓ cup soy sauce

1 medium ripe mango, diced

1 fresh jalapeno pepper, seeded and diced
¼ cup chopped red onion
¼ cup chopped fresh cilantro
1 (12 ounce) package tortillas

Steps:

  • 1. In a small bowl, combine the lime juice, olive oil, garlic and cumin. Place the flank steak in a large zip-top food storage bag, and pour in the marinade. Seal the bag, removing as much air as possible, and gently squish the steak around in the bag to make sure it's nicely coated. Marinate for 20 minutes at room temperature.
  • 2. Meanwhile, get to work on the avocado salsa verde. Preheat your broiler on high. Remove the husks from your tomatillos and rinse them well under warm water until their skins are no longer sticky. Cut each tomatillo in half crosswise, and place them on an aluminum foil-lined baking sheet. Broil for 4 to 5 minutes, flip them over, and broil for another 4 minutes until softened and charred in spots. Transfer the tomatillos to a food processor or high-speed blender, and add the remaining ingredients for the salsa verde. Process until nice and smooth. Transfer the salsa verde to a bowl and refrigerate until ready to use.
  • 3. Preheat a grill (or grill pan) over medium-high heat. Pat the steak dry and season both sides generously with salt and black pepper.
  • 4. Grill the steak for 5 to 6 minutes per side for medium-rare. Transfer to a cutting board and let the steak rest for a full 10 minutes to allow the juices to redistribute.
