SOY-GINGER FLANK STEAK



Soy-Ginger Flank Steak image

This Teriyaki-style steak is my family's all-time favorite steak. The garlic and soy and ginger with a bit of brown sugar are just a complete home run.

1 tablespoon vegetable or canola oil
1 ½ tablespoons finely grated fresh ginger
1 tablespoon minced garlic
⅔ cup low-sodium soy sauce (or ½ cup soy sauce and 3 tablespoons water)
½ cup lightly packed dark brown sugar
½ teaspoon crushed red pepper (optional)
1 flank steak (2 ½ to 3 pounds)
Freshly ground pepper (to taste)
Thinly sliced scallions (both white and light greens parts (optional), to serve)
Lime wedges (to serve)
Hot cooked rice (to serve)

Steps:

  • Preheat the broiler, and if you have an adjustable rack, make sure it is as close to the flame as it can get.
  • In a small saucepan, heat the oil over medium heat. Add the ginger and garlic and stir until you can really smell everything and the garlic turns golden, about 3 minutes. Add the soy sauce, brown sugar and crushed red pepper, if using, raise the heat to medium-high and simmer until slightly reduced and syrupy, stirring occasionally, about 5 minutes. Set aside to cool for 5 minutes.
  • Season the steak lightly with pepper. Brush the top side of the steak with the soy glaze, then broil the steak for 4 minutes. Flip the steak with tongs, then brush the top the glaze and broil until it is done to your liking (see above!), about 4 more minutes. Remove the steak to a cutting board and let sit for 5 minutes. Meanwhile, reheat the rest of the soy glaze over low heat for at least 4 minutes.
  • Thinly slice the steak and brush the slices with some of the reserved soy glaze. Transfer to a platter, and scatter the scallions, if using, over the sliced steak. Toss the lime wedges on the edge of the platter and let everyone squeeze one (if they like) over their steak. Put the rest of the heated soy glaze in a small pitcher or bowl to serve at the table (drizzle over the rice).

A wonderful flank steak on the grill recipe I invented that friends just love! My girls think this is great, and it doesn't take long to grill. This also works great when sliced and used for fajitas.

½ cup vegetable oil
⅓ cup soy sauce
¼ cup red wine vinegar
2 tablespoons fresh lemon juice
1 ½ tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
2 cloves garlic, minced
½ teaspoon ground black pepper
1 ½ pounds flank steak

Steps:

  • In a medium bowl, mix the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, mustard, garlic, and ground black pepper. Place meat in a shallow glass dish. Pour marinade over the steak, turning meat to coat thoroughly. Cover, and refrigerate for 6 hours.
  • Preheat grill for medium-high heat.
  • Oil the grill grate. Place steaks on the grill, and discard the marinade. Grill meat for 5 minutes per side, or to desired doneness.

Another great recipe my brothers & I grew up on... The outside gets a little but crispy and seals in the succulent juices inside - yum! It's as delicious the next few days as it is hot off the grill - make a bunch, store in a ziplock in the fridge & snack for days!

1 (8 ounce) can beef broth (bouillon)
1 bunch green onion, chopped
3 tablespoons lemon juice
3 tablespoons brown sugar
1/3 cup soy sauce
2 tablespoons Lawry's Seasoned Salt
1 -2 lb flank steak

Steps:

  • Combine all ingredients in ziplock bag or possibly glass dish.
  • Marinate steak overnight for best flavor.
  • Grill on barbecue (best) or possibly broil to taste - I usually eat steaks med rare but I find this tastes best med/med well (very slightly pink in the middle).
  • Slice thin against grain.

1 1/2 lbs flank steaks
2 tablespoons soy sauce
2 (15 ounce) cans diced tomatoes
1 tablespoon Worcestershire sauce
1 dash hot pepper sauce
3 tablespoons vegetable oil
1 medium onion, sliced
1/2 green pepper, sliced
1 garlic clove, minced
1 (4 ounce) can sliced mushrooms
2 tablespoons cornstarch
1 1/2 cups beef broth

Steps:

  • Slice steak thinly on the bias (this will be easier if you freeze the steak for 20-30 minutes first). Combine in a bowl with soy sauce, Worcestershire sauce and hot sauce. Let stand 10-15 minute.
  • Heat oil in heavy skillet. Add beef and stir-fry quickly until meat loses its pink color. Remove from pan to a clean plate and set aside.
  • Add onion, green pepper and garlic to fat remaining in skillet. Sauté until soft. Add mushrooms with their liquid.
  • Stir cornstarch into a little bit of the beef broth until smooth. Add the slurry with the rest of the broth to the vegetables. Bring to a boil and cook 3 minutes. Return meat to pan and cook until hot all the way through.
