COCONUT CHEESE FLAN (FLAN DE COCO Y QUESO)
Flan I made for Christmas Eve 2009 and came out delicious... so I had to write it down.

- Preheat oven to 350 degrees F (175 degrees C).
- In a heavy skillet over medium-low heat, cook and stir sugar with a wooden spoon until melted and golden, about 10 minutes. Caramel is very hot. Very carefully pour the caramel into a 9-inch round, 3-inch deep baking dish. Swirl dish to cover bottom and sides. The caramel will harden as it cools.
- Combine the eggs, cream cheese, and sweetened condensed milk in a blender. Cover, and blend on High until well combined; transfer to a large bowl. Pour the cream of coconut, coconut milk, evaporated milk, coconut-flavored rum, and vanilla extract into the blender; cover and blend on High until well combined. Pour into the bowl with the cream cheese mixture. Whisk until incorporated. Pour the flan mixture into the caramel-coated baking dish.
- Line a roasting pan with a damp kitchen towel. Place the filled baking dish on the towel, and place roasting pan in the preheated oven. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish. Bake until the flan is set and a knife inserted in the center comes out clean, about 1 hour. Transfer to a wire rack; cool. Refrigerate flan until ready to serve.
- To serve, run a knife around the edges of the pan and flip the flan out onto a serving platter. Spoon any caramel remaining in the baking dish over the flan.

- Tenga todos los ingredientes del flan de coco y queso crema a temperatura ambiente. Entonces coloque un molde lleno de agua en el horno a 350 ºF o 180 ºC durante diez minutos.
- Mezcle todos los ingredientes, con la excepción del coco rallado y el azúcar (la cual es exclusivamente para el caramelo), ya sea en una licuadora o en un procesador de alimentos hasta que los ingredientes estén bien integrados y la mezcla esté cremosa.
- A continuación, añada el coco rallado a la preparación del flan de coco con queso Philadelphia y mezcle de nuevo.
- Haga el caramelo líquido en una cacerola añadiendo dos cucharaditas de agua al azúcar y derritiendo a fuego mediano hasta que quede de color dorado oscuro.
- Vierta el caramelo en un molde redondo de hueco en el medio, más conocido como flanera, y después vierta la mezcla del flan de coco y queso puertorriqueño en el molde. .
- Coloque el molde del flan de coco y queso crema dentro del recipiente con agua que está en el horno. Hornee en baño de María por una hora.

- Cuando lo vaya a servir, para la presentación coloque un plato redondo de dos pulgadas de profundidad sobre el molde. Con un movimiento rápido viértalo sobre el molde y deje que el caramelo cubra todo el flan de coco y queso crema. Sirva con hojitas de menta.

- Preheat oven to 350 degrees F (175 degrees C).
- Fill a large oven-safe pot with water to 1 inch; bring to a boil.
- Place sweetened condensed milk, evaporated milk, eggs, cream cheese, milk, and vanilla extract in a blender; blend until smooth.
- Place sugar in an even layer in a saucepan over medium heat. Cook until edges start to brown, about 1 minute; drag sugar into the center with a spatula once the edges start to brown. Continue cooking, stirring from time to time, until caramel is an even golden brown, 4 to 5 minutes.
- Pour caramel into a 9-inch flan mold or baking pan; swirl so that caramel reaches 1 inch up the sides. Pour condensed milk mixture on top. Place mold in the pot of boiling water.
- Bake flan in the preheated oven until a damp table knife inserted into the center comes out clean, 45 minutes to 1 hour. Remove from oven and let stand for 5 minutes.
- Chill flan in the refrigerator until firm, 2 to 3 hours. Invert onto a serving plate so that caramel is on top.

- Step 1 Heat oven to 350°F. In small saucepan over medium high heat, add sugar and ½ cup water. Bring water to boil, stirring constantly until sugar dissolves. Continue to cook sugar mixture, without stirring, until deep golden brown and caramelized, about 15 minutes. Carefully pour caramel to 8-cup heat-proof mold, quickly swirling to evenly coat bottom before caramel hardens; set aside. Step 2 In medium mixing bowl, using hand blender or whisk, beat together cream cheese and eggs until smooth. Whisk in condensed milk and evaporated milk until smooth and combined. Pour cream cheese mixture into prepared mold with caramel; cover tightly with foil. Place mold in larger, deep pan. Pour enough hot (not boiling) water into larger pan, until water comes halfway up sides of flan mold to form bain-marie. Step 3 Transfer pan to oven. Bake until flan is set (thin knife inserted into center will come out clean), 40-45 minutes. Remove flan mold from pan; discard foil. Let sit until cool. Transfer flan mold to refrigerator until chilled, at least 2 hours. To unmold, run thin knife around edges of flan. Invert onto serving plate. Cut into 12 pieces.

Colócalo en una fuente para hornear grande; agrega suficiente agua caliente a la fuente, de modo que el molde esté sumergido hasta la mitad.
- Hornea el flan de 50 min. a 1 hora o hasta que al insertar un cuchillo cerca del centro, éste salga limpio. Déjalo enfriar un poco. Saca cuidadosamente el molde del agua. Déjalo que se enfríe completamente sobre una rejilla de metal. Ponlo en la nevera varias horas o hasta que se enfríe. Vuelca el flan sobre un plato justo antes de servir.

- Preheat to oven 350°F degrees. Set a kettle of water to boil. Set an 8- or 9-inch cake (or pie) pan with 2-inch high sides inside of a larger baking pan (such as a 13x9).
- In a small sauce pan over medium-low heat, melt sugar until completely dissolved. Watch carefully so it does not burn. You may swirl the pan to stir. Remove from heat when it is a dark golden, amber color.
- Immediately pour the melted sugar into the bottom of the cake pan, working quickly before it hardens. Set aside.
- In a blender beat the cream cheese, sweetened condensed milk, evaporated milk, eggs and vanilla. Mix until well combined.
- Strain the custard through a fine-mesh sieve to ensure there are no lumps. Pour the strained custard into the cake pan over the sugar caramel. Next, add boiling water to the larger pan. It should come up the sides about an inch deep. The cake pan will be sitting in a water bath.
- Bake for 1 hour, or until set around the edges with a slight jiggle in the middle. Remove from oven and let the flan cool in the water bath, about an hour. Once cool, refrigerate at least 2 hours, but overnight is best.
- When ready to serve, run a knife around the edges to loosen. Set a plate over the flan and flip upside-down to invert. Slice into wedges and serve.

- Calienta el horno a 350°F.
- Derrite 1 taza del azúcar, revolviendo constantemennte, en una olla pequeña de fondo pesado a fuego medio hasta que adquiera un color dorado intenso. Vierte inmediatamente cantidades iguales del caramelo en 10 moldecitos para flan (4 oz cada uno) e inclina los moldecitos para cubrir bien el fondo con el caramelo.
- Licúa la leche evaporada y el queso crema hasta obtener una mezcla homogénea. Agrega el azúcar restante, los huevos, el coco y el extracto de ron; licúa justo hasta que quede homogéneo. - Hornea de 45 a 50 min., o hasta que al insertar un cuchillo cerca del centro, éste salga limpio. Déjalos enfriar. Con cuidado, retira los moldecitos del agua. Refrigéralos 4 horas. Al momento de servir, voltea los moldecitos sobre platos de postre. Decóralos con Cool Whip.

- Add the sugar to a pan and spread out evenly. Heat over medium heat.
- After about 7 minutes the sugar will begin to melt. Slowly stir with a wooden spoon until all the sugar has melted.
- Pour the caramel sauce into a pie dish. Be careful the caramel sauce is VERY hot.
- Preheat the oven to 350. Put the rest of the ingredients in the blender and blend until smooth.
- Pour the blended mixture into the pie dish.
- Cover the pie dish with foil.
- Place the pie dish in a large roasting pan.
- Fill the pan with water until it reaches about halfway up the pie dish.
- Place the roasting pan in the oven and bake for about 1 hour and 40 minutes.
- Remove the flan from the oven. Remove the pie dish from the roasting pan very carefully using kitchen mittens.
- The flan should be slightly jiggly. But a fork should still come out clean when inserted in the flan.
- Let the flan cool for about an hour. The flan will continue to set as it cools.
- Transfer the flan to the refrigerator to chill overnight or for at least 6 hours.
- Take a large plate and place it face down on top of the pie dish.
- Flip it and let it sit for about a minute.
- Lift up the pie dish.
- Cut and serve the flan. Garnish with shredded coconut if desired.

- Calienta el azúcar en un cazo a fuego medio-bajo, moviendo con una cuchara de madera, hasta que se haya derretido y tomado un color dorado, aproximadamente 10 minutos. El caramelo se endurecerá conforme se enfría.
- Coloca los huevos, queso crema y leche condensada en el vaso de la licuadora. Tapa y licua a velocidad alta hasta tener una mezcla cremosa y homogénea. Vierte dentro de un tazón grande. Coloca la crema de coco, leche de coco, leche evaporada, ron y vainilla dentro del vaso de la licuadora y licua bien. Vierte dentro del tazón con la mezcla de queso crema. Bate manualmente hasta incorporar. Vierte dentro del molde con el caramelo.
- Hornea a baño María hasta que el flan se haya cuajado, aproximadamente 1 hora. Coloca el flan sobre una rejilla para que se enfríe y refrigera hasta antes de servir.
