Fast and easy pineapple rum flambé makes an elegant and light finish to a meal, yet it is quite simple to make.

1/4 cup brown sugar
1 small fresh pineapple (ends trimmed, skin peeled, cored, cut into 6 slices, and patted dry)
1/4 cup butter
1/4 cup rum (warmed)

Steps:

  • Place brown sugar in a shallow soup bowl. Press each pineapple ring into the brown sugar, coating both sides.
  • Heat butter in a large, heavy skillet on medium-low heat. When hot, place pineapple slices in the skillet in a single layer. Cook for 3 to 4 minutes until nicely browned. Flip the slices and brown the other side.
  • Move skillet far from the heat source, carefully pour in warmed rum , and ignite with a long match or barbecue lighter to flambé. Return to heat and let the alcohol burn off. Remove from heat and let rest for 5 minutes. (Depending on the size of the pineapple, you may need to do this in two skillets.)
  • Pineapple slices may be served simply, with the pan sauce, or as a topping for pound cake or over ice cream .

This no-bake dessert is a great one to keep in your pocket since it comes together super fast and tastes great topped with whipped cream or ice cream. To safely flambé, use a long stick lighter to ignite the rum and make sure there isn't anything above the skillet. Let the flame completely die out before pouring over the crepes.

4 store-bought crêpes
4 tablespoons unsalted butter, plus melted butter for brushing
2 peaches, pitted and sliced
1/2 cup sugar
1/3 cup dark rum
Juice of 1/2 lime

Steps:

  • Lightly brush a crêpe with melted butter and warm in a large nonstick skillet over medium heat, 15 to 30 seconds. Flip and fold over twice to form a triangle, then transfer to a serving platter. Repeat with the remaining crêpes.
  • Sauté the peaches in the butter and sugar in the same skillet over medium-high heat until tender, 3 to 5 minutes.
  • Carefully add the rum to the skillet and use a long lighter to ignite. Cook until the alcohol burns off, then stir in the lime juice. Spoon the peaches over the crêpes.

PINEAPPLE UPSIDE-DOWN CREPES

2 cups all-purpose flour
6 tablespoons unsalted butter, melted and cooled
4 tablespoons sugar
3 eggs
Pinch salt
1 cup milk, or as needed
2 large pineapples, peeled, cored and cut lengthwise into quarters
6 tablespoons of butter, plus 3 teaspoons for greasing pan
1 cup macadamia nuts, toasted and coarsely ground
1/2 cup sugar
3/4 cups heavy cream, or as needed
1/2 cup 151-proof rum
10 to 12 miniature scoops vanilla, buttermilk or coconut ice cream

Steps:

  • For the batter: Combine flour, melted butter, sugar, eggs and salt in a food processor or blender. Add enough milk to make a fluid batter. The batter may be covered and refrigerated up to 24 hours.
  • For the topping: Line large baking sheet with parchment paper, and set aside.
  • Slice pineapple quarters crosswise, 1/8-inch thick. In a 7-inch nonstick pan over medium heat, melt 1/4 teaspoon of butter, spreading with a spatula. Remove pan from heat and allow to cool slightly.
  • With pan off heat, ladle in about 3 tablespoons of batter and roll around pan until bottom is evenly coated. Sprinkle with 1 tablespoon of macadamia nuts.
  • Return pan to medium heat. Just as crepe sets, but while it is still wet on top, remove pan from heat and arrange pineapple slices on an overlapping circular pattern, completely covering the surface of the crepe. Use a skewer or fork to arrange any of the pineapple slices that fall out of place. Shake crepe slightly to keep it from sticking to pan.
  • Return pan to heat, sprinkle pineapple with 2 teaspoons of sugar and about 1/4 tablespoon of cold butter, cut into bits. Use a rubber spatula to loosen edge of crepe and check underside. When bottom is golden brown, loosen crepe by running a rubber spatula around edges and carefully flip crepe over in pan. Continue cooking until sugar underneath begins to turn a light caramel color.
  • Add 1 tablespoon of cream around edges of crepe, and tilt pan so that cream blends with sugar and runs under edges of crepe.
  • Spray a flat metal surface like the bottom of a cake pan with nonstick cooking spray. Place sprayed side over crepe, and invert skillet to remove crepe. Slide crepe onto prepared baking sheet. Repeat process, wiping pan clean between crepes, to make 10 to 12. Sheet of crepes may be covered and refrigerated up to 4 hours.
  • To serve, reheat crepes in a 350 degree oven until hot, about 4 minutes. Transfer to serving plates. Pour rum into small pitcher or gravy boat and set aflame. Top crepes with burning rum. Garnish each plate with a miniature scoop of ice cream.

MANDARIN ORANGE SAUCE FOR CREPES

This sauce goes beautifully with crepes. Not too sweet, and super quick and easy to make. I used the crepe recipe posted by MizzNezz (recipe #18410). I coat the crepes with the sauce and fold into quarters.

1 (15 ounce) can mandarin oranges in light syrup
2 teaspoons sugar
2 teaspoons rum (optional)
1/2 teaspoon vanilla extract
1/4 cup cold water
1 tablespoon cornstarch
1 tablespoon frozen concentrated orange juice

Steps:

  • Heat oranges, juice, sugar, vanilla and rum over med to high heat.
  • In a small bowl, stir together cornstarch and water.
  • When orange mixture comes to a bowl, stir in cornstarch mixture.
  • Cook stirring constantly until thick.

HONEY CREPES



Honey Crepes image

This is a very easy and different crepe recipe. I had never heard of honey crepes before, but was very pleased with the results.

2 large eggs
180 ml whole milk
125 ml water
125 g unbleached plain flour
45 g butter, melted
5 ml vanilla, extract
20 g honey, divided
oil, as needed
honey, for dirzzling
icing sugar

Steps:

  • Place the Dough Blade in the Processor Bowl. Add the eggs, milk, water flour, butter, extract and 10 g honey and pulse until smooth.
  • In a non-stick sauté pan, heat a little oil over medium-high heat. Pour a small amount of batter into the pan and swirl around evenly to form a thin circle. Cook for 30 seconds. Flip and cook for an additional 10 seconds. Remove from pan and keep warm on a plate. Continue with the remaining batter, stacking the crepes between layers of parchment paper.
  • To serve, roll the crepes to form cigar shapes, place on a serving platter and drizzle with honey. Sift with powdered sugar just before serving. Makes about 8 crepes.

Looked at all the other Chicken Crepe recipes and mine is not like the others! I first found this recipe in my mom's old cook book, but have totally tweaked it and made it my own! It's one of my favorites to eat, and my family gets so excited when I make these! I usually double or triple the gravy to have lots of it to pour over the crepes and enough left over to have with mashed potatoes.

1 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cups milk
1 egg
1 tablespoon butter, melted
1 1/2 cups finely cut up cooked chicken
1/2 cup diced carrot
1/2 cup diced celery
1/2 cup diced onion
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
2 cups chicken broth

Steps:

  • Crepes:.
  • Mix flour, baking powder and salt.
  • Stir in remaining ingredients.
  • Beat with electric mixer until smooth.
  • Lightly butter small skillet; heat over medium heat until bubbly.
  • For each crepe, pour 1/4 cup of the batter into skillet.
  • Immediately rotate skillet until thin film of batter covers bottom.
  • Cook until light brown, turn, and cook other side until light brown.
  • Stack crepes, covering with a towel to prevent drying out while preparing filling.
  • Gravy:.
  • Heat butter over low heat until melted in a sauce pan.
  • Blend in flour and salt.
  • Cook over low heat, stirring constantly, until mixture is smooth and bubbly.
  • Remove from heat.
  • Stir in broth.
  • Heat to boiling, stirring constantly.
  • Boil and stir 1 minute.
  • Filling:.
  • Sauté carrots, celery and onion in a little bit of oil in a skillet until tender.
  • Mix chicken, vegetables, and just enough gravy to coat everything nicely in a bowl.
  • Put about 1/4 cup of mixture on center of each crepe and roll up.
  • Place crepes seam side down in a 9x13 baking dish.
  • Pour remaining gravy over crepes.
  • Bake uncovered in 350°F oven until crepes are hot, about 20 minutes.
  • Can be frozen before baking, just thaw completely before putting in the oven.
  • Also can freeze filling and crepes separate, just make sure to place wax paper between crepes before freezing.

The real excitement comes at the last minute, when warm pineapple chunks are flamed with dark rum and spooned over the chicken! It's quite dramatic and will definitely garner some applause. The flavors will take you right to the Caribbean!

2 1/2-3 lbs broiler-fryer chickens, cut up
3 tablespoons lime juice
1 1/2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
2 medium tomatoes, c ut up
1 medium onion, sliced
1 garlic clove, finely c hopped
1/4 cup raisins
1/2 teaspoon dried oregano leaves
3 -4 drops hot red pepper sauce
1/4 cup water
1 (20 ounce) can pineapple chunks in syrup, drained (reserve syrup)
2 tablespoons dark rum

Steps:

  • Sprinkle chicken with lime juice, salt and pepper. Cover and refrigerate 30 minutes.
  • Heat oil in 12-inch skillet or Dutch oven until hot. Cook chicken over medium heat until brown on all sides, about 15 minutes. Drain fat from skillet.
  • Add tomatoes, onion, garlic, raisins, oregano, red pepper sauce and water. Heat to boiling, then reduce heat. Cover and simmer until thickened pieces of chicken are done, 30 to 40 minutes.
  • Remove chicken mixture to warm platter with a slotted spoon. Heat pineapple and 1/4 cup of the reserved syrup to boiling. Heat rum until warm; ignite. Pour flaming rum over pineapple. Spoon flaming pineapple mixture over chicken.

An absolutely spectacular dessert! Recipe found in an old cookbook called More Fun and Flavour With Spices. You can use the crepe recipe I'm including or use your own favourite recipe. The crepes can be made ahead of time and frozen. Simply reheat them in a slow oven (I would wrap them in foil to prevent hardening). The cooking time does not include the 1 hour stand time for the crepe batter.

1 cup milk
3/4 cup all-purpose flour
3/4 teaspoon salt
1 teaspoon sugar

1 (19 ounce) can pineapple chunks in light syrup
2 teaspoons cornstarch
1/3 cup brown sugar
1/4 teaspoon cinnamon
3/4 teaspoon grated orange rind
1/4 cup butter
3 tablespoons brandy

Steps:

  • CREPES:.
  • Mix all crepe ingredients together in a blender or mixer until smooth and allow batter to stand for 1 hour or longer.
  • Heat an 8-inch nonstick skillet, grease lightly and add 1/4 cup batter.
  • Tilt skillet to spread batter thinly in pan.
  • Brown lightly on both sides.
  • Fold in quarters. (Makes 12 crepes).
  • SAUCE:.
  • Combine 1/4 cup drained pineapple syrup, cornstarch, sugar, cinnamon, rind and butter in a hot chafing dish or saucepan.
  • Stir-cook until sauce is thickened and clear.
  • Add pineapple.
  • Place warm crepes around edge of hot chafing dish.
  • To flame, pour 3 tbsp warm brandy (heated in small saucepan) over sauce and ignite.
  • Serve immediately.
