FIRE ROASTED SALSA



Fire Roasted Salsa image

I go through a lot of the potential variables you'll face in the headnotes above in terms of ingredients and cooking method. I prefer to make this salsa over a charcoal grill, but I'll offer other ways below.

Number Of Ingredients 7

4 to 6 plum tomatoes, cut in half
1 or 2 white onions, cut in quarters
3 or 4 garlic cloves, (unpeeled)
1 to 4 serrano or jalapeno chiles ((See note below))
1 teaspoon salt
1 teaspoon Mexican oregano ((optional))
3 tablespoons chopped cilantro, pipicha, etc.

Steps:

  • If you are grilling, get your grates hot and scrape them clean. Place your onions and tomatoes cut side down on the grill. Place the chiles and garlic cloves on the grill, too. If you are broiling, arrange everything on a baking sheet, cut side up.
  • Let the onions and tomatoes grill a solid 5 minutes before trying to move them. You want significant blackening. Turn the garlic cloves as the peel blackens, and rotate the chiles so their skins blacken. Remove the garlic when several sides of the cloves have some char, when the skins of the chiles are well blackened, when both cut sides of the onion quarters are charred, and when the cut face of the tomatoes are well blackened. You will want to use a thin metal spatula to do this. If you are broiling, simply wait until you get good char on most of the vegetables.
  • Put the chiles into a plastic bag to steam. Chop the onion roughly. Peel the garlic and if the cloves are large, chop into a few pieces. Remove the skins from the tomatoes. After 10 minutes or so, peel the chiles with the back of a butter knife, then open them up and scrape away their seeds. Chop them roughly.
  • If you are grinding your salsa in a molcajete, add the salt, oregano and garlic and pound to a paste. Add the onion bit by bit, grinding and pounding all the way. Next comes the chiles, then the tomatoes. Finally, grind in the chopped herbs into the salsa. If you are not using a molcajete, simply put everything into a food processor and blitz it a few times. You want this salsa to have some texture. Add salt if you need it, and you are good to go.

It has taken me years to perfect this recipe. Los Cucos is my favorite TexMex restaurant in Houston, and I used to eat there every 2 weeks, just so I would order a pint of red salsa to go to take home with me. I was addicted to the stuff, it's the best salsa in the world. I finally mastered my own version, which tastes nearly identical to Los Cucos's red salsa.

cooking spray
5 large Roma tomatoes, halved lengthwise
¼ large white onion
1 jalapeno pepper, stem removed
⅓ cup chopped fresh cilantro
1 lime, juiced
1 ½ teaspoons garlic salt, or to taste

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler to high.
  • Spray a 9x13-inch glass casserole dish with cooking spray. Arrange tomatoes in the prepared dish with cut sides down. Add onion and jalapeno.
  • Broil until tomato skins are blackened and blistered, 10 to 15 minutes. Remove onion and jalapeno halfway through cooking time, once skins are slightly softened.
  • Combine broiled vegetables in a blender; add cilantro, lime juice, and 1 teaspoon garlic salt. Pulse until smooth. Taste and season with remaining garlic salt as desired.

1/2 cup packed fresh cilantro (leaves and thin stems only)
One 15-ounce can fire-roasted diced tomatoes
2 cloves garlic
1 jalapeno, seeded and chopped
1/2 small red onion, chopped
Juice of 1 lime (about 2 tablespoons)
Kosher salt

Steps:

  • In this order, put the cilantro, tomatoes, garlic, jalapeno, onion, lime juice and 1 1/2 teaspoons salt in a blender. Pulse until broken down but still chunky, scraping the inside of the carafe as necessary.

7 roma tomatoes, halved and cored, or more to taste
2 Anaheim chile peppers, halved lengthwise and seeded
2 jalapeno peppers
1 poblano chile pepper, halved lengthwise and seeded
2 onions, quartered
2 garlic cloves, peeled
1 lime, juiced
2 tablespoons chopped fresh cilantro, or more to taste
2 tablespoons cider vinegar, or more to taste
¾ teaspoon dried oregano, or more to taste
¾ teaspoon ground cumin, or more to taste
¾ teaspoon kosher salt, or more to taste
¾ teaspoon ground black pepper, or more to taste
½ teaspoon celery salt, or more to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a roasting pan or baking sheet with aluminum foil and coat with cooking spray.
  • Arrange tomatoes, cut-side down, in the roasting pan; add Anaheim chile peppers, jalapeno peppers, and poblano peppers, all skin-side up. Add onions and garlic to roasting pan. Spray the vegetable mixture with cooking spray.
  • Roast in the preheated oven until tomato and chile pepper skins are blistered and charred, 40 to 45 minutes. Remove from oven and cool for 10 to 15 minutes, keeping skins on tomatoes and chile peppers.
  • Blend tomato-chile pepper mixture, lime juice, cilantro, cider vinegar, oregano, cumin, kosher salt, black pepper, and celery salt in a food processor using quick pulses until desired consistency is reached. Refrigerate salsa in an air-tight container.

⅓ cup chopped red onion

4 ears corn, husk and silk removed

Steps:

  • Combine tomatoes, onion, cilantro, lime juice, and cumin in a large bowl.
  • Preheat an outdoor grill to medium heat and lightly oil the grate.
  • Coat corn and jalapeno peppers with olive oil.
  • Place corn and jalapenos on the preheated grill and cook, turning every 3 minutes, until corn is charred, about 15 minutes total. Transfer to a cutting board and let cool 5 minutes.
  • Dice jalapenos and cut corn kernels from the cob. Add jalapenos and corn kernels to the bowl of tomato-onion mixture; stir until well combined. Season with salt and pepper.

10 -12 roma tomatoes, stem removed, left whole
1 large onion, peeled and sliced in half
4 jalapenos, left whole
4 serrano peppers, left whole
1 tablespoon ground cumin
4 garlic cloves
1 tablespoon salt, to taste
1 tablespoon lime juice, to taste

Steps:

  • Fire up the grill. Make it really hot in the middle, medium hot on the sides.
  • The jalapenos and serranos are a good starting point, but are just suggestions. I like to use a variety of peppers, including poblanos, mexibelles etc. Just remember, that the level of heat comes strictly from the peppers. Either way, you are going to want 8 or more peppers. Make sure to leave the stems on.
  • Place the tomatoes in the center, over the hottest part of the grill. Place the peppers and onion over the medium hot part.
  • Roast on the grill for 15 minutes The tomato skin will get black. That is fine. Don't move them. Turn the peppers and onion half way through. The peppers should blacken as well, but they cook faster than the tomatoes, so keep an eye on them. If the peppers get black and soft before the 15 mins is up, take them off.
  • Turn the tomatoes at 15 minutes Cook the other side for 15 mins as well. Remove the peppers as long as they are soft and place them in a brown paper bag. Keep cooking the onion, turning every 7 mins or so, until soft and caramelized, usually as long as the tomatoes.
  • Remove the tomatoes from the grill, pulling off any of the skin that stuck to the grill. Remove the onion as well.
  • Place all of the tomatoes in a large blender with the onion. Remove the peppers from the brown paper bag. Using gloves as necessary, peel the peppers and pull the stems off. I leave the seeds in, but you can try and remove them if you prefer a milder salsa. Place the peppers into the blender.
  • Add the remaining ingredients and blend until puree. Taste and adjust the seasoning as needed. If salsa is too thick, you can thin with water to required consistency.
