FLAKY CHEDDAR CHIVE BISCUITS



Flaky Cheddar Chive Biscuits image

A delicious, flaky biscuit flavoured with herbs and melted cheddar.

Number Of Ingredients 10

2.5 Cups Flour (All purpose)
1 Tbsp Baking powder
1/4 tsp Baking soda
1 tsp Salt
1/2 Cup Butter (frozen)
1 Cup Cheddar cheese (grated)
2 Tbsp Fresh chives (chopped)
1 Cup Milk
2 tsp Lemon juice
1 large Egg (beaten)

Steps:

  • Pre-heat oven to 375 degrees
  • Combine your milk and lemon juice and set aside.
  • In a large bowl, mix flour, baking powder, baking soda, and salt.
  • Next Grate the frozen butter into the dry ingredients and then stir gently to combine.
  • Add the grated cheese and chives and stir to combine.
  • Add the beaten egg to the milk and then pour into the dry ingredients. Stir gently just until mixture comes together. The dough will feel a bit wet and sticky.
  • Turn out onto a generously floured counter top, or a large piece of parchment paper. Flour the top of the dough then press with your hands until dough is about 1/2 inch thick. Next fold the dough in half and press again to 1/2 inch thick. Repeat one more time.
  • With a biscuit or cookie cutter, cut dough into rounds pressing straight down. Place on parchment lined baking sheet leaving about 1/4 inch space between biscuits.
  • Place into oven and bake for 20-25 minutes until biscuits are golden.
  • Serve and enjoy!

2 teaspoons sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cold butter, cubed
1 cup shredded cheddar cheese
3 tablespoons minced fresh chives
1 cup buttermilk

Steps:

  • Preheat oven to 425°. In a large bowl, whisk the first five ingredients. Cut in butter until mixture resembles coarse crumbs; stir in cheese and chives. Add buttermilk; stir just until moistened. Turn onto a lightly floured surface; knead gently 8-10 times., Pat or roll dough to 3/4-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on a greased baking sheet. Bake 10-12 minutes or until golden brown. Serve warm.

Chives are the first herb to come up in the spring, and their delicate flavor pairs well with these biscuits. A little bit of Parmesan cheese makes the flavor of Cheddar cheese really pop; try it next time you make mac and cheese!

¼ cup butter, softened
3 tablespoons chopped fresh chives
¼ teaspoon cayenne pepper
2 cups flour
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
6 tablespoons cold butter
1 ¼ cups shredded extra-sharp Cheddar cheese
¼ cup grated Parmesan cheese
1 cup buttermilk
1 egg, lightly beaten

Steps:

  • Beat softened butter, chives, and cayenne pepper together in a bowl until well-combined and smooth.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Stir flour, baking powder, baking soda, and salt together in a bowl. Cut cold butter into flour mixture with a pastry blender or two knives until mixture resembles oatmeal. Add Cheddar cheese and Parmesan cheese; toss to coat. Stir buttermilk into flour mixture until dough is just-moistened.
  • Turn dough out onto a floured work surface and gently knead until dough comes together, about 6 to 8 times. Roll dough into a 9-inch square (1/2 inch thick) with a floured rolling pin. Cut dough lengthwise into 4 strips and crosswise into 6 strips. Place biscuits on a baking sheet and brush tops with beaten egg.
  • Bake biscuits in the preheated oven until golden, about 15 minutes. Transfer to a rack and cool until warm, at least 15 minutes. Serve with chive butter.

Use a pastry blender, 2 knives or fingertips to mix in butter until mixture is crumbly, with a few pea-size pieces of butter or cheese remaining. Add milk and gently mix to moisten, no more than 10 seconds. Dough will be rough; do not overwork.
  • Turn dough out onto a large floured work surface and knead gently into a ball, no more than 6 to 8 quick turns. Working quickly, roll dough out into a 1/2-inch-thick circle.
