Pancakes for two. A small batch of pancakes for one or two people. Perfect, buttermilk pancakes recipe that makes just 6 pancakes.

1 cup all-purpose flour
2 teaspoons baking powder
2 tablespoons granulated sugar
1 cup buttermilk
1 large egg, beaten
2 tablespoons unsalted butter, melted, plus extra for the skillet
1/2 teaspoon vanilla extract
maple syrup, for serving
salted butter, for serving
fresh blueberries, for serving

Steps:

  • In a small bowl, whisk together the flour, baking powder, and sugar. In a large glass measuring cup, whisk together the buttermilk, egg, 2 tablespoons of the melted butter, and the vanilla. Stir the wet ingredients into the dry ingredients. Stir just until no dry pockets of flour remain, but don't worry about lumps in your batter. Over-mixing will prevent tender, fluffy pancakes. Meanwhile, melt the extra butter in your skillet or griddle over medium heat. Using a 1/4-cup measure, scoop out batter onto the preheated the skillet. Cook until bubbles appear across the entire surface, and then flip to cook the second side until golden brown. Repeat with all remaining batter. Serve with maple syrup, extra butter and fresh blueberries.

1-1/4 cups all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, lightly beaten
1-1/4 cups buttermilk
2 tablespoons canola oil
1 cup fresh or frozen blueberries, optional

Steps:

  • In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Combine egg, buttermilk and oil; stir into dry ingredients just until blended. If desired, fold in blueberries. , Preheat griddle over medium heat. Lightly grease griddle. Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown.

Steps:

  • Mash ripe banana well, add in whisk eggs.
  • Warm non stick or cast iron pan to medium, spray with oil. Cook silver dollar size pancakes 30 seconds on each side and serve.
  • (We use a small amount of maple syrup or agave on our pancakes).

I found this recipe on Obesity Help. The recipe was posted by Flab2fabdiva. I have not tried this recipe, but I'm posting it for safe keeping. I plan to add a scoop of protein powder to the batter. I may add one egg to bump up the protein.

1/2 cup fiber one complete pancake mix (mix with water as directed)
pumpkin pie spice (sprinkle some in the batter)
1 small banana, sliced
sugar-free syrup
2 tablespoons light whipped topping
sliced almonds

Steps:

  • Mix pancake mix and sprinkle some pumpkin pie spice in the batter. Add 1/2 of the sliced banana to the batter.
  • Cook as directed (you can make one big pancake or 2 small ones).
  • Top with sugar free syrup, the rest of the sliced banana, Whipped Topping and some sliced almonds.
