Peanut Butter Bars make a quick and delicious treat. This no-bake peanut butter bars recipe is ready in less than 30 minutes and makes between 20 and 36 bars.

1 cup butter (melted )
2 cups graham cracker crumbs (2 sleeves ground to a fine crumb)
2 cups confectioners' sugar
1 1/2 cups peanut butter
1/4 cup peanut butter
2 cups chocolate chips

Steps:

  • Combine first four ingredients in a large mixing bowl until well-combined and smooth. Spread evenly into a 9x13 baking dish.
  • Combine ingredients for the peanut butter bar chocolate topping in a medium glass bowl. Melt in the microwave for 1 minute at a time on 80% power. Remove from the microwave and stir until smooth. Spread on top of the peanut butter bar base and place in the freezer for 15 minutes.
  • Remove from the freezer and cut into individual bars. The size will depend on the number of bars you'd like to serve (20-36 bars)

½ cup butter
2 tablespoons confectioners' sugar
1 ¼ cups all-purpose flour
1 ½ cups packed brown sugar
¼ cup butter, melted
2 eggs, beaten
1 tablespoon distilled white vinegar
1 teaspoon vanilla extract
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Base: In a small mixer bowl, cream together 1/2 cup butter or margarine and confectioners' sugar. Blend in flour. Pat into 9X9 inch square pan. Bake in preheated oven for 5 minutes.
  • To Make Filling: In a large bowl combine brown sugar, melted butter or margarine, beaten eggs, vinegar, vanilla, and raisins. Pour over base and bake in preheated oven for 35 to 40 minutes, until set.

Perfectly thick, soft and chewy peanut butter bars with a peanut butter and chocolate glaze, and oats baked in the chewy cookie bars.

3/4 cup butter
1/2 cup granulated sugar
1 cup light brown sugar
2 large eggs
1/2 teaspoon vanilla extract
1/2 cup creamy peanut butter ((plus more for spreading over baked bars))
2 1/2 teaspoons baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
2 cups old-fashioned rolled oats
1/4 cup butter
1 Tablespoon unsweetened cocoa powder
1 1/2 Tablespoons milk
1 1/4 cups powdered sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. In a large mixing bowl, cream together the butter, sugar and brown sugar.
  • Add the eggs, vanilla, and peanut butter and mix well.
  • In a separate bowl mix together the dry ingredients. Add dry ingredients to creamy mixture.
  • Press firmly into a greased 9x13'' pan. Bake at 350 degrees for 17-21 minutes. Do not over-bake! They will look just barely set in the center, and they will harden as they cool. Allow to cool completely.
  • Once cooled, spread a thin layer of peanut butter over the bars.

I got this recipe from a very dear friend, a lady who prepared meals for their farm hands every day. Quick and easy desserts were a necessity. This is also very good with a lemon cake mix.

1 (18 ounce) box yellow cake mix
3 eggs
1 cup butter, melted
8 ounces cream cheese, softened
16 ounces powdered sugar

Steps:

  • Preheat oven to 350 degrees. Grease a 9 x 13 pan.
  • Mix together cake mix, 1 egg and butter. Mixture should be stiff like a dough.
  • Press into greased pan.
  • Mix together cream cheese, 2 eggs and powdered sugar and poured over the dough.
  • Bake at 350 degrees for 40 - 45 minutes.

1 premade 9" chocolate cookie pie crust
1 (8 ounce) package cream cheese, softened
1 cup creamy peanut butter
1 cup powdered sugar
1 cup heavy whipping cream
1 tsp vanilla
1-2 cups Cool Whip
10 normal sized Reese's Peanut Butter Cups

Steps:

  • Combine the softened cream cheese and the creamy peanut butter in a medium-sized mixing bowl. Use a hand mixer to mix until well blended.
  • Add the powdered sugar and mix again until combined.
  • Next, add the heavy cream and vanilla. Mix well.
  • Chop 5 Reese's Peanut Butter Cups and fold them into the peanut butter mixture.
  • Pour mixture into the pre-made pie crust.
  • Spread an even layer of Cool Whip over the pie and then decorate with remaining Reese's Peanut Butter Cups.
  • Refrigerate for 12-24 hours before serving.

36 crackers, Christie Toppables
1 cup butter
1 cup brown sugar
1/8 cup slivered almonds
1 teaspoon vanilla
1/4 cup chocolate chips

Steps:

  • Preheat oven to 350.
  • Line a med. cookie sheet with foil, then spray the foil with cooking spray.
  • Lay the crackers flat on the foil, covering it as completely as you can. You may substitute with Keebler crackers, or even soda crackers. It doesn't matter if they fit tightly together.
  • Sprinkle the slivered almonds over top.
  • Melt the butter in a saucepan, then add the brown sugar.
  • Bring to a boil, the cook over med. heat for 5 min's.
  • Remove from heat, add 1 teaspoons vanilla, then pour the mixture over the crackers in the pan.
  • Bake at 350 for 5 min's.
  • Remove from oven and sprinkle with choc. chips. This is optional, as the bars are delicious without the chocolate.
  • Cool, and slice.

  • Line 8x8-inch pan with parchment paper. The paper should overhang the edges of the pan, this makes it easy to remove the bars from the pan.
  • In bowl of stand mixer fitted with paddle attachment, cream together peanut butter and cream cheese on medium speed. Stop mixer. Scrape down bottom and sides of the bowl.
  • Press dough evenly into prepared baking pan. Spread melted chocolate evenly over the top of the pans. Press mini-pretzels into the melted chocolate. If the pretzels aren't coated with a lot of salt (gluten-free pretzels are usually light on the salt), sprinkle a little kosher salt evenly over the bars.
  • Chill bars for 45 minutes. Remove the bars from the refrigerator and allow to come to room temperature, about 45 minutes. Lift bars out of the pan using the parchment paper.
  • Note: Cutting the bars while cold causes the chocolate to break apart. It's important to allow them to come to room temperate before cutting.
