14.5 oz seasoned black beans, drained
14.5 oz kidney beans, drained
14.5 oz diced tomatoes
7 oz green chilies
14.4 oz frozen white corn
8 oz cream cheese
1 cup shredded Mexican cheese blend
2 tbsp sour cream
2 tbsp taco seasoning
Fresh cilantro for garnish

Steps:

  • In a lightly greased cast iron skillet on medium, heat black beans, kidney beans, tomatoes, green chilies, and white corn for about 5 minutes, stirring occasionally.
  • When bubbles start to form, stir in cream cheese, Mexican cheese, sour cream and taco seasoning. Heat and stir for another 5 minutes or until bubbles appear.
  • Remove from heat and serve hot by placing the cast iron skillet on a trivet or oven-safe hot pad. Add toppings and serve with a large bowl of tortilla chips for dipping.

1-1/2 pounds ground beef
1 envelope taco seasoning
3/4 cup water
1 can (16 ounces) refried beans
1/2 cup salsa
6 flour tortillas (6 inches)
2 cups frozen corn, thawed
2 cups shredded cheddar cheese
Optional: Shredded lettuce, chopped tomatoes, sliced ripe olives and sour cream

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. , Meanwhile, in a microwave-safe bowl, combine beans and salsa. Cover and microwave 1-2 minutes or until spreadable., Place three tortillas in a greased round 2-1/2-qt. baking dish. Layer with half the beef, bean mixture, corn and cheese; repeat layers. , Bake, uncovered, until cheese is melted, 40-45 minutes. Let stand 5 minutes. If desired, serve with lettuce, tomatoes, olives and sour cream.

2 cups cooked brown rice (or quinoa or other grain of choice-about 2/3 cup uncooked)
1 tablespoon olive oil
1 yellow onion (chopped)
1 green bell pepper (chopped)
1 red bell pepper (chopped)
1 pound lean ground beef (or swap ground chicken or ground turkey)
2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
2 cloves minced garlic (about 2 teaspoons)
1 cup plain nonfat Greek yogurt
1 can reduced fat refried black beans (15 ounces)
3/4 cup freshly grated sharp cheddar cheese (divided)
3/4 cup freshly grated mozzarella cheese (divided)
1 10-ounce tomatoes with green chiles (such as Rotel)
Fresh cilantro (for serving)
Chopped green onions (for serving)

Steps:

  • Be sure to cook your rice if you haven't already (if you are just reading this and just now realized you don't have any cooked rice and don't want to wait, consider switching to quinoa, which cooks much more quickly than brown rice. Instant brown rice also works in a pinch).
  • Preheat the oven to 350 degrees F. Coat a large casserole dish (9x13 inch or similar) with nonstick spray and set aside.
  • In a Dutch oven or large, deep skillet, heat the olive oil over medium high. Add the onion, green bell pepper, and red bell pepper. Sauté until slightly softened, about 5 minutes.
  • Add the beef, chili powder, cumin, salt, black pepper, and cayenne pepper. Continue to sauté until the beef is cooked through and no longer pink, about 4 to 5 minutes. Add the garlic and cook just until fragrant, about 1 additional minute.
  • Remove from the heat. Stir in the rice and Greek yogurt until evenly combined. Taste and adjust seasoning as desired.
  • Assemble the casserole: Spread the beans into an even layer in the prepared baking dish.
  • Sprinkle 1/4 cup cheddar cheese and 1/4 cup mozzarella cheese over the beans.
  • Scatter the tomatoes with green chilis over the top.
  • Spoon the rice and ground beef mixture on top of the tomatoes, spreading it into an even layer.
  • Top with remaining 1/2 cup cheddar and 1/2 cupmozzarella.
  • Bake the casserole, uncovered, until the cheese is melted and the casserole is hot, about 15 minutes.
  • Turn the oven to broil, then continue cooking until the cheese is lightly browned, about 3 to 4 additional minutes, watching carefully so that the cheese does not burn.
  • Let rest 5 minutes, sprinkle with chopped cilantro and green onions, and serve.

  • Preheat oven to 375 degrees F (190 degrees C).

Steps:

1 large tomato, seeded and chopped

Steps:

  • Spread refried beans in the bottom of a (1-quart) shallow edged serving dish (you can use a transparent dish if you'd like). Sprinkle the seasoning packet over the beans. 2 1/4 teaspoons cumin
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon salt
15 oz can fat-free refried beans (Trader Joe's)
1 1/4 cups jarred medium salsa
4 oz can diced green chilies
1 1/2 cups reduced fat shredded 4 cheese Mexican blend (Sargento)
1 medium diced tomatoes (seeded)
4 ounces from 1 small haas avocado, diced
2 tablespoons crumbled cotija cheese
1/4 cup sliced scallions
1/4 cup chopped cilantro
baked tortilla chips (to serve)

Steps:

  • Preheat the oven to 350ºF. Spray a 9 x 9-inch baking dish with cooking spray.
  • Heat a large skillet over medium-high heat and spray with oil.
  • Add ground turkey, cumin, smoked paprika, garlic powder, chili powder and salt and cook, stirring until cooked through and browned, about 7-9 minutes.
  • Add the refried beans and mix well. Spread evenly over the bottom of the baking dish.
  • Next, pour the salsa and green chilies on top.

1 onion , chopped
1 tbsp olive oil
1 tsp soft brown sugar
1 tsp wine vinegar
1 tsp Cajun seasoning
400g tin mixed beans , rinsed and drained
400g tin chopped tomatoes , with garlic
handful grated cheddar
100g tortilla chips
serve with chopped avocado (optional)

Steps:

  • Fry the chopped onion in olive oil until soft. Add soft brown sugar, wine vinegar and Cajun seasoning. Cook for 1 min then add the mixed beans and chopped tomatoes with garlic. Simmer for 10-15 mins until the sauce has thickened then season.
  • Scatter handful grated cheddar onto tortilla chips. Microwave on High for 1 min until cheese has melted. Serve alongside the dip (top with some chopped avocado if you like). Make ahead and reheat dip before guests arrive.

1 medium red onion, diced
8 cloves of garlic, minced
1 red bell pepper, diced
1 cup frozen corn kernels
8 oz enchilada sauce
14 oz diced fire roasted tomatoes
juice of 1 lime
2 tablespoons cream cheese
4 cups COOKED white rice
1 can black beans, drained
1 teaspoon chili powder
3 teaspoons cumin
1/4 teaspoon cayenne
1 teaspoon salt
1/2 cup mexican cheese + more for topping
sour cream, for serving
tortilla chips, for serving

Steps:

  • Cook rice according to instructions (I used a rice cooker) - the amount of uncooked rice varies based on your brand. You will need 4 cups of cooked rice to add to the recipe
  • While rice is cooking, heat a large heavy bottomed pan over medium high heat (I used a dutch oven)
  • Add 1 tablespoon of olive oil, and sauté the red onion, garlic, and bell pepper for 8-12 minutes, or until onion becomes translucent
  • Add the corn and fire roasted tomatoes and stir an additional 3 minutes
  • Add drained black beans, 4 cups of cooked rice, lime juice, enchilada sauce, chili powder, cumin, cayenne, cream cheese, and 1/2 cup of mexican cheese
  • Add salt to taste (I used a teaspoon)
  • Serve topped with additional mexican cheese, sour cream, and tortilla chips
  • Enjoy!

15 oz. black beans (drained and rinsed)
2 cups chopped cooked chicken ((rotisserie chicken works well))
1 teaspoon ground cumin
21 oz. cream of chicken soup (2 (10.5 oz) cans)
1 10 oz. can Rotel tomatoes (undrained)
2 cups shredded jack cheese
2 cups shredded medium cheddar cheese
1 tomato (diced)
1 bunch cilantro (rinsed and chopped)
Jalapeños (optional)

Steps:

  • Preheat oven to 350 F and grease a 13x9 casserole dish with non-stick cooking spray.
  • Crush tortilla chips lightly and sprinkle approximately 1 cup across the bottom of the baking dish.
  • Layer diced chicken and black beans over the crushed chips.
  • Stir 1 teaspoon of cumin into the cream of chicken soup. Spread the soup mixture over the chicken and beans, using a spatula to gently spread it evenly over the entire top. Add canned tomatoes over the soup layer.
  • Sprinkle cheese evenly over the tomato layer and top with remaining crushed chips.
  • Bake for 25-30 minutes or until casserole is hot and bubbly and the cheese is fully melted.
  • Garnish casserole with cilantro and chopped tomatoes.
  • Serve immediately with a slice or two of fresh jalapeño.
