I regularly mix up my own spice blends. I have recipes of Indian and Mexican spice blends, too. But my favorite is this Chinese five spice version with its strong anise flavor. It's so convenient to make this mix from pantry staples I have on hand. -Lydia Scott, Englehart, Ontario

Yield about 1/2 cup.

Number Of Ingredients 5

2 tablespoons aniseed
2 tablespoons fennel seed
2 tablespoons ground cinnamon
2 tablespoons whole cloves
2 tablespoons whole peppercorns

Steps:

  • In a spice grinder or with a mortar and pestle, combine all ingredients (in batches if necessary); grind until mixture becomes a fine powder. Store in an airtight container for up to 6 months.

FIVE-SPICE CANDIED PECANS

Yield Makes about 2 cups

Number Of Ingredients 5

1/4 cup water
1/4 cup sugar
2 teaspoons five-spice powder
1 teaspoon salt
2 cups pecan halves

Steps:

  • Preheat oven to 375°F. Lightly oil a shallow baking pan and a 12-inch square of foil, keeping pan and foil separate.
  • In a small heavy saucepan bring water to a boil with sugar, five-spice powder, and salt. Stir in pecans and simmer mixture, stirring, 1 minute. Immediately pour mixture evenly into pan and with a metal spatula spread pecans in one layer. Bake mixture in middle of oven 8 minutes, or until pecans turn mahogany-colored and most of liquid is evaporated. Immediately transfer pecans with metal spatula to foil, keeping them in one layer, and cool completely. (Pecans will continue to crisp as they cool.) Break up any pecans that have stuck together. (Candied pecans keep, in layers separated by wax paper, in an airtight container, frozen, 2 weeks.)

2½ (4"-long) cassia or cinnamon sticks
20 whole star anise
1 Tbsp. plus 1 tsp. whole cloves
20 slices dried sand ginger (optional)
2 Tbsp. plus 1½ tsp. Sichuan peppercorns
2½ tsp. sliced dried licorice root or fennel seeds
1 tsp. black peppercorns
1 tsp. white peppercorns (optional)
Special Equipment:
A spice mill or coffee grinder

Steps:

  • Toast cassia, star anise, cloves, sand ginger (if using), Sichuan peppercorns, licorice root, black peppercorns, and white peppercorns (if using) in a small skillet over medium, tossing once, until fragrant, about 3 minutes. Let cool; grind to a powder in spice mill or coffee grinder.
  • Do Ahead: Five-Spice Powder can be made 1 month ahead. Store airtight at room temperature.

CHINESE FIVE-SPICE STEAK WITH ORANGES AND SESAME BROCCOLINI

The secret to the deep orange flavor in this simple weeknight dinner is to sear halved oranges next to the steak as it cooks, and then squeeze the caramelized juice all over your plate before digging in.

3 small oranges (about 1 lb.)
1 1/2 tsp. Chinese five-spice powder
1 tsp. light brown sugar
2 1/4 tsp. kosher salt, divided
1 hanger steak (about 1 1/4 lb.), cut in half lengthwise, center gristle removed
2 Tbsp. vegetable oil
3 bunches broccolini (about 1 1/2 lb.), trimmed, halved lengthwise if large
2 Tbsp. toasted sesame oil
1/2 tsp. crushed red pepper flakes
1 tsp. toasted sesame seeds, plus more for serving
3 scallions, thinly sliced
Flaky sea salt
Steamed rice and hot sauce (for serving; optional)

Steps:

  • Finely grate 2 tsp. orange zest from 1 orange into a small bowl. Cut all oranges in half; set aside.
  • Add five-spice powder, brown sugar, and 2 tsp. kosher salt to bowl with zest and stir to combine. Rub steak all over with spice mixture.
  • Heat vegetable oil in a large heavy skillet (preferably cast iron) over high. Cook steak, turning often, until browned on all sides and an instant-read thermometer inserted into the center registers 130˚F for medium-rare, 15-20 minutes total. After steak has cooked for about 5 minutes, nestle orange halves cut side down around steak and cook until well browned, about 5 minutes. Transfer oranges to a plate. Transfer steak to a cutting board and let rest 10 minutes before slicing.
  • Arrange broccolini in an even layer in same skillet and heat over high. Cook, undisturbed, until well charred, about 3 minutes. Toss and continue to cook until tender and slightly charred all over, about 3 minutes more. Transfer to a large bowl. Squeeze in juice from 2 orange halves over. Add sesame oil, red pepper flakes, 1 tsp. sesame seeds, and remaining 1/4 tsp. kosher salt and toss to coat.
  • Transfer steak to a platter. Arrange broccolini mixture alongside. Top with scallions, sea salt, and remaining sesame seeds. Serve with charred orange halves to squeeze over, rice, and hot sauce alongside, if desired.

4 teaspoons vegetable oil
2 tablespoons plus 1 teaspoon dark brown sugar
4 teaspoons water
1 1/2 teaspoons five-spice powder
1/4 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
2 cups pecan halves
1/4 teaspoon kosher salt

Steps:

  • Heat oven to 350°. In a medium saucepan, warm 4 teaspoons vegetable oil over medium-low heat. Add 2 tablespoons plus 1 teaspoon dark brown sugar, 4 teaspoons water, 1 1/2 teaspoons five-spice powder, 1/4 teaspoon ground cumin and 1/4 teaspoon freshly ground black pepper; stir until sugar dissolves and mixture bubbles. Add 2 cups pecan halves; cook, stirring, until pecans are thickly coated, about 3 minutes. Spread evenly on a baking sheet lined with parchment paper; sprinkle with 1/4 teaspoon kosher salt. Bake until fragrant and crisp, 8 to 10 minutes. Cool completely.

Number Of Ingredients 8

1/2 cup all-purpose flour
1/3 cup confectioners sugar
1 1/4 teaspoons Chinese five-spice powder
1/8 teaspoon salt
1/2 cup whole milk
1 large egg
2 tablespoons unsalted butter, melted, plus additional for buttering pizzelle maker
an electric pizzelle maker; a 5 1/2-inch cone-shaped pizzelle mold

Steps:

  • Whisk together all ingredients except additional butter in a bowl until smooth. Chill batter, covered, 1 hour.
  • Heat pizzelle maker and lightly brush top and bottom of pizzelle molds with butter. Pour 1 tablespoon batter into bottom of each pizzelle mold. Close cover and cook batter until golden, about 2 minutes.
  • Working quickly (pizzelle are pliable only while hot), peel off 1 pizzelle and wrap around cone mold, overlapping ends, and pinching tip closed. Hold cone in place until it hardens, about 5 seconds, then slip off mold and repeat with remaining pizzelle. Make more pizzelle and cones in same manner.
