Categories     main-dish

Time 1h50m

Yield 3 quarts chili

Number Of Ingredients 21

1 pound ground chuck
1 cup diced yellow onion
1 cup diced green bell pepper
3 cloves garlic, minced
1 1/2 tablespoons chili powder, preferably Mexican style
2 teaspoons salt
1 1/2 teaspoons ground cumin
1 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
1/8 teaspoon ground coriander
1/8 teaspoon ground cinnamon
2 bay leaves
1 (28-ounce) can whole peeled tomatoes, broken up with your hands
3 cups beef stock or canned, low-sodium beef broth
1 1/2 cups great northern beans
1 1/2 cups cooked and drained pinto beans
1 1/2 cups cooked and drained kidney beans
1 1/2 cups cooked and drained black beans
1 1/2 cups cooked and drained navy beans
2 tablespoons chopped cilantro leaves
Sour cream, grated Cheddar and chopped green onions, for garnishing, optional

Steps:

  • In a cast iron pot or Dutch oven over medium-high heat, cook the meat until well browned, stirring occasionally, 4 to 6 minutes. Add the onions, bell pepper, garlic, chili powder, salt, cumin, black pepper, cayenne pepper, coriander, and cinnamon, and cook until vegetables are soft, 4 to 6 minutes. Add the bay leaves, tomatoes, and stock; bring the mixture to a simmer, partially cover, and cook for about 40 minutes, stirring occasionally. Add all of the beans, stir to combine, and continue to cook another 20 to 30 minutes, or until the flavors have come together and the chili has a nice, thick consistency. Add the cilantro, taste and adjust the seasoning, if necessary.
  • Serve hot, garnished with sour cream, grated cheese, and chopped green onions, if desired.

AWARD WINNING CHILI

Award Winning Chili image

This delicious chili took 2nd place at our local chili cook-off! Bet you can't eat just one bowl. If it is too thick, add water 1/4 cup at a time until you reach desired consistency. Even better tasting the second day!

FIVE CAN CHILI

Five Can Chili image

When we lived in Texas I made chili from scratch. I soaked the beans and pretty much took hours before the chili was ready for the table. Then one day I got really hungry for chili and wanted it NOW... Once I came up with my five can chili I haven't made it from "scratch" ever again... nobody can tell the difference!

Provided by Katrina Freed

Categories     Chili

Time 25m

Number Of Ingredients 12

1 lb ground beef, or ground turkey
1/2 c onion
15 oz tomatoes, canned and chopped, with liquid
15 oz tomato sauce, no-salt added
15 oz black beans, canned
15 oz great northern beans
15 oz kidney beans, canned (red or light red)
2 Tbsp chili powder
1 dash(es) red pepper
1 dash(es) cumin
3 pepperoncini peppers, chopped fine
1/2 green pepper chopped

Steps:

  • 1. Brown meat, green pepper and onions in stock pot or dutch oven
  • 2. Stir in tomatoes, sauce, and beans (For really thick chili you can use tomato paste instead of tomato sauce)
  • 3. Add chopped peppers and all the spices. Stir and cook over medium heat till chili is hot then serve with your choice of garnishes. We use shredded cheddar, pepperoncini, sour cream, green onion and saltine crackers. Oyster crackers are a favorite in my house

TRAVELIN' CHILI - FIVE CAN CHILI

Travelin' Chili - Five Can Chili image

A while back, my husband and I were going to an event where we'd be camping for several days without refrigeration. One of the nights we wanted chili, but didn't want to have to keep anything on ice. I came up with a very tasty concoction - extremely simple, a bit lazy, and delicious!

Provided by Julesong

Categories     One Dish Meal

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 11

1 (15 ounce) can chili without beans (such as Dennisons or Nalley)
1 (11 1/2 ounce) can condensed bean with bacon soup (Campbells)
1 (14 ounce) can black beans, drained (I use black soybeans)
1 (10 ounce) can Rotel Tomatoes, with juice
1 (4 ounce) can diced mild green chilies
1 1/2 tablespoons dried onion flakes
1 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon dried ancho chile powder
1/2 teaspoon chili powder, to taste
1/2 teaspoon beef bouillon granules

Steps:

  • Before going on your trip, mix together the spice mix and place it in a Ziploc bag.
  • When ready to cook the chili, mix all the canned items together and add a 3/4 soup-can full of water.
  • Add the spice mix and stir well.
  • Cover and let simmer for at least 30 minutes before serving with good, crusty bread.
  • If you have cheddar cheese, sprinkle some of it grated over the top!
  • Other options: add another can or two of beans (whatever sort you like, kidney, black eyed, etc -- I've used garbanzos, butter beans, runner beans, soldier beans, all sorts!), and another can of Rotel to stretch it for 10 to 15 people. And if you want more meat, put about a pound of cooked ground beef (or turkey, or buffalo, or pork, or whatever) in, too. If you want to do it in a crockpot, dump it in and put it on low for about 4 hours. Easy!

  • Begin by prepping the chipotles. Most of the heat in the peppers are housed in the seeds and ribs, so we strongly recommend scraping out all of the seeds before adding the peppers to the chili, especially if using the entire can. Using a fork, remove the desired number of peppers from the can. Reserve the adobo sauce. Slice them open, and then using the back of your knife, scrape out and discard the seeds & ribs. Roughly chop the peppers and set them aside.
  • In a large dutch oven, heat the olive oil over medium heat until shimmering. Add the onions and saute until they begin to soften and turn translucent. Add the drained kidney and black beans, tomatoes and their juices, chopped chipotles and the adobo sauce, beer, salt and spices. Stir to combine.
  • Cook the chili until thickened to your liking, about 20 minutes was perfect for us. Serve immediately with your choice of toppings (cheese, avocado, green onions, etc) and cornbread on the side!
