TILAPIA IN WINE AND WORCESTERSHIRE
I almost didn't try this recipe, I just couldn't get my head around fish and worcestershire. So glad I tried it..I found the original recipe on a card at the seafood counter at my grocery store years ago. I've added butter and adjust the amount up or down depending on number of filets being cooked. I adjust Tabasco carefully. !!

Steps:
- Lightly flour fish filets.
- Season with salt, pepper, paprika.
- Combine olive oil, butter, wine, worcestershire and hot sauce in non-stick skillet, heat on medium-hi.
- Add tilapia, cook approximately 4 min; turn and cook on 2nd side for additional 4 minute.
- Remove and place on serving plates; serve with lemon wedges.

This homemade Worcestershire Sauce is a lot like the commercially prepared version, with a taste that's well rounded and full of umami.

Steps:
- Pour boiling water over raisins in a small bowl and allow to stand 15 minutes until raisins are softened. Drain and discard water.
- Place raisins, molasses, tamarind paste, anchovies, onion, ginger, garlic and half the vinegar (1 cup) into a food processor. Process until smooth.
- Pour the pureed mixture into a saucepan and add the remaining ingredients (including remaining vinegar). Bring the whole mixture to a boil, then remove from heat.
- Pour the mixture into a 1 quart canning jar, seal with a plastic lid and store in a cool, dark place for at least 1 month (or longer for stronger flavors).
- After aging, pour the sauce through a fine mesh sieve before use.

- Bring a large pan to medium high heat. Add olive oil and melt butter when hot. If all the shrimp will fit into the pan without crowding than fry in one batch. If not, reduce olive oil and butter by half and cook shrimp in two batches. Cook shrimp for 2-3 minutes per side or until done. Try to get it crispy on the outside. Set aside on a plate.
- In the same pan, reduce heat to medium, and add the remaining butter and onions and cook ~ -3-4 minutes or until onions are translucent. Add garlic & rosemary sprig and cook 1-2 minutes or until fragrant. Stir in Worcestershire, lemon juice, and hot sauce. Bring to a boil and simmer ~ 3 minutes.
- Remove rosemary sprig and whisk in whipping cream. Add shrimp and any juices back to pan and simmer ~ 2-3 minutes or until shrimp are hot.
