2 tablespoons olive oil
½ cup diced white or yellow onion (or sub 1 large shallot)
8 ounces new potatoes (new crop yellow potatoes, red, yukon, any with thin skin) - cut into small dice (no bigger than ½ inch thick- the smaller you cut them, the faster they will cook)
1 ear of fresh corn- kernels sliced off ( or 1 1/2 cups frozen)
1 cup stock ( veggie, chicken or fish) or sub water- or use corn stock (see notes)
½ teaspoon kosher salt
Pepper to taste
⅛ cup fresh basil leaves - cut into ribbons or torn
Optional 2-3 tablespoons half and half
8 ounces fish- halibut, sea bass, wild Alaskan cod, haddock, salmon, black cod, shrimp, scallops
olive oil for searing
salt and pepper to taste

Steps:

  • Heat oil in a large skillet over medium heat. Add onion and sauté until fragrant about 3 minutes. Add potatoes and corn. Saute 2- 3 minutes, add water or stock, salt and pepper and bring to a simmer. Cover, turn the heat down to low and simmer 10 minutes, or until potatoes are fork-tender.
  • While the potatoes are simmering, sear the fish. Heat oil in another skillet. Season fish with salt and pepper and sear each side over medium-high heat. Lower heat and cook to your desired doneness. Set aside.
  • When the potatoes are fork-tender, uncover and cook off a little of the liquid. At this point, you could add a few tablespoons half and half or soy milk for a little extra creaminess (cook it for a minute or two to thicken) or simply leave it out.
  • Stir in half of the basil. Taste, adjust salt.
  • Right before serving, stir in the remaining basil, saving a little for the top. Dish up the sweet corn"chowder" and top with the seared fish and basil.

3 onions, peeled and left whole
3 whole cloves
4 large leeks, white and pale green parts cut into 2 1/2-inch pieces
4 carrots, peeled and halved crosswise
6 ribs celery, halved crosswise
1 head garlic, unpeeled and halved
4 pounds boned beef chuck roast
4 sprigs fresh parsley
4 sprigs fresh thyme
2 bay leaves
1 teaspoon kosher salt
1 teaspoon whole black peppercorns
12 cups beef stock
6 turnips, peeled and quartered
1 pound rutabagas, peeled and cut into eighths
4 parsnips, peeled and cut into 2-inch pieces
1 ½ pounds small potatoes, scrubbed
2 pounds smoked country sausage
salt and ground black pepper to taste

Steps:

  • Pierce each whole onion with a clove. Place onions, 2 leeks, 2 carrots, 3 celery ribs, and garlic in a large pot. Set roast on top of the vegetables. Wrap parsley, thyme, and bay leaves in a moistened piece of cheesecloth and tie into a bundle. Add the cheesecloth bundle, salt, and peppercorns to the pot.
  • Pour beef stock over the roast and vegetables. Bring to a boil. Reduce heat to low. Cover partially and simmer, skimming occasionally, until roast is very tender, about 2 1/2 hours.
  • Transfer roast to a large bowl and cover. Strain broth, discarding solids, and return it to the pot. Boil over high heat until reduced to 8 cups, about 45 minutes. Skim off the fat.
  • Stir remaining 2 leeks, 2 carrots, and 3 ribs celery into the reduced stock. Add turnips, rutabagas, and parsnips. Cover and simmer over low heat until vegetables are just tender, about 30 minutes. Add potatoes. Cover and simmer until potatoes are tender, about 40 minutes more. Add sausage; simmer until heated through, 5 to 10 minutes. Season the broth with salt and pepper.
  • Slice the roast across the grain into 6 to 8 slices. Ladle the broth into shallow bowls. Plate roast, sausage, and vegetables on a separate platter.

This is one of my favorite ways to cook fish. Add a lovely sauce it is so moist and tasty. I like to poach Salmon, cod and sea bass. There are many sauce recipes here on Zaar or serve it plain with a dab of butter. I like to use a lightly greased rack so the fish is just above the water, espcially if it is a skinless filet

1 tablespoon fresh parsley, chopped
salt and pepper
1/2 teaspoon dried dill weed (or 1 tsp fresh)
1 onion, chopped
4 lemon slices

Steps:

  • In a a large skillet (fitted with a lid) pour in 1 inch (25mm) of water, add all ingredients except fish& bring to a boil.
  • Place fish (skin side down if the filet has skin on it) in a single layer, cover and simmer until the fish flakes easily apprx 5 minutes.

1 pound new potatoes, peeled, washed, and cut into wedges
An oven-to-table baking dish that can accommodate both the fish and the potatoes in one layer
4 tablespoons extra virgin olive oil
4 or 5 fresh rosemary sprigs
4 whole garlic cloves, peeled
Fine sea salt
Black pepper ground fresh from the mill
A 2-pound fillet from a firm-fleshed fish, such as grouper, striped bass, red snapper, or mahi mahi
2 tablespoons fine, dry, unflavored bread crumbs

Steps:

  • 1. Turn on the oven to 400°F.
  • 2. Place the potato wedges in the baking dish, pour 2 tablespoons of the olive oil over them, add 2 sprigs of rosemary, all the garlic cloves, and salt, and pepper. Toss thoroughly. Put the dish in the preheated oven.
  • 3. After 15 minutes, remove the dish to turn the potatoes over, then put it back in the oven. Cook until the potatoes feel tender when tested with a fork, another 10 minutes or so.
  • 4. Remove the dish from the oven. Push the potatoes to the sides, making room in the center for the fish fillet to lie flat.
  • 5. Wash the fish fillet, pat it dry with paper towels, and lay it flat in the dish, skin side down. Strip the leaves from the remaining rosemary sprigs, scatter them over the fish, add salt and pepper, and sprinkle the bread crumbs and the remaining 2 tablespoons olive oil over the fillet. Return the dish to the oven and bake for 14 minutes. Let the dish settle out of the oven for 3 to 4 minutes before bringing it to the table.

1 ½ cups instant mashed potato flakes
¼ cup oil for frying
4 (6 ounce) fillets sole

Steps:

  • In a shallow dish, whisk together the egg, mustard, and salt; set aside. Place the potato flakes in another shallow dish.
  • Heat oil in a large heavy skillet over medium-high heat.
  • Dip fish fillets in the egg mixture. Dredge the fillets in the potato flakes, making sure to completely coat the fish. For extra crispy, dip into egg and potato flakes again.

1 small onion, chopped
2 stalks celery, chopped
2 cloves garlic, chopped

2 (8 ounce) bottles clam juice
2 cups water
4 potatoes, cut into cubes
1 bay leaf
½ teaspoon dried thyme
1 pound cod fillets, cut into chunks
1 cup whole milk
salt and ground black pepper to taste

Steps:

  • Melt butter in a 5-quart saucepan over medium heat. Cook and stir onion, celery, and garlic in melted butter until onion is tender, 5 to 7 minutes.
  • Stir flour into the vegetable mixture until the vegetables are evenly coated. Pour clam juice and water into the saucepan; whisk until smooth. Add potatoes, bay leaf, and thyme to the mixture. Bring the liquid to a boil, reduce heat to medium-low, and cook at a simmer until the potatoes are tender, about 15 minutes.
  • Gently stir cod into the soup. Place a cover on the saucepan and cook until the cod is flaky, about 8 minutes.

I run a fish market and have shared this recipe with many people and they always come back with rave reviews. Serve with your favorite tartar sauce and chips (French fries)!

2 cups dry potato flakes
1 cup all-purpose flour
1 tablespoon garlic powder
1 tablespoon seasoning salt
1 tablespoon ground black pepper
2 teaspoons cayenne pepper, or to taste
4 (6 ounce) fillets cod
2 cups butter flavored shortening, for frying

Steps:

  • In medium bowl, combine the potato flakes, flour, garlic powder, seasoning salt, black pepper, and cayenne pepper.
  • Soak fish filets in bowl of cold water.
  • In a deep skillet or deep fryer, melt and heat the shortening to 350 degrees F (175 degrees C).
  • Dredge fish filets in dry mixture and fry in the hot oil for 5 minutes or until fish flakes apart easily. Remove from oil and place on paper towels to absorb excess oil.

1 tsp fennel seeds
2 carrots, diced
2 celery sticks, diced

400g can chopped tomatoes
500ml hot fish stock, heated to a simmer
2 skinless pollock fillets (about 200g), thawed if frozen, and cut into chunks
85g raw shelled king prawns

Steps:

  • Heat the oil in a large pan, add the fennel seeds, carrots, celery and garlic, and cook for 5 mins until starting to soften. Tip in the leeks, tomatoes and stock, season and bring to the boil, then cover and simmer for 15-20 mins until the vegetables are tender and the sauce has thickened and reduced slightly.
  • Add the fish, scatter over the prawns and cook for 2 mins more until lightly cooked. Ladle into bowls and serve with a spoon.

8 cups water
2 1 1/2-pound lobsters
2 cups white wine
2 stalks fresh lemon grass, smashed and cut into 2-inch pieces
6 medium red potatoes
3 medium carrots, peeled
2 teaspoons Vietnamese fish sauce (nuoc mam)
3 small scallions, halved lengthwise and cut crosswise into thirds
4 red snapper fillets, skinned and cut into 1 1/2-inch pieces

Steps:

  • Bring 2 cups of water to a boil in a large, wide pot. Add the lobsters, cover and steam for 10 minutes. When cool enough to handle, remove the tail and claw meat and set aside. Place the shells back in the pot. Add 6 cups of water, the wine and lemon grass and bring to a boil. Reduce heat and simmer for 30 minutes. Strain through a fine-mesh sieve and place in a large saucepan.
  • Meanwhile, quarter the potatoes. Turn each potato quarter by carving it with a paring knife into a football shape about 1 1/4-inches long, ideally with 7 sides. As you finish each one, drop them into a bowl of water. Use a channel knife to cut 4 evenly spaced grooves down each carrot. Cut the carrots across into 1/8-inch-thick slices.
  • Bring the broth to a boil and stir in the fish sauce. Drain the potatoes and add them to the broth with the carrots. Reduce the heat and simmer until tender, about 10 minutes. Add the scallions and snapper, adjust the heat so the broth is at a slow simmer and cook until the fish is just cooked, about 5 minutes.
  • Split the lobster tails in half. Ladle the soup among 4 bowls. Garnish each with half a lobster tail and 1 claw and serve immediately.

5 cups low sodium chicken broth
1 cup dry white wine (or 1 cup low-sodium chicken broth plus 3 tbsp white wine vinegar)
1/2 teaspoon dry tarragon
4 small thin-skinned red potatoes (each 1 1/2-2 inches in diameter)
4 medium carrots, halved
3 medium leeks
1 1/2 lbs firm-textured white fish fillets (sea cod or sea bass will do nicely)

Steps:

  • Bring broth, wine, and tarragon to a boil over high heat in a large 5-6 quart saucepan. To this pot add the potatoes and carrots and return to a boil. Reduce heat and cover. Boil gently for 10 minutes.
  • Trim the root end and all but 3 inches of green tops from the leeks and remove the outer leaves. Split lengthwise and rinse well. Add to pan, cover, and boil for about ten minutes, until vegetables are tender. Remove leeks from pan and keep warm.
  • Rinse then pat dry the fish. Cut into 4 equal portions. Add to pan, cover, simmer until carrots are tender and fish is opaque but still moist. This should take 7-10 minutes.
  • With a slotted spatula, lift fish from pan and arrange in 4 wide, shallow bowls, arrange vegetables alongside and ladle broth over all.
  • Enjoy!

Homemade Fish Balls are a fun and tasty treat. Delicious as streetfood with sweet and spicy sauces or added to soups and noodle stir-fries.

1 pound fish flesh
2 tablespoons cornstarch
2 teaspoons salt
1 teaspoon sugar
1/4 cup cold water
canola oil
2 cups water
1/3 cup soy sauce
1 head garlic, peeled and minced
3 shallots, peeled and finely chopped
4 Thai chili peppers, stemmed and chopped
1 cup brown sugar
1 tablespoon flour
1 tablespoon cornstarch
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a food processor, grind the flesh into a thick paste. Alternatively, pound the fish flesh with the back of a knife until it turns to a thick paste.
  • In a bowl, combine the fish paste, salt, sugar, cornstarch, and water.
  • Using hands, stir the mixture until well combined and then shape into a big ball. Lift from the bowl and then slap back into the bowl. Repeat for about 10 to 15 minutes or until the fish paste is smooth and shiny and begins to pull away from the side of the bowl.
  • Alternatively, transfer the fish paste into the bowl of a stand mixer and using the paddle attachment, beat for about 10 to 15 minutes or until it begins to pull away from the side of the bowl.
  • Using a tablespoon, portion the fish paste and shape into balls by rolling between the palm of hands.
  • In a pot over medium heat, bring about 4 quarts of water to a boil. Gently drop fish balls into boiling water and cook for about 1 to 2 minutes or until they begin to float on top.
  • Using a slotted spoon, remove from the fish balls from water and allow to cool.
  • In a wide pan, heat about 2 inches of oil. Add fish balls and cook, stirring occasionally, until golden and puffed. Remove from heat and drain on paper towels.
  • Serve with the sweet and spicy fish ball sauce.

1 small leek, trimmed, or 1 cut-off portion of a large leek
1 small cabbage wedge, about 1 pound
12 small baby carrots, about 1/4 pound, trimmed and scraped
3/4 cup finely chopped onions
Salt to taste, if desired
7 1/2 cups fish broth
1/4 teaspoon powdered turmeric
1/4 teaspoon dried hot red-pepper flakes
Freshly ground pepper to taste
3/4 pound skinless, boneless firm-fleshed, nonoily white fish, such as monkfish, blackfish or red snapper
1 skinless, boneless piece of salmon fillet, about 1/2 pound
12 small mussels
3 red, ripe tomatoes, about 3/4 pound
12 small shrimp, about 6 ounces, peeled and deveined
1 tablespoon freshly plucked ends from fresh dill sprigs

Steps:

  • Cut the leeks or portion of leek into one-and-a-half-inch lengths. Cut each piece lengthwise into quarters. Rinse well and set aside.
  • Cut away and discard the core of the cabbage wedge. Cut the leaves into one-inch pieces. There should be about one and a half cups. Set aside.
  • Prepare the carrots and onions and set aside.
  • Put the leek, cabbage, carrots and onions in a kettle and add cold water to cover. Add salt to taste and bring to the boil. Simmer five minutes, then drain.
  • Bring the fish broth to the boil and add the vegetables. Stir in the turmeric, pepper flakes, salt and pepper to taste. Simmer 10 minutes. If desired, at this point the base may be cooled and refrigerated overnight or until ready to serve.
  • Meanwhile, if monkfish is used, trim away and discard any darker flesh portions of the fish. Cut the white-fleshed fish into one-inch cubes. There should be about one and a half cups. Set aside.
  • Cut the salmon into one-inch cubes. There should be about one and a third cups. Set aside.
  • Pull away and discard the beard of each mussel. Scrub the mussels well and drain. Set aside.
  • Meanwhile, peel the tomatoes and cut them into quarters. Remove and discard the seeds. Cut the quarters into one-inch pieces. There should be about one and a half cups. Set aside.
  • When ready to cook, bring the fish base to the boil and add the white-fleshed fish pieces. Cook about three minutes and add the salmon, mussels and tomatoes. Cook about one minute. Add the shrimp and dill, then stir. Cook two minutes. If desired, serve the soup with garlic mayonnaise on the side or spoon a small amount on top of each serving of soup.
