We always have a good supply of fresh fish, so I make fish recipes often. This recipe is my favorite because it is moist, tender and flavorful. -Judie Anglen, Riverton, Wyoming

Number Of Ingredients 5

1-1/4 pounds fish fillets
1 teaspoon seasoned salt
Pepper to taste
Paprika, optional
3 tablespoons butter, melted

Steps:

  • Preheat oven to 400°. Place fish in a greased 11x7-in. baking dish. Sprinkle with seasoned salt, pepper and paprika if desired. Drizzle with butter. , Cover and bake until fish just begins to flake easily with a fork, 15-20 minutes.

WHOLE ROASTED FISH WITH HERBS

Number Of Ingredients 8

1 (2 1/2-pound) fish, such as snapper or bass, scaled, gutted and gills removed
Kosher salt
Extra-virgin olive oil
8 lemon slices
2 fresh bay leaves
1 bundle assorted fresh herbs, such as thyme, oregano, marjoram and parsley, plus some extra to lay the fish on while baking
4 cloves garlic, smashed
2 cups dry white wine

Steps:

  • Preheat the oven to 400 degrees F.
  • Make 3 diagonal slices about 1/2-inch deep on each side of the fish. Salt and olive oil the fish generously.
  • Season the inside of the fish with salt and olive oil. Place 4 lemon slices, the bay leaves, a bundle of the mixed herbs and 2 of the garlic cloves inside the body cavity.
  • Line a sheet tray with aluminum foil and arrange the remaining assorted herbs, lemon slices and garlic in the center of the tray and lay the fish on top.
  • Fold the aluminum foil up around the sides of the fish to create a sort of baking dish. Add the white wine and place in the preheated oven and roast until the fish is just cooked through, about 30 to 35 minutes.
  • Remove from oven, present and collect your kudos then fillet to serve.

The 'no smell' fish recipe that is the ONLY one I make for my family (I hate fish, they LOVE it!). Take foil packets to table for service, and keep them around for the discarding of bones and skin. Then when dinner's done, haul those babies to the outside trash.

2 rainbow trout fillets
1 tablespoon olive oil
2 teaspoons garlic salt
1 teaspoon ground black pepper
1 fresh jalapeno pepper, sliced
1 lemon, sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Rinse fish, and pat dry.
  • Rub fillets with olive oil, and season with garlic salt and black pepper. Place each fillet on a large sheet of aluminum foil. Top with jalapeno slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets. Carefully seal all edges of the foil to form enclosed packets. Place packets on baking sheet.
  • Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork.

I seen this on an espisode of the Jerry McGinnis Fishin' Hole fishing show on ESPN years ago. The show is no longer on the air as Jerry has retired. I could no longer find the exact recipe that aired but it's so simple to make you can tweak the amounts to your taste. It's been a winner with family and friends for years.

2 lbs haddock
1 medium sliced onion
1 (10 1/2 ounce) can cream of mushroom soup
1 cup sour cream
1 cup sharp cheddar cheese
1 tablespoon lemon juice

Steps:

  • Preheat oven to 375.
  • Rinse and pat dry haddock.
  • salt and pepper to taste.
  • sprinkle with lemon juice.
  • place fish in casserole dish.
  • mix soup and sour cream together.
  • layer onion, soup mixture and cheese on top of fish.
  • repeat fish, onion, soup mix and cheese till you use all.
  • cover and bake for 35-40 minutes until fish is done.
  • We usually serve over baked potato or rice.
