INSTANT POT FISH CHOWDER

Simple, delicious, creamy Instant Pot fish chowder filled with cod, potatoes, and corn. Serve with some warm bread for the perfect weeknight dinner!

1 large onion
4 celery stalks
1 pound red potatoes
4 cups vegetable broth
1 cup frozen corn
1 pound frozen cod or other flaky white fish
1 6.5 oz can chopped clams ((optional))
2 tablespoons water
2 tablespoons cornstarch
1 cup heavy cream
1 teaspoon garlic powder
1 teaspoon dried thyme or 1 tablespoon fresh thyme
Salt to taste

Steps:

  • Start by preparing the ingredients. Chop up the onion and the celery. Cut the potatoes into large chunks - peeling is optional, just make sure the skin is clean if not peeling.
  • Place the stainless steel pot inside the Instant Pot. Add the onion, celery, and potatoes. Then pour in the vegetable broth and then the frozen corn. Place the frozen cod fillets on top of the veggies.
  • Lock the lid in place. Close the pressure release valve and press the "Pressure Cook" button until it's on "Normal" and press the "Pressure Level" button until its on "High". Press the +/- buttons until the display says 00:05 for 5 minutes.
  • While the Instant Pot is cooking, mix together the water and cornstarch in a small bowl.
  • When the time is up, allow the pressure to naturally release for 10 minutes (just leave the Instant Pot alone and let it count up for 10 minutes). Then press the "Cancel" button to turn off the Instant Pot and quick release the remaining pressure by opening the pressure release valve, staying clear of the steam.
  • After the pressure is released and the float valve falls, remove the lid.
  • Turn the pot back on "Saute" and bring to a boil. Add the clams, including the liquid. Mix up the cornstarch and water mixture one more time and then add to the Instant Pot, mixing in well. After the soup has thickened, press "Cancel" to turn off the Instant Pot. Then add in the heavy cream, garlic powder, thyme, and salt and mix together well.

  • Place first 7 ingredients in a 6-qt. electric pressure cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 15 minutes. Quick-release pressure., Select saute setting and adjust for low heat. Mix cornstarch and cream until smooth; stir into soup. Cook and stir until slightly thickened, 6-8 minutes. Stir in cheese and bacon. Heat through until cheese is melted. Press cancel. Sprinkle servings with parsley and, if desired, additional cheese and bacon.

2 tablespoons butter
1 small onion, chopped
2 stalks celery, chopped
2 cloves garlic, chopped
3 tablespoons all-purpose flour
2 (8 ounce) bottles clam juice
2 cups water
4 potatoes, cut into cubes
1 bay leaf
½ teaspoon dried thyme
1 pound cod fillets, cut into chunks
1 cup whole milk
salt and ground black pepper to taste

Steps:

  • Melt butter in a 5-quart saucepan over medium heat. Cook and stir onion, celery, and garlic in melted butter until onion is tender, 5 to 7 minutes.
  • Stir flour into the vegetable mixture until the vegetables are evenly coated. Pour clam juice and water into the saucepan; whisk until smooth. Add potatoes, bay leaf, and thyme to the mixture. Bring the liquid to a boil, reduce heat to medium-low, and cook at a simmer until the potatoes are tender, about 15 minutes.
  • Gently stir cod into the soup. Place a cover on the saucepan and cook until the cod is flaky, about 8 minutes.
  • Pour milk into the soup; stir. Simmer soup until hot, 1 to 2 minutes. Season with salt and black pepper. Remove bay leaf to serve.

2 c water
1 lb catfish filets, cut into chunks
1 c baby potatoes, quartered
1 to 2 ribs celery, thin sliced
1/2 c corn kernels, fresh
3/4 c diced onion
salt & pepper to taste
1/4 tsp garlic powder
2/3 c chicken broth
1 or 2 slice bacon, cooked and diced
1-1/2 c milk
1/2 c instant potatoes
1 Tbsp butter
1 or 2 green onions, thin sliced, for garnish

Steps:

  • 1. Put the water, fish, potatoes, celery, onions, corn, salt & pepper to taste, garlic powder, chicken broth, bacon, and milk into the Instant Pot.
  • 2. Close and seal the lid.
  • 3. Push the MANUAL button and set the time for 10 minutes of pressure.
  • 4. Let the Instant Pot release for 5 minutes, then turn it off, and do a quick release on the remaining pressure.

  • **Due to the nature of pressure cooking there is always room for inconsistency. The times given here are based on 4 servings fresh. If you are using more servings you may need to increase your cooking time.** Add both water #1 and #2, fish, potatoes, celery, onions, salt, pepper, garlic powder, chicken broth, bacon and milk to the inner pot. Lock lid into place and seal steam nozzle. Cook on high pressure for 10 minutes. Let pressure release naturally for 5 minutes then release any remaining pressure. 5 cloves garlic, minced
1 medium onion, diced
3 stalks celery, thinly sliced
1 medium carrot, diced
4 medium russet potatoes, peeled and cubed
1 (14 ounce) can whole kernel corn
2 cups vegetable broth
6 (4 ounce) haddock fillets
1 cup uncooked medium shrimp, peeled and deveined
1 cup sea scallops
1 tablespoon chopped fresh thyme
1 pinch red pepper flakes, or to taste
ground black pepper to taste
2 tablespoons cornstarch
2 tablespoons water
1 cup milk

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add bacon and brown, 5 to 7 minutes. Add garlic and cook and stir for 30 seconds. Add onion, followed by celery and carrot. Cook and stir for 1 to 2 minutes. Turn off Saute function.
  • Layer potatoes, then corn, on top of vegetable mixture. Pour in vegetable broth. Lay haddock on top, followed by shrimp and scallops.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Turn the Saute feature on and stir to break up the fish. Add thyme, red pepper flakes, and ground pepper. Mix cornstarch and water together in a measuring cup; stir into chowder and cook until thickened. Stir in milk and serve.

  • Select Saute on your pressure cooker and set to 10minutes. Then when hot spray the pot with some nonstick spray then add onion and saute until softened, this should take about 5 minutes. Next add the cauliflower, potato, celery, thyme and the salt and black pepper. Mix until well combined and cook the vegetables stirring now and then.
  • While you wait for the veggies to soften a bit, whisk the flour with ½ cup of the chicken brown until it’s lump free and well combined. Carefully pour over the vegetables. Then pour in the remaining 1 cup of chicken broth and the milk into the pot, stir until well combined. Select the Cancel button then carefully place the lid on the pot and set the valve to Sealing. Next select the Pressure Cook button and set to Low Pressure and time to 4 minutes.
  • Once the cooking time has completed, select Cancel to turn off the machine. Allow to sit and naturally release pressure for about 8 to 10 minutes. If you try to release sooner you’ll end up with a big mess because the soup broth will come spurting out, so it’s best to allow some of the pressure to naturally release. Next use a spoon to carefully turn valve to Venting to release any remaining pressure. Open the lid facing away from your face. Stir in ½ cup of the cheese then allow the soup to cool for another 5 minutes or so.
  • Use an immersion or stick blender to puree the soup – please start slow and be careful as you don’t want the hot soup liquid to splash up and burn you. Blend until you have a smooth bisque. Serve into small bowls topping with a little bit of cheese and bacon bits. You may also sprinkle them and black pepper over each soup bowl if desired.
