CLASSIC MORNAY SAUCE

Steps:
- In a medium saucepan melt the butter over medium-high heat. Add the flour and cook, stirring constantly, until the roux is pale yellow and frothy, about 1 minute. Do not allow the roux to brown. Slowly whisk in the milk and continue to whisk until the sauce thickens and comes to a boil, about 2 to 3 minutes. Reduce the heat to a simmer and season with the salt, pepper and nutmeg. Allow to simmer for 2 to 3 minutes. This is now called a bechamel sauce, and may be used as is to top any number of dishes.
- Stir in the cheese and whisk until melted. If the sauce seems to thick, thin with a little milk.
- The sauce is now called a Mornay Sauce. Pour over steamed vegetables and serve immediately. If not using right away, cool, cover surface with plastic wrap and refrigerate for several days.
MORNAY SAUCE RECIPE
How to prepare a delicious Mornay sauce.

- Heat a medium sized saucepan over medium-high heat and when hot, add the butter. When the butter melts, add the flour and start whisking. You want to be careful not to let the butter burn or the flour to turn brown. It's only going to take a minute to a minute and a half for the roux to start turning a pale yellow.
- Slowly add the milk in a stream while constantly whisking and whisking some more. Bring the sauce to a boil and immediately lower the heat to a simmer and continue cooking for 3 to 4 minutes, being careful not to let the sauce burn by whisking frequently.
- Remove the pan from the heat and add the nutmeg, season with salt & pepper and stir. You now have a bechamel sauce.
- Still off heat, add the grated cheese and whisk until all the cheese melts into the sauce. It should be thick and smooth.
- Taste and adjust seasoning with salt & pepper and you now have Mornay sauce.
CLASSIC MORNAY SAUCE
Steps:
- Gather your ingredients.
- In a heavy-bottomed saucepan, melt 3 tablespoons of the butter over medium-low heat.
- Stir in the flour to form a roux . Cook for 2 to 3 minutes, stirring frequently, until most of the water has cooked out (it will bubble less), which also allows the raw flour taste to cook off.
- Slowly add 2 1/2 cups of the warm milk while whisking or stirring constantly so that the liquid is incorporated into the roux without forming lumps.
- Stick the cloves into the onion and add to the sauce along with the bay leaf. Simmer for about 10 minutes, or until it's reduced by about 20 percent.
- Remove the bay leaf and the onion and strain the sauce through a fine-mesh strainer or a colander lined with cheesecloth. Make sure you retrieve all of the cloves.
- Return the sauce to the pan. Add the Gruyère and Parmesan cheeses and stir until the cheese has melted.
- Remove from heat, stir in the remaining 1 tablespoon butter, and adjust the consistency with some or all of the remaining 1/2 cup milk if necessary. Serve right away with pasta, chicken, or fish. Enjoy!

ENGLISH FISH MORNAY
A great way to use fish in the winter months, hearty and delicious. I use whatever fish is on sale or a large can of tuna (canned crabmeat works too). Snapper, flake and any other thicker style but delicate tasting fish fillet will do well for this recipe. A seafod mix would also work well, but I have not tried that yet.

- Melt the butter in a large pan, fry the onions until tender (about 2 minutes).
- Add the flour and cook for a full minute, add the milk and milk. Reduce the heat and whisk. Add the mustard and mix through.
- Add the fish and simmer for 5 minutes stirring carefully. Add the cream and pour into a well buttered pie plate or shallow ceramic baking dish.
- Top with the potato topping very carefully in small spoonfuls (so it doesn't sink to the bottom).
- Top with the cheese and breadcrumbs and bake for 40 minutes at 180oC (360F).
- Serve with bread and butter and steamed seasonal veggies.
- To make topping:.
- Mash the potatoes in a large bowl with the milk and butter. I like to use my hand beater to get it really smooth.

- To start with, finely chop mint leaves, spring onions. Now take a pan and keep it on a medium flame. Heat butter in the pan and add flour to it, stir fry the flour for 7-8 minutes. Now stir in milk and mint leaves to the pan and simmer it until the mixture of sauce boils.
- When the sauce boils, remove the pan from heat. Add fish pieces along with cheese, pepper and salt, keep some of the cheese for later.
- Now pour this mixture in a baking dish greased with butter and sprinkle left cheese and spring onions over it.
- Now bake the mixture for 30 minutes at 170 degrees C until the top of the fish turns brown. Take out the dish and serve it hot with salad.

CREAMY HADDOCK GRATINS

- Place 4-6 small, shallow flameproof dishes on a baking tray.
- For the gratin topping, mix the breadcrumbs, gruyere and parsley and set aside while you make the filling.
- For the filling, pour the milk into a large, deep frying pan and add the onion, bay leaf and lemon peel. Place the fish skin-side down in the pan and bring to a gentle simmer over a medium heat. Baste the fish occasionally with the milk, and cook for 5-6 minutes. When cooked, the fish will be opaque and be starting to flake into pieces. Leave to stand for 5 minutes.
- Drain the fish in a colander over a large jug, reserve the milk.
- Melt the butter in a large non-stick saucepan and stir in the flour with a wooden spoon until thoroughly combined. Remove from the heat and slowly add the reserved warm milk, stirring constantly. Return to the heat, bring the sauce to a simmer and continue to stir until it is smooth and thick. Stir in the wine or vermout, Gruyère, mustard and cream. Cook over a low heat for a further 2-3 minutes, while stirring. Season with salt and freshly ground black pepper to taste.
- Flake the fish into chunky pieces and discard the skin, onion, bay leaf and lemon peel. Add the fish to the pan with the sauce and heat very gently for a 2 minutes to warm it through.
- While the fish is warming, preheat the grill to hot and place the baking tray with the shallow dishes under the heat to warm for a few seconds. Carefully remove them from the heat and divide the hot fish mixture between the warm dishes. Sprinkle with the gratin topping and return to the grill for 3-5 minutes or until nicely browned and filling bubbling undeneath.

Steps:
- If fillets are large, cut lengthwise in half.
- Roll up fish and secure with toothpicks.
- Place in shallow rectangular baking dish.
- Sprinkle with lemon juice.
- Cover with foil and bake in a preheated 400 F degree oven for 15 minutes or until fish flakes easily with a fork.
- Meanwhile, melt butter in a saucepan.
- Blend in flour, bouillon mix and dry mustard.
- Gradually stir in the milk.
- Cook and stir over medium heat until it boils and thickens.

- In a large skillet over medium heat add 1/2 tablespoon of olive oil and 1/2 tablespoon of butter, red bell pepper and garlic and cook for about 4 minutes.
- Add spinach season with a pinch of salt and pepper mix until the spinach wilts down.
- Add cream cheese, half & half and parmesan cheese mix well until cream cheese is melted and resembles creamed spinach.
- Heat a separate skillet on medium high heat, add remaining oil and butter.
- Season fish on both sides with salt and pepper and place on the hot pan.
