CARAMEL APPLE PIE I



Caramel Apple Pie I image

A double crusted apple pie with a thin layer of caramel over the apples. It's great!

1 recipe pastry for a 9 inch double crust deep dish pie
¾ cup white sugar
3 tablespoons cornstarch
½ teaspoon ground cinnamon
6 cups thinly sliced apples
½ cup caramel ice cream topping
¼ cup chopped pecans
1 (16 ounce) package frozen whipped topping, thawed

Steps:

  • Preheat oven and cookie sheet to 400 degrees F (205 degrees C).
  • Stir together the sugar, cornstarch and cinnamon. Toss with the apples in a mixing bowl.
  • Pour the mixture into the first unbaked pie shell then drizzle the caramel topping over the top. Sprinkle with pecans. Place the second pie shell over this and flute the edges. Cut slits in the top crust to allow steam to escape then place on preheated cookie sheet.
  • Bake 45-50 minutes, until golden brown. Cool for 1 hour before slicing. Top with whipped topping, if desired.

As a little boy I grew up helping my mother make apple and fruit pies. She was from Cork in southern Ireland so I'm guessing the recipe is Irish and possibly the same one her mother taught her. Sadly my mum is no longer with us, but her legendary apple pie lives on in my memory. I promise you will love this pie!

1 ½ cups all-purpose flour
¾ cup cake flour
½ teaspoon salt
1 tablespoon white sugar
1 cup unsalted butter
3 tablespoons shortening
¼ cup sour cream
⅛ teaspoon lemon juice
5 large Granny Smith apples - peeled, cored and sliced
½ cup white sugar
2 tablespoons all-purpose flour
½ tablespoon ground nutmeg
⅛ teaspoon lemon juice
1 egg, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie pan.
  • To Make Crust: In a large bowl, combine flours, salt and sugar. Cut in butter and shortening until coarse crumbs are formed. Mix in sour cream and lemon juice. Keep mixing until dough forms a ball; dough may be slightly lumpy, this is fine. Wrap dough ball in plastic wrap and allow to chill for 1 hour.
  • Once chilled, take dough out of refrigerator and cut it in half; keep one half covered and in the refrigerator. Roll dough to 1/8 of an inch. To lift pie shell, roll dough around rolling pin and then unroll into pie pan. Trim overhanging edges of pie crust.
  • To Make Filling: Place apples into pie shell. In a small bowl, combine sugar, flour and nutmeg; mix thoroughly. Sprinkle mixture over apples. Squirt lemon juice over apples. Place pie in refrigerator while top crust is rolled out.
  • Remove pie from refrigerator. Brush outer edge of bottom crust with beaten egg. Place second crust on top of pie; crimp pie shell edges together. Brush entire top crust with egg and cut 4 steam slots into it.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 45 minutes, or until golden brown. Allow pie to completely cool before serving. Serve warm with whipped cream or vanilla ice cream.

2/3 tsp salt
Apple cider or water to blend dough
Filling:
6 large Macintosh apples or 9 small
1 2/3 cups sour cream
1 egg
1 cup sugar
1/2 tsp salt
2 tsp vanilla
1/3 cup flour
Topping:
1/3 cup sugar
1/3 cup brown sugar
1/2 cup flour
Pinch of salt
1 tsp cinnamon
1 cup chopped walnuts
1/4 lb butter

Steps:

  • Crust: Combine all the ingredients and roll out into 10-inch pie plate.
  • Filling: Mix together all ingredients and fill pie. Bake at 450°F for 10 min. and then 350°F for 35-40 min. Stir filling after 20 min. and then 15 min. later.
  • Topping: Put on top of filling and bake 15 min. longer at 350°F.

2 cups (x250ml) oat flakes
0,5 cup all purpose flour
1 t.s. baking powder
cinnamon
pinch of salt
app.80g sugar (to taste)
1 egg
1 big apple, sliced

Steps:

  • Mix oats with milk and egg, add flour and soda, salt, cinnamon and sugar. Mix well, let it stand for 10 minutes.
  • Butter a form, transfer the batter into it, sprinkle with cinnamon, put apples on top and dust with some sugar.
  • Bake at 175C about 30 minutes

1 egg
1/2 c sugar
1/2 tsp salt
2 tsp vanilla
1/3 c flour
6 large apples, peeled, cored and sliced
1/4 c brown sugar
1/4 c sugar
1 Tbsp cinnamon
1/2 c flour
1/4 lb butter
1 c chopped walnuts

Steps:

  • 1. Preheat oven to 450. Grease a 2 quart casserole. Mix together yogurt or sour cream, 1/2 cup sugar, salt, vanilla, and 1/3 cup flour. Pour into casserole. Drop apples into mixture. Bake 10 minutes at 450 and another 40 minutes at 350. Stir together brown sugar, sugar, cinnamon, flour, butter and walnuts and top baked pie. Bake again another 15 minutes at 350.

2 1/2 pounds McIntosh apples, peeled, cored and sliced
1 egg
1 1/2 cup sour cream
1 cup sugar
1/4 cup flour
2 teaspoons vanilla
1/2 teaspoon salt
1/2 cup butter
1/2 cup flour
1/3 cup sugar
1/3 cup brown sugar
3 teaspoons cinnamon
1/4 teaspoon salt
1 cup chopped walnuts

Steps:

  • Preheat oven to 450 degrees F.
  • Line a deep dish pie plate with pie crust and form a decorative edge. In large bowl beat eggs lightly and stir in sour cream, sugar, flour, vanilla, and salt until smooth. Toss in apples and stir to coat. Spoon into pie shell. Bake 10 minutes. Lower oven to 350 degrees F. Bake for 35 minutes. Combine butter with rest of ingredients with fork or pastry blender. Sprinkle topping over pie and bake for 15 minutes. Cool to room temperature and chill. Serve chilled.

8 Mcintosh apples, peeled, cored, and sliced
1 2/3 cups sour cream
1 cup sugar
1/3 cup all purpose flour
1 egg
2 teaspoons vanilla
1/2 teaspoon salt
For topping
1 cup chopped walnuts
1/2 cup all purpose flour
1/3 cup firmly packed brown sugar
1/3 cup granulated sugar
1 tablespoon cinnamon
pinch of salt
1/2 cup (1 stick) butter, room temperature

Steps:

  • Make crust:
  • Combine flour, sugar, cinnamon, and salt in medium bowl. Cut in butter using pastry blender or 2 knives until mixture resembles coarse meal. Add water and toss mixture gently with fork until evenly moistened. Gather gently into ball. Transfer to lightly floured board and roll into circle slightly larger than a deep 10-inch pie plate. Ease pastry into pan and flute a high edge. Set aside.
  • Make filling:
  • Preheat oven to 450°F. Combine apples, sour cream, sugar, flour, egg, vanilla, and salt in large bowl and mix well. Spoon into crust. Bake 10 minutes. Reduce oven temperature to 350°F and continue baking until filling is slightly puffed and golden brown, about 40 minutes. (If edges of crust begin to brown too quickly, cover with strips of aluminum foil.)
  • Make topping:
  • Meanwhile, combine walnuts, flour, sugars, cinnamon, and salt in medium bowl and mix well. Blend in butter until mixture is crumbly. Spoon over pie and bake 15 minutes longer.

Turn under over hanging pastry and flute to make a stand up rim. Refrigerate until ready to fill. Beat egg slightly in a large bowl. Stir in sour cream, sugar, flour, vanilla and salt until smooth. Add sliced apples stirring gently just to coat. Spoon filling into shell. Bake in preheated very hot oven 450℉ (230℃). for 10 min. Lower heat to moderate 350℉ (180℃). and bake 35 min longer. While pie bakes prepare topping. Remove pie from oven. Sprinkle topping evenly over filling. Return pie to oven. Bake at 350℉ (180℃) for 15 min until lightly browned.
