CRISPY BEER BATTER FISH & CHIPS
Virtually every beer-battered fish recipe looks crispy coming out of the fryer, and some even stay crispy for a few minutes, but then the inevitable sogginess sets in. Well, with this simple formula, and a few easy tricks, you can achieve a fried fish where the last bite is as crisp as the first. The keys are keeping your batter really cold and patting your fish really dry. Serve over a bed of salt 'n vinegar chips with tartar sauce and lemon.

Steps:
- Whisk self-rising flour, rice flour, and baking powder together in a bowl. Freeze until ready to use.
- Pat fish as dry as possible. Cut pieces lengthwise to get eight 1-inch thick strips. Place rice flour on a plate and season with salt. Dust fish lightly with the mixture and shake off excess. Cover a plate with crinkled foil to make a quick drying rack; place fish on top.
- Heat oil in a deep-fryer to 375 degrees F (190 degrees C).
- Pour beer into the flour mixture and whisk, adding more as needed, until batter is the consistency of thick pancake batter. Dip fish pieces into the batter to coat; lift out and let excess drip off.
- Fry fish in batches until golden brown, dunking occasionally if needed, 3 to 4 minutes. Drain on paper towels. Serve immediately.

LONG JOHN SILVER'S FISH BATTER RECIPE (+ SECRET INGREDIENT)
Steps:
- First, make the batter by combining all of the dry ingredients. Mix together.
- Add club soda and mix until combined. Batter's done!
- Pat dry 1 pound of cod fillet with a paper towel. Removing its excess liquid will reduce splatter as you fry it.
- Place two pieces of cod fillet into the batter. Let them sit for a few minutes so the batter thoroughly coats the fish.
- While the fillet's are sitting in the batter, fill up a small cast-iron skillet with oil until it is 1/2 to 3/4 inches deep. Heat the oil over medium-high heat until it reaches 350 degrees Fahrenheit. This will take about 5-10 minutes. Use a deep-frying thermometer so you know when you've hit 350 degrees F.
- Place two pieces of battered fish into the skillet and fry for 3-4 minutes. Do not over-crowd the skillet as this will lower the oil's temperature.
- Flip the fish over and fry for another 3-4 minutes or until golden brown.
- Transfer the fillets into a plate lined with paper towels. This will help get rid of excess oil.
- Let the oil reach 350 degrees Fahrenheit before adding the next batch of fish. Repeat until you've fried the entire pound of cod fillets.

BEER BATTERED FISH
Beer battered fish with a crunchy coating and tender flaky fish.

- Mix dry ingredients together in a bowl. Add beer and stir. Mixture should be the same consistency like pancake batter.
- Add 1 1/2 -2 inches oil to pan. Heat oil to 375 degrees.
- Pat fish fillets dry with a paper towel. Dip fish, one at a time, into beer batter. Add to heated oil. Cook 3-4 pieces at a time so pan is not overcrowded.
- Cook 2-3 minutes per side. Place cooked fish on a baking sheet lined with a baking rack. Place in a preheated 250°F oven to keep warm while remaining fish cooks.
- Repeat until all fish is cooked.

CRISPY BATTER FOR CHICKEN OR FISH
Similar to Long John Silvers' batter. Feel free to add some other seasonings, such as garlic powder, lemon pepper, onion powder, even cayenne pepper. This is similar to a tempura batter, so don't try to get too much batter on your fish or chicken pieces. And don't use too big of pieces of fish/chicken or the batter will burn before the food gets done.This is enough batter to coat about 10 medium chicken strips of small fish fillets. Recipe is easily doubled or tripled.

- Preheat the oil in a deep fryer or large cast iron skillet. You'll want at least a couple inches deep of oil in the skillet. The oil should be heated to 325°F A frying thermometer is usful in keeping the oil at a constant temperature.
- Prepare your chicken or fish by cutting into thin strips, about 1/2 thick; the width is not critical. Pat dry with a paper towel.
- In a shallow quart container, whisk together the dry ingredients well. Stir in the water and whisk until very smooth.
- Using tongs, dip the fish or chicken pieces into the batter, covering LIGHTLY, and letting some batter drip off.
- Immediately place the fish or chicken in the preheated oil. Fry to a deep golden brown, turning once. This should take a total of 5 to 7 minutes, depending on the thickness of the pieces. Remove one piece and cut into it to check for doneness.
- Drain on fresh paper toweling and keep warm in a low oven till serving time - or serve immediately!

- Place the flour/starch, baking powder, and salt in a mixing bowl. Stir to mix everything. Only prepare your batter when you are ready to fry your food.
- Pour about 1 1/2 to 2-inch of oil into a stainless steel pot or Dutch oven. Preheat the oil to 330 F. It helps if you have deep-fryer thermometer if not, dip a stick end of wooden spatula, bamboo skewer, or chopsticks into the oil. If there are steady bubbles around it, the oil is most likely more than 330 F, but the temperature will drop once you put in the things you are going to fry. As long as it doesn't bubble vigorously, if it is, lower the heat a bit and test again
- Pour in the ice cold water into the flour mixture and use a chopstick to stir. Do not over stir with all-purpose flour. It's okay to have some lumps in the batter. If you over mix the flour batter, it will turn out gummy and absorbs too much oil. If you are preparing gluten-free batter, this is not an issue because cornstarch doesn't have gluten in it
- Coat the food with the batter and fry the food. Another important note is not to overcrowd and frying too many. If you lower the oil temperature too much, the batter will be greasy, soggy, and almost definitely will not stay crispy (if at all). This step is to cook the food inside the batter. Depending on what you are frying, follow the instruction on the time
- Remove from the oil to a rack. Let them cool down for at least 10 minutes before you go for the second frying. You can even stop at this step if you are prepping ahead. Keep the half-fried food in the fridge and do the second frying just right before serving, whenever that is
- Remove any crumbs from the oil and bring it back up to hot again over high heat. This time we need about 375 F. Use a thermometer if you have one. If you don't have one, again, use the stick end of wooden spatula, bamboo skewer or chopstick to test the oil. The bubbles will be steady. When it's ready, fry the food for the second time. This round should be quicker. The food will turn golden brown too. This step is to crisp up the food further
- Place the fried food on a rack set on a baking sheet. You can keep the rest warm in an oven at around 200 F and serve when you are done with frying all
PANCAKE BATTERED FRIED FISH AND MORE
Pancake Battered Fried Fish uses pancake mix to make batter for deep fried whitefish, chicken, crab and shrimp, at home or camping, with or without beer!

- If using frozen fillets, totally defrost then make sure they are dried with paper towel. defrosted. For fast defrosting, frozen fillets can be soaked in cool tap water.
- Get out and measure your ingredients, including the peanut oil.
- In a heavy frying pan, pour enough oil that reaches up to a 1/2 to 3/4 of an inch up the sides of the pan. Turn heat to medium high.
- Turn your oven to 200 degrees and place a rimmed baking sheet a wire rack on top.
- Using a thermometer, oil should reach 350 degrees. If you don't own or use one, flick a little water into the oil, and if it sizzles instantly the oil is ready. My husband waits until the oil starts to shimmer and adds a little drop of pancake batter to it.. If it turns black right away, the oil is too hot. If the drop sinks to the bottom and stays there too long, the oil isn't hot enough. You know it's the right temperature when the drop goes to the bottom and quickly floats to the top and starts to sizzle around the edges. Then you're ready to fry your fish fillets or pieces!
- In a medium sized bowl, make pancake mix according to package directions. Usually, it's 1 cup pancake mix to 3/4 cup water or flat beer. If using beer instead of water, make sure beer is totally flat, with no bubbles at all. Combine and set aside in your fridge or make batter once oil is ready. The longer the baking powder in the pancake mix sits at room temperature, the more ineffective it becomes. I always make my batter right before I need it or refrigerate batter until needed.
- Dip fillets into pancake batter, shake off the excess and gently lay into the hot oil.
- Fry until golden brown, between 2-5 minutes, depending on how thick the fillet is.
- Use a spatula and gently turn the fish over and cook for another 2-5 minutes.
- Once a beautiful golden brown on both sides, move each piece into the oven while cooking the rest of the fish. Keeping the fish warm in the oven will help keep it crispy until you are ready to eat it.
- When all cooked, serve at once with fresh lemon and tartar sauce. Enjoy every bite!
