This is from the cookbook Gator Championship recipes. This is a cookbook of recipes by Florida Gator fans and master tailgaters. My Aunt Yvonne gave me the book as a wedding present and introduced me to this yummy snack. The book attributes the recipe to "...Vida Alexander, a Goal-liner from 1979 until her death in 1995."

Steps:
- Brown the ground beef and sausage in a 400° skillet, stirring until crumbly; drain well.
- Add the cheese.
- Heat until the cheese melts, stirring frequently.
- Sprinkle with the onion salt and Worcestershire sauce.
- Spread on the bread to serve.
- For OAMC: freeze in a single layer on a cookie sheet at this point.
- Once frozen, include in a Ziploc bag or container.
- To Reheat: place Gator Baits on a cookie sheet and place in a 375° oven until hot -- about 30 minutes.

GATOR BAIT BITES WITH SWAMP SAUCE RECIPE - SIDECHEF

- Combine the Chicken Breast (3), Buttermilk (1 cup), Frank's® RedHot® Sauce (1/4 cup) and the Sriracha (2 tablespoon). Stir to coat the chicken well. Cover and refrigerate between 30 minutes to 4 hours. Drain the chicken.
- In a shallow bowl, beat the Egg (1) and stir in the Milk (1/2 cup). In a separate shallow bowl or dish, combine the All-Purpose Flour (1 cup), Cornmeal (3 tablespoon), Powdered Confectioners Sugar (1 tablespoon), Salt (1/8 teaspoon), Ground Black Pepper (1/8 teaspoon) and Paprika (1/4 teaspoon).
- Heat about a fourth of the Vegetable Oil (1/2 cup) in a large skillet over medium to medium high heat.
- In batches, dip the chicken into the milk and egg mixture, then into the flour mixture. Cook a few minutes on each side until the chicken "gator bait" pieces are browned and the chicken is cooked through. Continue cooking until all pieces are cooked.
