1 liter water
3 pieces tomatoes (- cut into quarters)
1 medium onion (- cut int quarter)
1 thumb ginger (- cut into 4-5 slices)
1 medium white radish (- cut into thin diagonal slices)
5 pieces yardlong beans (- ends trimmed and cut into 3-inch pieces)
1 piece Salmon head (- gills removed, cleaned and cut into half)
1 medium eggplant (- cut into 1-inch diagonal pieces)
5 pieces okra
3 pieces green chili peppers
1 packet Tamarind soup mix (- for 1-liter pack)
1 tablespoon fish sauce
1 bunch water spinach (Kangkong) (- hard part of the stalks trimmed)

Steps:

  • In a pot over high heat, bring 1 liter of water to boil.
  • Add tomatoes, onion, ginger, yardlong beans, and white radish. Lower heat to medium and cover pot with lid. Simmer for 5 minutes or until white radish is just half cooked.
  • Add the Salmon head, eggplant, okra, and green chili peppers. Pour in tamarind mix and fish sauce and gently stir to avoid breaking the fish into pieces. Simmer for 5 minutes or until fish is cooked
  • Add the water spinach (Kangkong) and cook for a few seconds then turn off the heat.
  • Transfer content to a serving soup dish and serve with steamed rice.

3 1/2 tablespoons/50 g tamarind pulp
6 1/2 cups/1 1/2 litres fish stock
4 tablespoons fish sauce
1/2 sweet pineapple, peeled and sliced into bite-size pieces
3 1/2 ounces/100 g pickled bamboo shoot
1/3 cup sugar
7 ounces/200 g baby calamari, cleaned but not skinned
7 ounces/200 g small tiger prawns, heads and legs trimmed
1 tomato, cut into wedges
1 green banana, finely sliced
5 okra, sliced on a diagonal
1 elephant ear stem, peeled and sliced
1 bunch rice paddy herb, roughly sliced* (See Cook's Note)
1 bunch saw tooth coriander, roughly sliced*
1 teaspoon garlic oil
1/2 tablespoon fried garlic
2 red chiles, sliced

Steps:

  • Dissolve the tamarind pulp in 1 cup of hot water. Work the pulp until dissolved and then strain the liquid through a fine sieve, discarding the pulp. Combine the tamarind water, fish stock, fish sauce, pineapple, pickled bamboo shoots, and sugar into a clay pot and bring to the boil. Add the calamari and prawns to the pot. Bring back to boil, discarding any impurities that float to the top. Now add tomatoes, green banana, okra and elephant ear stems. Bring back to the boil, tranfer to serving bowl then add rice paddy herb, coriander, fried garlic, garlic oil, and chile.

3 lbs pork ribs, chopped into 1 inch pieces
2 tablespoons minced garlic
1 medium onion, chopped
1 packet sinigang tamarind soup mix (found in international food section)
16 cups water
1 bok choy, chopped in 1 to 2 inch slices
1 daikon radish, chopped in thin round slices (optional)
1 small tomatoes, chopped fine (optional)
2 small potatoes, chopped in large chunks (optional)
salt

Steps:

  • Saute ribs garlic onions and salt to taste until brown.
  • In Separate large pot add water Sinigang tamarind soup packet (found in international food section) to taste I like the whole packet but less is more in this case if it is to sour for you.
  • Remember you can eat this with rice.
  • Then add the tomato and the pork, cook on medium heat for about 40 min and then add the potatoes cook for another 10 min and then add the Daikon Radish and the Bok choy cook about 10 more min.
  • It is good if the meat easily comes away from the bone.
  • You can eat this straight or over rice or both.

A very simple and quick Filipino dish. This is a sour broth soup with tilapia fish fillets. The flavor is sour but it actually enhances your appetite. This is considered comfort food in my house.

½ pound tilapia fillets, cut into chunks
1 small head bok choy, chopped
2 medium tomatoes, cut into chunks
1 cup thinly sliced daikon radish
¼ cup tamarind paste
3 cups water
2 dried red chile peppers

Steps:

  • In a medium pot, combine the tilapia, bok choy, tomatoes and radish. Stir together the tamarind paste and water; pour into the pot. Toss in the chili peppers if using. Bring to a boil, and cook for 5 minutes, or just until the fish is cooked through. Even frozen fish will cook in less than 10 minutes. Do not over cook or else the fish will fall apart. Ladle into bowls to serve.
