CLASSIC FISH AND CHIPS



Classic Fish and Chips image

Good tasting, simple recipe for New England's favorite dish fish and chips. Serve with malt vinegar, lemon, or tartar sauce.

4 large potatoes, peeled and cut into strips
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 cup milk
1 egg
1 quart vegetable oil for frying
1 ½ pounds cod fillets

Steps:

  • Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
  • Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
  • Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
  • Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
  • Fry the potatoes again for 1 to 2 minutes for added crispness.

For the Fish:
7 tablespoons (55 grams) all-purpose flour (divided)
7 tablespoons (55 grams) cornstarch
1 teaspoon baking powder
Sea salt (to taste)
1 pinch black pepper (to taste)
1/3 cup dark beer (cold)
1/3 cup sparkling water (cold)
4 (7-ounce) fish fillets (thick, white fish)
For the Chips:
2 pounds potatoes (peeled)
1 quart (1 liter) vegetable oil (or lard; for frying )

Steps:

  • Serve immediately with the hot fish accompanied by your favorite condiment.

Crispy fish bites are delicious and easy to make. The kids will love them too. They're just live fish fingers but even crisper and healthier too.

500g cod fillet or other firm white fish, skinned
75g plain flour
2 eggs
200g fresh white breadcrumbs
1litre vegetable or rapeseed oil (for deep frying)

Steps:

  • To make the sauce, mix the mayonnaise with the capers, parsley and the juice of half the lemon. Spoon into a bowl and chill until ready to serve.
  • Cut the fish into finger-sized pieces. Place the flour on a plate and season with salt and freshly ground pepper. Beat the eggs in a shallow bowl and place the breadcrumbs on a separate plate.
  • Dip the fish first into the seasoned flour, then the eggs and finally the breadcrumbs, ensuring they are well coated.
  • Half fill a large, deep saucepan with the oil and heat until a crust of bread will brown in 40 seconds.
  • Fry the fish in the hot oil, in batches, so that the temperature of the oil is not lowered, until golden brown, about 2-3 mins. Drain well on kitchen paper and serve with the sauce and the remaining lemon cut into wedges.

  • If you are using frozen fish, defrost it. Turn oven on to 150C, 300F, Gas 2. Heat up the oil in your fryer / pan until it reaches 180C / 350F.
  • Check over your fish for any bones. If you have a thick part and thin part of the fish, cut the thin part off as we will cook this separately to avoid over cooking. (see shapes of fish in photo). Pat dry with kitchen paper.
  • Mix your flour and salt and pepper well in a shallow dish and cover the fish with the flour and shaking off any loose flour.
  • Make up the batter. Add all the ingredients EXCEPT the beer / fizzy water, and give it a light whisk. Don't worry if there are lumps in the batter. This is good!
