FIREHOUSE WINGS
GOOD-GOOD-GOOD!!!! I love wings and these are definetly not for the faint of heart. They are good and spicy (aren't hot wings supposed to be?)and easy to fix. Prep time will depend on how long you want to keep these in the frige.

Steps:
- In a large bowl mix together the oil, vinegar, Tabasco, chili powder, garlic powder and salt.
- Rinse wings in cold water and pat dry with paper towels.
- Add wings to the mixture in bowl and toss to evenly coat all wings (I put the mixture in a large zip-lock bag and shake everything together until coated).
- If tossing in bowl cover and chill the wings in sauce for at least 30 minutes.
- (of course the longer you chill them the more the sauce soaks in).
- Set oven to broil.
- Remove wings from sauce and place in a 13x9 foil lined baking pan.
- Broil wings about 4" from heat 7-10 minutes.
- Turn and broil other side about 7 minutes.
- Continue turning every couple of minutes until wings are done.
- Serve with blue cheese or ranch dressing.

FIREHOUSE HALUSKI
This is a quick easy lunch, and cheap too. I make this at the fire station and it is very filling. Serve sprinkled with Romano cheese with bread.

Steps:
- Bring a large pot of lightly salted water to a boil and cook kluski noodles until tender, about 8 minutes. Drain, chop noodles into small pieces, and set aside.
- Cook cabbage and onion, covered, in a large pot with water over medium heat until tender, 8 to 10 minutes. Heat vegetable oil in a large skillet over medium heat and transfer cabbage and onion into skillet with a slotted spoon. Cook in the hot oil until vegetables begin to brown, about 10 minutes; stir in kielbasa and continue to cook until sausage is heated through. Stir mustard seeds into cabbage mixture; season to taste with salt and black pepper. Stir chopped kluski into the mixture.
- Pour eggs over the noodle mixture and stir until eggs are set, 3 to 5 minutes.

- The above should be enough for 7 or 8 pounds of wings. Rinse and drain 7 to 8 pounds wings. Pour some of the Red Hot hot sauce over them, and toss. Add seasoning mixture (above) until generously coated. You will lose some in the cooking, so don't skimp! Place the wings on a gas grill (or smoker) and slow cook them at a low temperature. After 20 minutes baste/mist with sprayer at least every 10 minutes. Flip them after you mist them. Total cooking time should be around 1 1/2 to 3 hours, depending on the heat of the grill. They're done when they break at the joint or you can break the wing tip off.
- Combine ingredients and warm on stove or in microwave, then put in spray bottle and set aside. .
