FIREHOUSE BBQ SAUCE

Firehouse BBQ Sauce image

This recipe has been passed down by word of mouth in our fire station for years! It is fabulous and you can control how hot it is by how much red pepper you add. Please note that the longer it sits, the hotter it gets! Great on chicken, pork, and just about anything you can think of. Try it on a cracker with a slice of cheese!

Yield 6

Number Of Ingredients 13

10 ripe tomatoes
2 tablespoons butter
2 tablespoons olive oil
1 onion, chopped
1 green bell pepper, chopped
2 carrots, chopped
4 cloves garlic, minced
¼ cup Burgundy wine
¼ cup chopped fresh basil
¼ teaspoon Italian seasoning
2 stalks celery
1 bay leaf
2 tablespoons tomato paste

Steps:

  • Bring a large pot of water to a boil. Prepare a large bowl of ice water.
  • Plunge whole tomatoes in boiling water until skin starts to peel, about 1 minute. Remove with a slotted spoon and place in ice bath. Let rest until cool enough to handle, then remove peels and squeeze out seeds.

  • Heat butter and oil in a large pot or Dutch oven over medium heat. Add onion, bell pepper, carrot, and garlic; cook and stir until onion softens, about 5 minutes. Pour in pureed tomatoes, then stir in chopped tomatoes, wine, basil, and Italian seasoning. Place celery stalks and bay leaf in the pot and bring to a boil. Reduce heat to low, cover, and simmer for 2 hours.
  • Stir in tomato paste; simmer for an additional 2 hours. Discard celery and bay leaf and serve.

EASY UNCOOKED TOMATO SAUCE FOR PASTA

Easy Uncooked Tomato Sauce for Pasta image

I love this! This is a great warm weather meal you can put together the sauce in the morning b4 work or even the night b4 and it will be perfect by the time you get home. Using canned tomatoes makes this even easier but you can use fresh if you can get good ones or even roast some Romas for this dish. This is also great B4 or with a rare charcoal grilled steak or as part of a larger Italian meal. Cook time is the marinating time.

Provided by Ilysse

Categories     European

Time 3h5m

Yield 4-6 serving(s)

Number Of Ingredients 5

1 (28 ounce) can tomatoes, your favorite type,i like cento
1 clove garlic, peeled and smashed
1/4 cup good extra virgin olive oil (quality matters)
fresh oregano or dried oregano, to taste
1 lb uncooked pasta, of choice,i like fettucini or 1 pasta, that holds the sauce like a shell penne or rigatoni

Steps:

  • Lightly drain the tomatoes (if they are in a tomato puree or a tomato sauce than by all means keep the sauce but if in water get rid of most of it).
  • Place tomatoes in a bowl, large jar, or sealable container.
  • If the tomatoes are whole you should crush them up with a fork (I use a potato masher) or dice them; you can also use diced tomatoes.
  • Add the remaining ingredients except pasta.
  • I use either fresh Basil or dried Oregano, alot of it.
  • By crushing the garlic rather than chopping you will get more garlic flavor so don't be tempted to use too much more than what I have listed unless it is from a jar or diced.
  • Cover container and place in the fridge for at least 3-6 hours; the longer it sits the better it is.
  • Remove the garlic clove from the sauce and take out of the fridge just b4 cooking the pasta You want it to be someplace between cold and room temperature If it is too warm you will not have as big a flavor burts when the hot pasta meets the sauce If too cold it will cool the pasta too much.
  • Cook pasta until al dente, drain and toss with the cold sauce.
  • Eat and enjoy, serve with hot crusty bread and a tossed green salad.

FIREHOUSE TOMATO SAUCE

Firehouse Tomato Sauce image

We were shopping at a local grocery store near the firehouse trying to decide on dinner and I decided to make some pasta with tomato sauce and meatballs. I used only what was available in this store and it came out fantastic. The San Marzano canned tomatoes are a little bit pricier but you seriously can taste the difference and it's worth it. The cola sounds weird but it's an old tip from a culinary instructor and I prefer it to straight sugar. For me adding meat to this in the last hour really makes the flavor better but I'll post that later under another recipe. On it's own its still a great sauce. I adapted this to a gluten free version for my girlfriend, for those interested check it out.

Time 3h20m

Yield 4-5 serving(s)

Number Of Ingredients 15

1 (48 ounce) can san marzano tomatoes
1 (8 ounce) can tomato paste
2 plum tomatoes
1 small onion (I used vidalia)
1 small shallot
1/8 cup butter
1/2 cup water (I like to use the empty tomato can for flavor)
8 ounces cola
3 tablespoons olive oil
1/2 cup cola (If you like it sweeter, add a bit more)
1 tablespoon chopped fresh garlic (more for others who love garlic)
2 tablespoons fresh basil
1 1/2 tablespoons italian seasoning (oregno,rosemary,thyme, etc)
1/2 teaspoon red pepper flakes (If you like heat kick it up)
salt or pepper

Steps:

  • Preheat oven to 400°F.
  • Heat oil in a skillet under low heat add onions and shallot. Saute until lightly translucent and soft.
  • Slice Plum tomatoes lengthwise, sprinkle with salt and olive oil. Bake for 10mins on each side or until browned.
  • Add garlic, stir often and be very careful to watch for burning, about 2 minutes If you see spots of garlic getting brown add small splashes of water over them. Once the garlic is done add the tomato paste, herbs, pepper flakes, salt, pepper, and mix until the paste and onions are blended, another 2-3 minutes.
  • Add tomatoes, roasted plum tomatoes, cola, water and butter. Bring to a light simmer for 3 hours Do net let it boil. After 2 hrs taste and adjust seasoning if necessary, before that the flavors have not concentrated. For texture I mashed it with a potato masher, if you prefer it chunky disregard.
  • Serve with your favorite pasta and enjoy.

FIREHOUSE CHILI GUMBO

Firehouse Chili Gumbo image

Number Of Ingredients 28

1 tablespoon canola oil
1 1/2 pounds ground beef
1/2 tablespoon kosher salt
1/2 teaspoon white pepper
1/2 teaspoon black pepper
1/2 teaspoon cayenne
1/2 teaspoon cayenne
1 tablespoon chile powder
1/2 teaspoon turmeric
1/2 teaspoon oregano
1/2 teaspoon cumin
1 1/2 tablespoons steak sauce
1 tablespoon worcestershire
14.5 ounces diced tomatoes
1 tablespoon butter
1/2 tablespoon olive oil
1 tablespoon flour
1/2 large yellow onion, diced
1 shallots, diced
1/2 green bell pepper, diced
1/2 yellow bell pepper, diced
1 1/2 ribs celery, diced
2 cloves garlic, minced
6 ounces tomato paste
8 ounces tomato sauce
1/2 cup tomato juice
1/2 cup ketchup
1/2 tablespoon apple cider vinegar

Steps:

  • Make the chili. Heat the oil in a large skillet or heavy-bottomed pot set over medium-high heat. Working in batches, cook the beef, stirring often, until it has begun to brown at the edges. Using a slotted spoon, transfer browned meat to a bowl.
  • Pour off excess fat, turn heat down to medium and return the browned beef to the skillet or pot. Add salt, peppers, chile powder, turmeric, oregano and cumin, and stir to combine. Add steak sauce, Worcestershire sauce and diced tomatoes, and stir again. Cover the skillet or pot, and cook, stirring a few times, for 15 minutes or so.
  • Make the gumbo. Place a large pot with a heavy bottom over medium heat, and put the butter and oil into it. When the butter is melted and foaming, sprinkle the flour into the pan, and whisk to combine. Continue whisking until the mixture is golden brown, approximately 15 to 20 minutes. Add the onion, shallots, bell peppers, celery and garlic, and cook, stirring often, until the vegetables have started to soften, approximately 10 to 15 minutes.
  • Make the chili gumbo. Add the beef mixture to the pot with the vegetables along with the tomato paste, tomato sauce, tomato juice and ketchup, and stir to combine. Cook, stirring occasionally, for 30 to 45 minutes, then add apple-cider vinegar and hot sauce to taste. Take the pot off the heat, and serve, or allow to cool and refrigerate overnight to allow the flavors to cure. Heat before serving.
