This hamburger casserole recipe is such a hit it's traveled all over the country! My mother originated the recipe in Pennsylvania, I brought it to Texas when I married, I'm still making it in California, and my daughter treats her friends to this oldie in Colorado. It's hearty, yet simple to prepare. -Helen Carmichall, Santee, California

Number Of Ingredients 9

2 pounds lean ground beef (90% lean)
4 pounds potatoes, peeled and sliced 1/4 inch thick
1 large onion, sliced
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon beef bouillon granules
1 cup boiling water
1 can (28 ounces) diced tomatoes, undrained
Minced fresh parsley, optional

Steps:

  • In a Dutch oven, layer half each of the meat, potatoes and onion. Sprinkle with half each of the salt and pepper. Repeat layers. Dissolve bouillon in water; pour over all. Top with tomatoes. Cover and cook over medium heat until potatoes are tender, 45-50 minutes. If desired, garnish with parsley.

2 cans (14-1/2 ounces each) chicken broth
3 cups uncooked instant rice
4 tablespoons butter, divided
2 pounds ground beef
2 packages (12 ounces each) bulk spicy pork sausage
1 pound sliced fresh mushrooms
3 garlic cloves, minced
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups 4% cottage cheese
8 large eggs, lightly beaten
1 envelope onion soup mix
1 envelope leek soup mix
2 teaspoons garlic powder
1 teaspoon Creole seasoning
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. In a large saucepan, bring broth to a boil. Stir in rice; cover and remove from heat. Let stand 5 minutes. Stir in 2 tablespoons butter; set aside., Meanwhile, in a large skillet, cook beef and sausage over medium heat until no longer pink; drain. Transfer to a large bowl. , In same skillet, saute mushrooms in remaining butter until tender. Add garlic; cook 1 minute longer. Add to meat mixture. Stir in spinach, cottage cheese, eggs, soup mixes, garlic powder, Creole seasoning and reserved rice mixture. , Divide between two greased 13x9-in. baking dishes; sprinkle with cheese. Cover and bake 45 minutes. Uncover; bake 10-15 minutes longer or until heated through.

3 cups Minute brown rice
1 1/2 cups hot water
1 lb lean ground beef
1/2 cup barbecue sauce
19 ounces canned stewed tomatoes
14 ounces refried beans
1 1/2 tablespoons chili powder
1/2 teaspoon garlic powder
1/2 cup grated cheddar cheese
2 green onions, thinly sliced

Steps:

  • Heat oven to 350F degrees.
  • Place rice in a greased 3-quart casserole dish.
  • Add hot water; cover and let stand for 5 minutes.
  • Meanwhile, brown the meat in a large frying pan.
  • Add barbecue sauce, tomatoes, beans, and chili powder.
  • Mix well and then bring to a boil.
  • Spoon the meat mixture over the rice.
  • Sprinkle with cheddar cheese.
  • Cover and bake for 30 minutes.
  • Garnish with green onions.

GRANDMA'S GROUND BEEF CASSEROLE

As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

1 pound ground beef
1 teaspoon white sugar
1 teaspoon salt
1 teaspoon garlic salt
2 (15 ounce) cans tomato sauce
1 (8 ounce) package egg noodles
1 cup sour cream
1 (3 ounce) package cream cheese
1 large white onion, diced
½ cup shredded sharp Cheddar cheese, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Mix sour cream, cream cheese, and onion in a bowl.
  • Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.
  • Bake in the preheated oven until Cheddar cheese has browned, 25 to 30 minutes.

1 1/2 lb lean ground beef
1 small onion, diced
1 Tbsp oil
2 can(s) 10 3/4 condensed cream of mushroom soup
1 soup can milk
4 oz can diced green chilies
24 corn tortillas
1 lb cheddar cheese

Steps:

  • 1. Brown beef and onion in oil, stirring to crumble meat. Combine soup and milk in a saucepan and cook, stirring over medium heat until smooth. Then add chilies. Cut tortillas in 1-inch squares and make one layer in baking dish using half of cooked meat. Then half of soup mixture and half of cheese. Repeat layer. Bake 325 degrees for 30 minutes. Makes 6 servings.
