ACTUALLY DELICIOUS TURKEY BURGERS
This is a simple and delicious recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves.

- In a large bowl, mix ground turkey, seasoned bread crumbs, onion, egg whites, parsley, garlic, salt, and pepper. Form into 12 patties.
- Cook the patties in a medium skillet over medium heat, turning once, to an internal temperature of 180 degrees F (85 degrees C).

TURKEY BURGERS
The sautéed onions and garlic in this easy turkey burger recipe are the secret to keeping them moist and juicy. Grill them up when you want a lighter, healthier burger option.

Steps:
- Finely chop onion and garlic.
- Heat a non-stick skillet over medium heat, drizzle with olive oil to lightly coat pan.
- Once oil is hot, add onions and garlic, a pinch or two of kosher salt, a few turns of cracked black pepper and a pinch of crushed red pepper.
- Sweat onions and garlic until aromatic and translucent, about 3-4 minutes - do not brown! Remove from heat and allow to cool slightly.
- Add onion and garlic mixture to ground turkey, carefully folding in, do not overwork the meat. Form into patties, brush with olive oil, season with salt and pepper.
- Place turkey burger patties on the grill over medium heat and cook for about 4-5 minutes on each side. Serve with your favorite burger toppings.

OUR FAVORITE TURKEY BURGER
These tasty burgers incorporate shredded Gruyère cheese and Dijon mustard in the patty, rather than on top, which prevents the bun from getting soggy. Breadcrumbs add even more texture.

- Heat grill to high. In a medium bowl, use a fork to gently combine ground turkey with Gruyere, scallions, breadcrumbs, mustard, and garlic; season generously with salt and pepper. Gently form mixture into four 1-inch-thick patties.
- Lightly oil grill. Place patties on hottest part of grill; sear until browned, 1 to 2 minutes per side. Move patties to cooler part of grill; continue grilling until cooked through, 5 to 10 minutes per side.

- Place the ground turkey in a large mixing bowl and add the onion, mushrooms, ¼ cup barbecue sauce, and Cajun seasoning. Use clean hands to combine the mixture well.
- Divide the mixture into 6 even-sized balls and place them on the prepared baking sheet. Use your hands to flatten them into ½ to ¾-inch patties. If making ahead, cover the baking sheet with plastic wrap and place in the refrigerator. (Note - refrigerating the patties makes them hold together well. Burgers should be cooked within 24 hours.)
- When ready to cook, preheat your outdoor or indoor grill or place a skillet over MEDIUM HEAT. Gently lift each turkey patty and spray both sides with non-stick cooking spray. Transfer to the grill (or skillet) and cook for 5 to 7 minutes, per side, or until the exterior of the burgers is nicely seared and they register an internal temperature of 165 degrees F.
