FIRECRACKER CHICKEN | SLIMMING & WEIGHT WATCHERS FRIENDLY

We recently paid a visit to Wagamama for a bit of a treat, and we absolutely LOVED the Firecracker Chicken they had on the menu. So we've recreated it to make a slimming friendly version!

Number Of Ingredients 19

4 medium chicken breasts (diced, approximately 150g each)
1/2 red chilli (finely chopped, optional)
2 garlic cloves (finely chopped)
1 tbsp sweetener
3 tbsp dark soy sauce
2 tbsp oyster sauce
1 tbsp rice vinegar
2 tbsp tomato ketchup
1/2 tbsp tamarind paste
1 tbsp fish sauce
1 grind black pepper
1 onion (sliced)
3 peppers (sliced)
200 g mange tout
6 arbol chillies (any dried chillies will do or 1/2 tsp of chilli flakes)
1 bunch spring onions (chopped)
1 wedge lime
100 ml chicken stock (Made up with 1/2 stock cube and 100ml of water)
low calorie cooking spray

Steps:

  • Add the chilli flakes, garlic, sweetener, tomato ketchup, tamarind paste, oyster sauce, soy sauce, fish sauce and rice vinegar into a bowl. Add the black pepper to season and stir the contents of the bowl well.
  • Add the chicken breast to the bowl and mix it all together.
  • Once the chicken breasts are coated in the marinade, cover the bowl with cling film and chill in the fridge for one hour.
  • Take the bowl of marinated chicken out of fridge and place into your Actifry, and set aside the remaining marinade. Set the Actifry to cook for 10 minutes.
  • After 10 minutes is up, add the chopped onions and spray with low calorie cooking spray and set to cook for a further 5 minutes.
  • Once this is complete, add the stock, the remaining marinade, peppers, spring onions, fresh chilli and mange tout and cook for a further 10 minutes. Once this is complete, it's ready to serve!

  • Once this is complete, add the stock, the remaining marinade, peppers, spring onions, fresh chilli and mange tout and cook for a further 10 minutes. Once this is complete, it's ready to serve!

1 ½ cups canola oil
2 tablespoons crushed red pepper flakes
1 (1 ounce) packet ranch dressing mix
1 tablespoon chili powder
1 (16 ounce) package Whole Wheat Saltine Crackers

Steps:

  • Whisk the canola oil, crushed red pepper flakes, ranch dressing mix, and chili powder together in a bowl.
  • Divide the saltine crackers evenly into 2 1-gallon-sized sealable bags. Pour the oil mixture evenly over the crackers. Seal the bag and flip to allow the oil mixture to run over the crackers for 5 minutes; flip again. Repeat the flipping every five minutes to evenly coat the crackers for about 1 hour. Remove the crackers from the bags and spread onto large platters. Allow to sit overnight before serving.

1 oz. Smirnoff Red white and berry Vodka
3/4 oz. curacao
1/2 oz. Grenadine
3 oz. Lemonade

Steps:

  • Put a dollop of honey on a flat plate. Roll the lip of your glass through the honey until the entire rim is coated.
  • On a separate flat plate mix together the blue and red pop rocks.
  • Set your coated glass rim into the pop rocks. Push the pop rocks around the rim until the rim is completely coated with pop rock candy. Set aside.
  • Fill your cocktail shaker with ice.
  • pour the curacao smirnoff and lemonade into your shaker.
  • Shake until very cold.
  • fill your rimmed cocktail glass with ice.
  • Pour your cocktail into the rimmed cocktail glass.
  • Mint Leaves
  • Cherry
  • Berries of your choice on a bamboo pick

Mix up a pitcher of cocktails and you'll spend less time playing bartender. This sweet-tart combo of rose, sour cherries, and simple syrup starts the party off with a bang.

3/4 cup sugar
1 cup fresh or thawed frozen sour cherries, pitted
16 ounces London dry gin
1/2 cup fresh lemon juice (from about 4 lemons)
1 bottle (750 mL) chilled dry rose wine
Ice
Lemon slices, for garnish

Steps:

  • Bring sugar and 3/4 cup water to a boil in a small pot. Reduce heat, and simmer, stirring, until sugar dissolves. Remove from heat, and let cool. Simple syrup can be refrigerated up to 2 weeks.
  • Combine syrup, cherries, and gin in a 3-quart pitcher, and refrigerate until cold, at least 2 hours and up to 6 hours. Stir in lemon juice and wine. Serve over ice, and garnish with lemon slices.

1 ½ cups freeze-dried raspberries (1 [1.3-oz.] pkg.)
1 ½ cups freeze-dried strawberries (from 2 [0.8-oz.] pkg.)
1 (52-oz.) bottle refrigerated lemonade (6 ¾ cups, such as Simply Lemonade)
2 cups chilled nonalcoholic ginger beer
Frozen fresh blueberries
Lemon slices
Ice

Steps:

  • Process raspberries and strawberries with a food processor until very finely ground and powdery, about 30 seconds. Sift berry powder through a fine mesh strainer into a bowl, and discard any large clumps.
  • Measure ¼ cup berry powder into a ½-gallon (8-cup) pitcher, and reserve remaining berry powder for another use. Add lemonade and ginger beer to pitcher; whisk until powder is dissolved. Garnish punch with frozen blueberries and lemon slices. Serve immediately over ice. If mixture separates after sitting for a bit, stir punch before serving.
