Ingredients

1 head garlic
1 teaspoon extra virgin olive oil
1/2 cup buttermilk
1/4 cup light mayonnaise
1 tablespoon white wine vinegar
1/4 teaspoon salt
1/4 teaspoon white pepper
1 green onion, thinly sliced

Steps:

Separate, peel garlic cloves & place in small saucepan with oil; cover & cook over low heat, shaking pan often until golden & softened, about 25 minutes.
Transfer to small food processor or blender; add next 5 ingredients & blend until smooth.
Stir in onion; refrigerate in air-tight container for up to 1 week.

Ingredients

1 clove (to 2 cloves) garlic
Salt, to taste
1/4 c. Italian flat-leaf parsley
2 tbsp. fresh chives
1 c. (real) mayonnaise
1/2 c. sour cream
buttermilk (as needed to desired consistency)
White vinegar (optional, to taste)
Worcestershire sauce, to taste (optional)
Fresh dill (optional, to taste)
Cayenne pepper (optional, to taste)
Paprika, to taste (optional)
Fresh oregano (optional, to taste)
Tabasco (optional, to taste)

Steps:

Mince the garlic with a knife and then sprinkle about an 1/8 to ¼ teaspoons of salt on it and mash it into a paste with a fork. Chop the parsley, chives and any of the optional herbs very finely and add to the garlic.
In a bowl, combine all ingredients, adding other optional ingredients as you wish, tasting frequently and adjusting seasonings as needed. Chill for a couple of hours before serving, thin with milk or buttermilk if desired. (Don't overdo the garlic or you'll be up all night, emailing me about your heartburn.)

2 cups mayonnaise
1 cup buttermilk
1 small onion, diced
½ cup vegetable oil
2 hard-boiled eggs, diced
5 tablespoons sour cream
2 tablespoons dried parsley
1 tablespoon garlic powder
1 teaspoon ground black pepper
2 pinches kosher salt

Steps:

Whisk mayonnaise, buttermilk, onion, vegetable oil, eggs, sour cream, parsley, garlic powder, pepper, and salt together in a bowl until dressing is creamy, about 30 seconds. Store dressing in a 1-quart jar in refrigerator for up to 1 week.

1 cup mayonnaise
2 tablespoons dried dill weed
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
2 tablespoons of finely minced garlic
Salt and pepper to taste
3/4 cup buttermilk

Steps:

Whisk first 6 ingredients together. Add desired salt and pepper. Add buttermilk slowly to mixture to desired consistency (less milk for thicker dressing, more milk for thinner dressing). For best results, allow to sit overnight in the refrigerator. Will keep up to a week chilled, in sealed container.
