OVEN ROASTED TOMATO SAUCE
I have used this recipe for years and it never fails. I usually make it in the summer as we usually have a vegetable garden and always end up with too many tomatoes, I then make in batches,for the freezer. I use a lot of garlic in this recipe but thats because we love it and the garlic sweetens in the roasting process. I have strained the sauce at times to remove the seeds. Though most people don't mind tomato seeds.

Steps:
- Preheat the oven 400°f.
- Slice tomatoes in half, set aside.
- Pour the olive oil onto a large baking sheet and spread it around the sheet.
- Sprinkle evenly the garlic, herbs, sugar, salt and pepper over the oil.
- Place the tomatoes cut side down onto the baking sheet.
- Roast for about 30-40 minutes, or until the skins start to lift from the tomatoes.
- Allow to cool.
- Remove the skins and put the sauce into a large bowl and break up the flesh with a fork.
- Reheat sauce if using immediately.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper or aluminum foil.
- Place tomato halves skin-side down on the prepared baking sheet. Add garlic cloves. Evenly drizzle tomatoes and garlic with olive oil and season with salt and pepper.
- Roast in the preheated oven until tomatoes are bubbling, about 25 minutes. Increase heat to 425 degrees F (220 degrees C). Roast until tomatoes just begin to brown, 10 more minutes. Turn off the heat. Let tomatoes sit in the hot oven with the door closed until further caramelized, about 5 minutes.

- Preheat grill and regulate at medium heat
- Clean tomatoes and brush lightly with olive oil (if not canning). **No need to cut your tomatoes in half - unless you are in a hurry.
- Place tomatoes on the grill and cook until charred on grill side. Turn to char all sides.
- Once charred, take them off the grill and place in a deep bowl or casserole dish. Cover with a towel.
- When the tomatoes are cool enough to touch, peel off the skin (this will be extremely easy to do)

- Saute garlic and onion lightly in olive oil.
- Remove from pan and place in blender with tomatoes; blend and set aside.
- In same pan as onion mixture was cooked, crumble and saute Italian sausage til browned.

- Preheat your oven to 400º F
- Wash tomatoes, and cut into chunks. You can also just cut in 1/2 or leave whole if you prefer. The large the pieces, the longer they take to cook.
- Divide the tomatoes into 2 roasting pans (you don't want to crowd them)
- Divide the oil and seasonings between the two pans, distribute and mix well to coat.
- Add garlic cloves and fresh herbs to each pan.
- Roast for about 1 1/2-2 hours. **Depending on the size you have cut your tomatoes,the amount of tomatoes you have placed in your baking vessel, and the heat of your oven, you may need to reduce the temperature to 375º after 30 minutes to avoid burning**
- Depending on the amount of moisture you still want in the tomatoes, the time will vary slightly. Also if you removed the seeds, you will have less moisture to cook out.
- Be sure to mix several times during roasting.
- Once done, remove from oven.
- Remove any large stems from the herbs.
- If you like, you can leave your tomatoes in large chunks, or mash slightly with a potato masher. Mash the garlic cloves too.
- When cool, measure into your desired amount, place in the freezer bags, seal, date, and place in freezer.
- DONE!

- Rinse and slice each tomato lengthwise. Drizzle with olive oil, salt and pepper. I typically add water to the pan to avoid any smoking or do it on the grill.
- Grill Method: Oil grill basket or grill pan and spread tomatoes cut side up. Grill until charred, turning to get both sides (5 to 10 minutes total depending on size).

- Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat. Place a cooling rack over indirect heat. Place a heavy-bottomed saucepot over direct heat.
- Slice the tomatoes in half. Drizzle them with olive oil and season with salt and pepper. Place the tomatoes on the cooling rack on the grill, cut-side down, to soften and take on some smoke while you make the sauce, 10 to 12 minutes.
- Meanwhile, add a drizzle of olive oil to the saucepot along with the bacon. Cook, stirring occasionally until the bacon is crisp, 3 to 5 minutes. Stir in the garlic, onions and crushed red pepper flakes if using and cook until the onions soften, an additional few minutes. Add the wine. Tie the fresh herbs together with a piece of butcher's twine and add to the saucepot.
- When your tomatoes have begun to soften, remove them from the grill. Remove the skins (they will come off really easy), add the tomatoes to the saucepot and season with salt and pepper. Close the grill and continue to cook the sauce until the tomatoes fully break down and the sauce thickens slightly, about 20 minutes.
- Meanwhile, bring a pot of salted water to a boil. Cook the pasta 2 minutes less than the package directions. Using tongs, pull the pasta out and add it directly to the tomato sauce, along with 1/3 cup of the starchy pasta water. Mix to combine. The sauce will stick to the pasta. Remove the saucepot from the heat.
- Add the butter and a drizzle of olive oil to the pasta and stir to combine. Add the basil and and stir again. Serve with freshly grated Parmesan over top.
- (Alternatively, you can cook the sauce and pasta over medium-high heat on a stovetop.)

SHRIMP IN FIRE-ROASTED TOMATO SAUCE

- Fill large pot with water (about 2" from top) and 2 pinches of sea salt. Bring to boil. While waiting for water to boil: Heat oil in 9"saute' pan, add pancetta and cook till pieces separate and are a little crispy. Add onions and garlic and cook till translucent. Add tomatoes and pepper. Simmer sauce, stirring occasionally. By now the water is boiling, add the pasta and cook for APPROXIMATELY 4 minutes. After 4 minutes: Add shrimp to tomato sauce and turn off heat on shrimp. Don't worry there is enough heat to cook them to perfection. By the time the pasta's done the shrimp will be also. Continue cooking pasta for another 4 + minutes. Pull out a noodle and taste it. It should not crunch, it shouldn't be mushy. If need cook for another 2 minutes and test again. Drain pasta, and put in pasta bowl. Add 1/2 the tomato/shrimp sauce and stir in. Serve up and top servings with rest of sauce and grate some cheese over the top. Serve immediately

- Heat stock pot over medium heat, and add 1/2 Tbs. olive oil. Remove turkey sausage from casings and brown in the pot, breaking into small pieces as it cooks. Remove from pot and set aside.
