FINNISH CARDAMOM COOKIES

1 cup flour
1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 egg
3/4 cup sugar
1/2 cup butter, melted

Steps:

  • In large bowl, mix together flour, baking soda, cinnamon and cardamon.
  • In another bowl, beat egg until frothy.
  • Beat sugar and butter into egg. Mix well.
  • Add wet ingredients to dry ingredients. Mix until batter is smooth.
  • Drop by teaspoonfuls onto greased and floured cookie sheet.
  • Bake in 350° oven for 10 to 12 minutes or until brown.

Piparkakuts are a traditional holiday cookie in Finland. They are usually cut into round scallop shapes, but little boys and pigs are the traditional shapes during the holidays. I found this recipe on the internet and I can't wait to give it a try soon! --NOTE-- cooking time includes cooling time and chilling time.

1 1/2 cups butter (no substitute)
1 cup granulated sugar
3/4 cup dark corn syrup
3 teaspoons cinnamon
3 teaspoons ground ginger
1 1/2 teaspoons ground cloves
1/2 teaspoon allspice
3 teaspoons orange zest
2 eggs, slightly beaten
2 teaspoons baking soda
5 cups all-purpose flour

Steps:

  • Combine butter, sugar, corn syrup and spices in a saucepan.
  • Over low-medium heat, stir ingredients constantly until ingredients look like they are about to boil.
  • Remove from heat and transfer to a mixing bowl.
  • Allow sugar mixture to cool to room temperature.
  • Stirring occasionally might help speed up this process.
  • Stir eggs into cooled sugar mixture.
  • Sift flour and baking soda together and add to sugar mixture.
  • Mix well.
  • Roll dough into a ball.
  • Cover and chill in the refrigerator for 8-12 hours or overnight.
  • Split dough into 2 parts; Roll dough about 1/4-inch thick on a clean, floured surface.
  • Cut into desired shapes.
  • Bake in preheated oven at 350°F for about 10-15 minutes, or until firm to the touch.
  • Cookies can be left plain, or decorated with pipped icing.
  • NOTE: This makes a crisp cookie, if a softer cookie is desired you may substitute brown sugar for the granulated sugar.

1 cup dark corn syrup
2 teaspoons cinnamon
1/2 teaspoon allspice
1/4 teaspoon black pepper
1 teaspoon ground cloves
1 teaspoon ground ginger
2 cups butter, melted
2 cups granulated sugar
1 egg, beaten
1 cup heavy cream
4 teaspoons baking soda
9 cups flour

Steps:

  • In a saucepan, combine the syrup, cinnamon, allspice, pepper, cloves, ginger, butter, and sugar, and bring it to a boil.
  • Remove the mixture from the heat, transfer it into a bowl, and let cool.
  • Stir in the egg, cream, soda, and flour; cover and place in the refrigerator and let chill overnight.
  • When ready to make cookies, preheat oven to 375 degrees.
  • Roll the dough out very thin, using about 1/2 cup of the dough at a time and cut it into your desired shapes.
  • Lightly grease a cookie sheet and bake at 375 degrees for 12 to 15 minutes until the cookies are lightly brown, crisp but not too dark.
  • Recipe makes about 8 dozen 2-inch cookies.

This is from "Best of Finnish Cooking", a cookbook by which the author is passing on Finnish cooking heritage to her sons. I haven't tried it yet. It differs from the other piparkakut recipes in that it doesn't use corn syrup. I think the sour cream in this one takes the place of it.

2 large eggs
1 1/4 cups dark brown sugar
1/2 cup butter, melted (or margarine)
1/2 cup sour cream
1 tablespoon brandy
2 cups flour
3/4 cup graham cracker crumbs, sifted (or cookie crumbs)
1 teaspoon baking soda
3 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon cardamom
1/2 teaspoon mace

Steps:

  • Beat eggs with the sugar until light. Stif in melted butter, sour cream and brandy.
  • In another bowl, sift together the flour, cookie crumbs, soda, baking powder and spices.
  • Stir the flour mixture into the egg mixture. Mix well. Dough will be very soft. Refrigerate overnight.
  • Preheat oven to 350. Make 1-inch balls with your hands. Put them on a cookie sheet lined with parchment or lightly greased.
  • Bake until nicely browned, about 15 minutes. Let cookies dry at room temperature a day before storing them in airtight tins.

From the "Best of Finnish Cooking". The author put together her recipes so that her sons would always have the Finnish recipes/dishes at hand. I haven't made it yet. I like the short list of ingredients. Time does not include the overnight soaking.

8 cups water
1 lb dried whole green peas
1 lb smoked ham (one large piece with bone)
1 teaspoon dried marjoram
1 onion
2 cloves
1 -2 teaspoon salt

Steps:

  • Rinse and remove unwanted pieces from the peas. Cover with cold water and let soak overnight.
  • Afterwards, drain and rinse the peas. Peel the onion and stud it with the cloves. Put everything into the pot with the peas. (Use fresh water for the 8 cups, not the soaking water.).
  • Bring to a boil; cover, lower heat, and let simmer until they are very soft, about 2 hours, stirring often.
  • Remove meat from soup. Trim it from the bones, cutting into small pieces. Return it to the soup.
  • Salt to taste and serve. (I must add, however, that the listed amount of salt could be too much for some people, let alone adding more at this point. However, I've included the amounts listed by the author because she says that Finnish food is very salty. Use your own judgement.).
