2 teaspoons anise seeds
1/2 teaspoon sugar
1 1/2 tablespoons lemon juice
2 tablespoons honey
2 teaspoons black tea

Steps:

  • In a small saucepan, combine all ingredients, except tea, and bring to a boil. Allow to simmer for three minutes. Strain.
  • Pour liquid into a tea pot and add the tea. Sit for 5 mins before serving.

4 green tea bags
9 freshly cracked green cardamom pods or 9 white cardamom pods
9 whole white peppercorns
1 cinnamon stick (3 inch length)
4 cups boiling water

Steps:

  • Place tea bags in a prewarmed large teapot and set aside.
  • Place the spices in a 4-cup heatproof measuring cup and add the boiling water; stir to mix, then let the spices infuse for 2 minutes.
  • Quickly pour the infusion into the teapot, straining carefully to prevent the spices from going into the teapot.
  • Steep the tea in the spice infusion for an additional 2 minutes.
  • Strain the brewed tea into teacups and serve immediately.

1 orange pekoe tea bag
6 large mint sprigs, large stems with large leaves (lightly crushed)
1/4 teaspoon cayenne pepper
2 cups boiling water, boiling
1 cup white sugar, white
1/2 cup lemon juice, fresh squeezed
1 cinnamon stick
2 slices lemons, garnish
2 mint sprigs, garnish

Steps:

  • Steep 1 tea bag, 6 mint stems and cayenne pepper in 2 cups of boiling water.
  • Strain the mixture, keeping only the liquid.
  • Add the sugar, lemon juice and cinnamon stick to the mint mixture and refrigerate.
  • When ready to serve, remove the cinnamon stick and dilute the mint mixture with equal parts of water.
  • Serve in a tall glass with ice, add a fresh mint sprig and a lemon slice for garnishing.

1 large onion, halved lengthwise sliced crosswise
1 large garlic clove, minced
3/4 lb lean lamb or 3/4 lb beef, cut into thin 2 inch strips
1/2 cup beef broth
1/4 teaspoon oregano
1/4 teaspoon cumin
1/4 teaspoon coriander
1/8 teaspoon allspice
1 salt, if desired to taste
1 fresh ground black pepper, to taste
1 cup couscous, cooked according to package directions
2 tablespoons fresh parsley leaves, minced fresh

Steps:

  • In a medium skillet, heat the oil, and sauté the onion and garlic until the onion is translucent.
  • Add the lamb or beef, and sauté the meat, stirring it often, just brown the strips on all sides.
  • Stir in the broth, oregano, cumin, coriander, allspice, salt, and pepper, and cook the mixture a few minutes longer.
  • Serve the meat mixture, sprinkled with parsley, over the hot couscous.
