Steps:

  • Beat cake mix, eggs, oil and juice from oranges and vanilla. Then add oranges and beat until pieces are small, about 3 minutes. Bake in greased and floured 9x13 inch pan at 350℉ (180℃) for 25 to 30 minutes. To make topping: Blend juice from pineapple with the pudding mix. Add powdered sugar, Cool Whip and drained pineapple. Blend well after each. Spread on cake and refrigerate. Called pig licking cake because people make pigs of themselves.

1 (11 ounce) can mandarin oranges, juice reserved
4 eggs
¼ cup vegetable oil
1 (16 ounce) package frozen whipped topping, thawed
1 (15 ounce) can crushed pineapple, drained
1 (3.5 ounce) package instant vanilla pudding mix

Steps:

  • Mix together cake mix, canned oranges with juice, eggs, and oil. Pour batter into three greased and floured 8 inch round pans. Layers will be thin.
  • Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until cake tests done. Cool layers on wire racks.
  • Mix together whipped topping, drained pineapple, and instant pudding mix. Fill and frost the cooled cake. Refrigerate until ready to eat.

This cake is not only finger-lickin' good, it's plate lickin' good. The cake is moist and fluffy with bits of mandarin oranges in every bite. Cool and creamy, the frosting tastes similar to a pina colada. A great dessert for any summer BBQ or when you want a citrus dessert. Trust us, there won't be any leftovers.

1 package(s) yellow cake mix
1 can(s) mandarin oranges, undrained (11 oz)
1 stick(s) butter, melted
1/4 cup(s) vegetable oil
4 large eggs
1 can(s) crushed pineapple (20 oz., juice used to pour over cake and pineapple used for frosting)
FROSTING
12 ounce(s) whipped topping, thawed
3.4 ounce(s) box of instant French Vanilla or pistachio pudding (I use the French vanilla)
pineapple from can of crushed pineapple
1 - 1 1/2 cup(s) shredded coconut

Steps:

  • PREHEAT oven to 350; grease and flour pans.
  • Mix all cake ingredients except pineapple juice on medium for about 3 minutes. This will cause the oranges to break up.
  • Pour into 2 - 9" round cake pans. Bake about 25 minutes or until the knife inserted comes out clean. Cool for 10 minutes.
  • While the cake is still warm, poke holes all over and drizzle with reserved pineapple juice.
  • Mix frosting ingredients well, making sure they are well combined and the pudding mix has dissolved.
  • Frost cake after it has completely cooled.

Steps:

  • Blend all cake ingredients and beat three minutes.
