1 lb large shrimp, peeled and deveined
wooden skewer
1 small onion, minced,rinced under cold water,and drained
2 cloves garlic, minced
1 teaspoon vegetable oil
1 -2 dash fish sauce
1 lime, juice of
1 teaspoon fresh ground pepper
1/2 teaspoon sea salt
1/2 teaspoon fish sauce
1/2 teaspoon sugar

Steps:

  • Mix the onion, garlic, oil, and fish sauce in a bowl large enough to hold the shrimp.
  • Add the shrimp, toss to coat evenly, and marinate, covered, at room temperature for 30 minutes.
  • Soak the wooden skewers in water for 20-30 minutes.
  • Prepare grill or preheat broiler.
  • To prepare the dip, mix together the lime juice, pepper, salt, fish sauce, and sugar, in a small bowl, mixing well; adjust seasonings to taste (add a little water or sugar if dip seems too tart).
  • Thread shrimp onto wooden skewers; lightly coat each finished skewer with oil or cooking spray, and place on grill over medium coals or heat (or place on pan under broiler), and cook approximately 5 minutes, turning once, or until shrimps are pink, firm, and slightly charred in spots.
  • Serve shrimp with the dipping sauce.
  • A good accompaniment would be steamed rice, or an Asian noodle dish.

4 tablespoons vegetable oil
6 garlic chives, finely sliced
12 medium green ling prawns, unpeeled
Vermicelli noodles, cooked to package directions* (See Cook's Note)
2 tablespoons crushed roasted peanuts
1 green mango, peeled, pitted, and sliced
1 green banana, halved and thinly sliced lengthways
1 Lebanese cucumber, halved and thinly sliced lengthways
6 lettuce leaves, torn in half
1 teaspoon fish sauce
Nuoc mam cham dipping fish sauce

Steps:

  • Heat a grill to medium heat.
  • In a small saucepan, add the vegetable oil, sliced garlic chives and bring to the simmer. Stir, then take the pan off the heat and transfer the garlic chive oil to a bowl.
  • Thread each prawn onto a skewer (tail through the top of the head) and char grill on medium heat for 2 minutes on each side, or until cooked.
  • While the prawns are grilling, place the vermicelli noodle on a plate and reheat it in the microwave for 1 minute on high. Now coat the noodles with the garlic chive oil and sprinkle with the crushed peanuts. Tear a piece of the noodles and wrap around the grilled prawn, remove the skewer. Place the wrapped prawn on the lettuce, then add the mango, banana, and cucumber and roll up.
  • Repeat this process and dip the wraps into nuoc mam cham dipping fish sauce.

10 1/2 ounces large prawns, shelled and deveined with tail intact
1 tablespoon fish sauce
1 tablespoon sugar
1 teaspoon oyster sauce
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon red curry powder
2 tablespoons vegetable oil
1/2 tablespoon fresh grated ginger
1/2 tablespoon minced garlic
1 tablespoon minced red Asian shallot
6 spring onion, cut into 2-inch lengths
1 tablespoon water
1 long red chili, finely sliced
Jasmine rice, to serve

Steps:

  • In a mixing bowl combine the prawns, fish sauce, sugar, oyster sauce, cinnamon, cumin and curry powder. Allow to marinate for 30 minutes, covered and refrigerated.
  • Pour oil in a large fry pan on high heat, fry the ginger, garlic and red shallots until fragrant and then cook each side of the prawns for 1 minute. Add the spring onions and 1 tablespoon of water and toss for a further minute.
  • Transfer to a serving plate and garnish with sliced red chili.
  • Serve with jasmine rice.

  • If you have time, freeze the place the steak for about 15 minutes to firm and be easier to cut. Slice the beef across the grain into thin strips, a scant 1/4 inch thick, about 1 1/2 inches wide, and about 3 inches long. You may need to angle the knife to achieve the ideal width. Set aside.
  • In a bowl, combine the garlic, shallot, brown sugar, salt, pepper, fish sauce, soy sauce and oil. Stir to dissolve the sugar. Add the beef and use your hands to massage the seasonings into the beef, making sure that each slice is well coated. Cover with plastic wrap and marinate at room temperature for 1 hour. Or, refrigerate overnight, letting the beef sit out for 30 minutes to remove the chill before grilling.
  • While the beef marinates, make the scallion oil, if you haven’t done so. Before grilling the beef, prepare the banh hoi noodles. Use scissors to halve each piece of the noodles into pieces the size of playing cards. Arrange them on 2 platters in overlapping layers, with some scallion oil atop each piece of noodle; leftover scallion oil can be served on the side for extra richness. Cover the noodles, and set aside to prevent drying while you cook the beef. Arrange the lettuce, herbs and cucumber on 1 or 2 plates and set at the table. Put the dipping sauce in a communal bowl or individual dipping sauce bowls and set at the table.
  • Prepare a charcoal or preheat a gas grill to medium (you can hold your hand over the rack for no more than 4 to 5 seconds). To broil the beef, position a rack about 4 inches from the heat source and preheat the oven for 20 minutes so it is nice and hot.
