Steps:
- In boiling water, add chicken breasts and salt. Boil the chicken until tender. Drain water from chicken. Let cool, then manually shred chicken using fingers or fork. Set aside.
- In boiling water, add macaroni. Cook the macaroni al dente according to package instructions. Drain water from the macaroni. Let the macaroni cool down and set aside.
- In a large bowl, combine chicken and macaroni together.
- Add the rest of the ingredients together until well blended.
- Chill in the fridge for at least an hour before serving.

- Bring a pot of water to a simmer over low heat. Add the chicken breast to the water and cook until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove the chicken from the water and allow to cool before shredding the meat into a large bowl.
- While the chicken cooks, bring a pot of lightly salted water to a boil. Cook the macaroni at a boil until cooked through, but is still firm to the bite, about 8 minutes. Drain and rinse with cool water to halt the cooking process until the pasta is cool to the touch. Add to the bowl with the chicken.
- Stir the pineapple, apple, celery, carrot, and raisins to the bowl; toss to combine. Add the mayonnaise, sugar, and seasoned salt; gently stir the mixture until evenly coated. Refrigerate at least 30 minutes before serving.

- Bring 6 cups of water into a boil. Add 1 tsp salt and elbow macaroni. Stir and cover pot and cook per package instructions or about 6-8 minutes while stirring occasionally. Remove macaroni and drain well. Set aside.

- To cook chicken breast : Place chicken in a pot and add enough water to cover it by half an inch (over the chicken). Add 1 teaspoon salt and 1 small onion (halved) and ½ teaspoon whole peppercorns. Bring to a boil then simmer on low for 30 minutes (if chicken is bone-in). Simmer for about 15 minutes if using boneless chicken. Remove the scum that rises to the top while it’s coming up to a boil. - Cook the pasta according to package direction. Add a teaspoon of salt to the cooking liquid. Drain and give it a quick rinse to stop the cooking. Transfer to a big bowl to completely cool.
- Once cool, add the rest of the ingredients including the flaked chicken then gently (but thoroughly) mix to combine. It may look runny at first but once it’s refrigerated, the pasta will absorb most of the liquid. Transfer to a container with a tight-fitting lid (or cover tightly with plastic wrap). Refrigerate for at least 4 hours before serving. I find it best to serve the next day so the flavors are well absorbed by the pasta. Serve cold.
