BEEF KABOBS
Tasty, boldly flavored beef kabobs are seasoned with chili powder, garlic, and cumin.

Steps:
- If using wooden skewers, soak them in water for 30 minutes. I prefer to use metal skewers.
- Place the beef cubes in a large bowl. Add the remaining ingredients and use your hands or a large spoon to mix well.
- Thread the seasoned beef cubes on the skewers and place them on a large rimmed broiler-safe baking sheet. You can line the baking sheet with foil for easier cleanup.
- Heat your broiler on high (450-500 degrees F).
- When the broiler is hot, broil the kabobs, directly under the heating element (4 inches below), until cooked to your liking. I broil them for 3 minutes on each side. Serve immediately.

MARINATED BEEF KABOBS
Recipe video above. Using a marinade infuses the beef with flavour as well as tenderising so you'll have juicy steak pieces even if you opt for a more economical cut of beef. Use the reserved marinade to baste the kabobs as they cook for extra flavour! Buy the beef in a block so you can cut them into large cubes. Makes 8 skewers.

- Cut the beef into 3.25cm / 1.3" wide cubes.
- Mix Marinade in a bowl. Add beef. Marinate for 1 - 24 hours, minimum 20 minutes.
- Cut capsicum and onion into 3.25cm / 1.3" wide squares.
- Thread beef (reserve Marinade), vegetables and mushrooms on each skewer. I use 2 pieces of vegetables between each piece of beef. Thread loosely - don't smush together tightly (helps even cooking).
- Brush kebabs lightly with Reserved Marinade (including vegetables), then drizzle with olive oil.
- Heat BBQ or large skillet over high heat. Add 1 tbsp oil, then when smoking, cook kebabs in batches for 2 minutes on each side until slightly charred (4 sides = 8 minutes in total), basting with Reserved Marinade as you go.
- Transfer to plate, cover loosely with foil and rest for 3 minutes before serving. Garnish with parsley if desired. See note for pictured Pink Dipping Sauce.

- Dissolve bouillon in water. Stir in the garlic, cayenne pepper, salt, and black pepper. Toss the meat in the marinade, cover, and marinate in the refrigerator for at least 2 hours.
- Preheat a grill for high heat.
- Skewer the beef cubes, using 6 to 8 pieces per skewer. Pour the oil onto a plate, and roll the skewers in it to coat them on all sides.

BBQ PORK SKEWERS WITH FILIPINO BBQ MARINADE
Steps:
- Slice each pork chop from the short side into four even strips. You will have 16 strips once you are done slicing all four pork chops.
- In a large bowl, combine all of the marinade ingredients. Reserve about a 1/4 of the sauce in the fridge for basting later. Toss the pork strips in the remaining marinade. Cover, and place in the fridge for 4+ hours. (This can be done overnight)
- To skewer the pork chops: Place 2-4 pork strips on each skewer - longways (As many as you can fit per skewer).
- Heat your grill to medium heat. Once the grill is hot, lightly oil the grill and place your pork skewers on. Close the lid to your grill. You want to turn the pork skewers every 3-4 minutes until internal temperature reaches 160 degrees. Baste the skewers in between turns. Every grill is different so make sure you are monitoring the pork and adjust if some are cooking faster than others. Baste the skewers with the remaining sauce.
- Remove pork skewers from the grill and serve with your favorite BBQ side dishes!
EASY BEEF KABOBS
Steps:
- Cut steak, peppers, and onion into roughly equal sized pieces (about 1-1.5").
- In a large freezer bag or storage container, stir together the oil, Worcestershire sauce, soy sauce, vinegar, garlic, honey, onion powder, and chipotle powder if using.
- Add steak and let marinate for at least one hour, and up to 6 hours.
- If using wooden skewers, soak for 10 minutes before skewering beef and vegetables.
- Skewer beef cubes and vegetables, alternating as you like. I try to ensure 3-5 cubes of beef per skewer, depending on how long the skewers are.
- Preheat the grill to medium-high.
- Place kabobs directly over the heat, cooking for 4-5 minutes before flipping and cooking another 4-5 minutes. See notes for cook times depending on your preference for doneness.
- Remove and let sit 5 minutes before serving.

BEEF SHISH KABOBS

- Cut onion in half. Grate half of the onion and combine in a measuring cup with oil, vinegar, lemon juice, garlic, mustard, thyme, oregano, salt, and pepper.
- Cut the other half of the onion into 1 ½-inch squares. Set aside.
- Place the beef cubes in a large zip-top plastic bag. Pour ½ of the marinade into the bag, seal, and refrigerate. Marinate beef for at least one hour, or up to overnight.
- Set aside the remaining marinade to use for basting later.
- When ready to prepare the kabobs, remove beef cubes from the marinade. Discard marinade in the bag.
- Thread beef and vegetables onto separate skewers (if using wooden skewers, be sure to soak them in water first).
- Brush vegetable skewers with reserved marinade.
- Broil kabobs 3 inches from heat for 8 minutes. Turn and broil an additional 8 - 10 minutes, or until done. Keep an eye on the vegetables - the tomatoes tend to cook a bit faster, while the peppers and onions may need an extra minute of cooking time. Just remove each skewer from the broiler (or grill) when cooked to desired tenderness.
- Alternatively, you can grill the shish kabobs for about 20 minutes, turning regularly.

- Put all marinade ingredients in a gallon sized Ziploc bag. Add chunks of beef, and re-seal bag. Double bag if necessary, to prevent leaks, but be sure to remove as much of the air as possible before sealing. Allow the beef to marinade up for 24 hours.
